Selten so ehrliche und gleichzeitig spannende Küche erlebt. Die Lebensmittel stehen im Mittelpunkt und schmecken man einfach heraus. Aber die Kreationen drumherum? Wow. Mutig, leicht, durchdacht. Kein Schnickschnack, keine Show – nur richtig gutes Handwerk und Geschmack, der lange nachhallt. Für mich ein absolutes Highlight in der Sterne-Szene. Klare Empfehlung!

Hier wird Essen zum Erlebnis! Sehr freundliches und zuvorkommendes Personal, angenehmes Ambiente, mit dem 7-Gänge-Menü (plus 4 - 5 kleinen Appetizern) ist man auch 3,5 Stunden beschäftigt und satt. Jeder Gang für sich ist ein optisches Kunstwerk und kulinarisches Highlight. Wir haben den Abend sehr genossen und kommen gerne wieder.

Fünf Sterne erscheinen fast zu wenig, um dieser kulinarischen Erfahrung gerecht zu werden! Ein außerordentlich zuvorkommender und herzlicher Service trifft hier auf ein äußerst stilvolles und angenehmes Ambiente. Die einzelnen Gänge sind mit viel Sorgfalt und Liebe zum Detail angerichtet und überzeugen durchweg geschmacklich auf höchstem Niveau. Wir werden definitiv wieder kommen.

Kreative Küche, die stets mit fast allen Gängen meinen Geschmack trifft. Hervorzuheben im Vergleich zu vielen Sternerestaurants ist die Möglichkeit, die Weine der Weinbegleitung und der selbstgemachten (und sehr interessanten) alkoholfreien Begleitung vor jedem Gang zu probieren und danach frei zu entscheiden welches Getränk das Essen begleiten soll. Der Service ist locker, aber auch stets aufmerksam.

Ein Besuch in Veles ist immer ein Erlebnis. Abgesehen vom angenehmen Ambiente und der herzlichen Freundlichkeit der Mitarbeiter zaubert Vadim jedes Mal wieder ein sensationelles Menü, kreativ und überraschend zugleich. Diesmal hat mir (und nicht nur der) der Hauptgang eine wohlige Gänsehaut gezaubert! Mein Tipp. unbedingt die alkoholfreie Getränkebegleitung ausprobieren. Danke für diesen wundervollen Abend.

Mein Mann und ich haben einen sehr schönen Abend im Veles verbracht. Das Essen war hervorragend, die Weinbegleitung sehr gut gewählt. Sehr schön, dass der Koch seine Speisen nicht „nur“ kreiert sondern auch selbst serviert und erklärt. Das Ambiente ist angenehm entspannt und der Service sehr freundlich, zugewandt. Wir haben wirklich nichts auszusetzen und kommen gerne wieder.

Wir waren gestern im Veles in Nürnberg – und ehrlich gesagt fällt es schwer, das Erlebnis nur als „Essen gehen“ zu beschreiben. Es war ein echter Genuss der Sinne. Jeder einzelne Gang fühlte sich wie ein eigenes kleines Gericht mit eigener Idee und Persönlichkeit an. Nichts wirkte beliebig oder wiederholt. Besonders begeistert hat uns, dass die Getränke so fein und stimmig auf die Gerichte abgestimmt waren – und es zu jedem Gang eine ebenso liebevoll durchdachte alkoholfreie Variante gab. Das erlebt man wirklich selten und zeigt, wie viel Aufmerksamkeit hier in jedes Detail fließt. Dazu kommt eine unglaublich angenehme Atmosphäre: gemütlich, stilvoll und geschmackvoll, ohne steif zu wirken. Man fühlt sich sofort willkommen und gut aufgehoben. Für uns war das gelebte Kulinarik auf höchstem, dabei aber sehr authentischem Niveau – nicht geschniegelt oder künstlich, sondern ehrlich, kreativ und mit viel Herz. Wir sind sehr dankbar für diesen besonderen Abend. Absolut empfehlenswert — wir kommen wieder.

Wir waren heute zum ersten Mal im Veles und ich muss sagen, es war wirklich ganz wunderbar. Neue überraschende Geschmackskreationen (Baiser mit Himbeeressig, Karotten mit Sanddorn, Lachsforelle mit Kimchi), tolle Weinberatung, herzliche Gastgeber, schönes und lockeres Ambiente. Und satt ist man auch, was ich persönlich schon auch wichtig finde auch in der Sterneküche. Es gibt einfach nichts zu meckern. Mehr Lob gibt der Franke nicht. 😁

Schöner Name, ich komme aus Veles.

Wir waren zu viert im Veles. Für uns als "Wiederholungstäter" ist die Herzlichkeit ALLER Mitarbeiter und die ungezwungene Atmosphäre immer wieder ein wichtiger Grund wieder zu kommen. Es ist wie ein Besuch bei Freunden! Das 7-Gang-Menü ist wie eine spannende Geschichte aufgebaut, die Weine so stimmig, dass man nur schwärmen kann. Hier bekommt man nicht die "gewohnten" Klassiker, sondern perfekte Weine kleiner Weingüter oder ... als alkoholfreie Variante ... kreative, selbst hergestellte Getränke, die ich selten auf diesem Niveau gekostet habe. Allein die 36-Stunden geschmorten Kalbsbäckchen ... 😋 Die Kreativität, die Perfektion & Liebe in der Zubereitung sowie die Kontinuität der Küchenleistung ... für mich eigentlich klares 2-Sterne-Niveau!

Ein fantastisches Erlebnis! Das Restaurant ist klein und gemütlich. Der Service war vorbildlich. Wir probierten eine alkoholfreie und eine Weinbegleitung – beide waren hervorragend. Die Weinbegleitung war die beste, die wir je in einem Michelin-Restaurant hatten. Das Essen war unglaublich, es lässt sich kaum in Worte fassen.

Today was our first fine dining experience to celebrate our one-year anniversary. It was a truly delightful culinary delight! We received a warm welcome and attentive service throughout the entire meal. The food was a fantastic feast for the senses, and the wine service was simply outstanding. High praise to the chef, the sommelier, and the charming waitress!

We've visited many Michelin-starred restaurants in various cities and countries. During our Nuremberg trip, we visited both Tisane (which absolutely thrilled us) and Veles. Unfortunately, I have to say: Veles was the weakest Michelin-starred restaurant we've ever experienced. The courses were consistently disappointing: • The starter with beetroot and blackcurrant tasted almost exclusively sour and beetroot-like… no finesse, no balance. • The second course with broccoli and salt and lemon was also extremely acidic, lacking nuance or refinement. The tiny portion felt more like a single component than a complete course. • The fish course was far too salty and sour, lacking balance or playful flavors. • The main course of venison, while not bad in terms of taste, was far too raw for game (we unfortunately had to return it). At this point, we abandoned the meal (once after four courses, once after five). Again, the staff showed no empathy or helpfulness; in fact, they seemed slightly annoyed and had no understanding at all. Positive: The service was friendly and initially made an effort. But overall, the menu was unbalanced, overly acidic, and lacking in refinement. Honestly, I don't understand all the very good reviews ... for us, it was a huge disappointment. I really don't mean any harm, but I think it's important that everyone expresses their taste. And I absolutely cannot understand how this restaurant could come anywhere close to a Michelle recommendation. The restaurant itself isn't nice, and the food was actually quite bad... And overall, it was just a huge disappointment.

Review: Veles, Nuremberg – A Disappointing Evening Awarded a Michelin star, Veles in Nuremberg raises high expectations: creativity, artisanal precision, and the oft-quoted "story" behind the dishes. Unfortunately, the visit fell far short of these expectations. The first two courses already made it clear where things were headed: beetroot with currants and chamomile, and broccoli with salted lemon were neither visually appealing nor flavorfully complete. The presentation was more reminiscent of side dishes or dips that could complement a menu – but not as standalone courses. What was missing was intellectuality, refinement, and an overarching concept. Instead of tension or finesse, acidity and salt dominated, without balance or subtle nuances. This impression unfortunately permeated the entire menu: simple preparation, little elegance, and no discernible dramaturgy. Thus, everything remained interchangeable and arbitrary, without soul, without the special signature that truly defines a Michelin-starred restaurant. We communicated our disappointment early on, but the service lacked empathy and attentiveness. Even when we left the menu early after four or five courses, there was no response whatsoever – no follow-up, no consideration, no appreciation for the guest. The only bright spot was the accompanying wines, which were very carefully selected and lived up to the standards of a Michelin-starred restaurant. It was all the more painful that the menu itself didn't live up to this. Conclusion: The Veles may embody sophistication and modernity on paper. In reality, however, everything that would justify a star was missing: excitement, refinement, elegance, and soul. What remained was an immature menu without a story, which left us disappointed and dissatisfied. A visit I cannot recommend. What a shame.

We had a wonderful evening at Veles. The entire team was very attentive and well-organized. The individual courses and the wine pairings were explained very well. The breaks between the individual courses were neither too long nor too short. The ambiance is very stylishly decorated and harmonious. One minor criticism is the seating; it's unfortunately a bit uncomfortable for the approximately four hours you should allow for the seven courses. The individual courses are very lovingly presented, the concepts of the dishes are harmonious, and the recommended wine is an experience. I would like to highlight the following courses: *Salmon trout / tarragon *Potato / leek *Pointed cabbage / pear / chamomile and the homemade bread (a dream). The parsley root ice cream didn't suit our taste, but that's purely a matter of taste. Unfortunately, our entrecôte was a bit too marbled, which somewhat detracted from the otherwise excellent main course. In summary, you can spend a wonderful evening at Veles. We wish the Veles team continued success.

Amazing food, great non-alcoholic drinks, and fantastic wines!

We celebrated our wedding anniversary here and were very pleased. The service was very attentive and friendly. The food was excellent, as expected. The homemade soy sauce deserves special mention; you could really dig in it. All in all, a very successful evening and we would gladly go back.

All I can say here is that every wine was my favorite. The food was top-notch, fresh, tasted fresh, fresh, and fruity and aromatic. Top-notch, clean service; I'll definitely be back. Joking aside, I've eaten here many times, and this cuisine is right up there with the best. The great thing about it is that it's not completely overpriced. The value for money is definitely geared toward the customer!

The stylish ambiance, the serene atmosphere, and the attention to detail made the evening special from the very beginning. The food was of the highest quality – every dish was not only a culinary highlight, but also beautifully presented. You can immediately tell that the cooking here is done with true passion. We were particularly impressed by the exceptional service: The two brothers who run the restaurant together are incredibly warm, attentive, and professional. They personally looked after us, fulfilled all our wishes, and made this special day perfect. A huge thank you to the entire Veles team – we will definitely be back and can highly recommend this restaurant!

I reserved a table here five weeks before a special event. On-line. You need a credit card and will be threatened with a fee of €115 per person if you do not show up or cancel less than 1 day in advance. Understandable, I think, nobody wants to be rejected at such short notice. And what the heck, I think to myself, the occasion has been fixed for years, so nothing will change for me. A week before the day, then a call: "They found that it wasn't worth opening on that day, it wasn't profitable enough. But I could come on any other day." I could, but I don't want to. The day is special, which is why I reserved a table weeks in advance. I can't judge whether your food deserves a Michelin star. Your customer service really deserves the one star on Google, at least in my opinion.

Absolute highlight, the food is simply a pleasure. What we found most impressive was the choice between wine accompaniment and a non-alcoholic alternative: juices. The juices are created by the restaurant itself, we couldn't decide whether we should order the delicious wine or the great juices... We usually ordered both :-) Highly recommended.

Incredible dining experience! Took someone here for a birthday dinner -- we were impressed with the meticulous preparation and flavor of the food and the non-alcoholic beverages, which are all made in-house. Ideal for a special occasion during "dry January" or for anyone who is not drinking alcohol that evening (but they do also have an extensive wine list). The staff were attentive, knowledgeable, and friendly, and the atmosphere was warm and inviting. Veles is on par with the other fine dining restaurants in Nuremberg and Mittelfranken, although I would like to see them highlight/advertise their uniqueness and backstory a bit more. Can't wait to come back.

An incredible evening! I have to admit that I was critical... Michelin-starred cuisine? Is this something for me? In this case a resounding YES! What I experienced is a combination of unusual ingredients, a surprising culinary delight with a great wine accompaniment. In the end I couldn't answer the question about the highlight correctly. Instead, it was a firework of culinary moments of happiness. So if you are looking for a restaurant for a special occasion or meeting with special friends, this is the right place!

We had a sensational evening at VELES, from the food to the wine to the team on site 110%, if a course doesn't taste good in the sense of "we know it, we like it", it causes a - then - new taste explosion in the palate gets stuck. Super!

Food started strong, but then I think the flavors tapered off. Usually water/coffee is included at such local places, unfortunately this was not the case here. Otherwise a very nice evening - deductions clearly due to the location, the toilets, the ambience and the food - the price/performance ratio isn't quite right and one of the service people wasn't very attentive, the rest was great.

Wir besitzen eine breite Erfahrung hinsichtlich Michelin-Sterne-Restaurants. Das "Veles" ist eines der besten, das wir je besuchen durften. Hier stimmt alles: Grandiose Speisenqualität, tolles Ambiente und eine sensationell gute Atmosphäre, die insbesondere der kompetenten Mitarbeiter vor und hinter dem Herd geschuldet ist. Die Protagonisten sind in jeglicher hinsicht herausragend gut, es macht große Freude, hier Gast sein zu dürfen. Absolut empfehlenswert und eine reise wert, wir selbst haben 350 km Anreise in Kauf genommen, nach unserer Erfahrung wäre sogar ein Mehrfaches davon noch lohnenswert!

Yesterday I was in Veles for the first time and I'm afraid it will become a tradition ;-). Super tasty, extraordinary, creative food. Great and very attentive service. You can tell the passion the employees have for their craft! I will definitely come back :-)

Mein 2. Besuch im Veles hat mich abermals positiv überrascht! Bereits das erste Mal vor 1 Jahr war stimmig, aber jetzt war es fast unschlagbar. Diese Jungs wissen, was sie tun! Jeder Gang war perfekt abgeschmeckt und es gab dementsprechend Geschmacksexplosionen im Mund. Persönlich würde ich mir lediglich zu jedem Gang eine etwas kürzere Erläuterung der Gänge wünschen. Alle hin, alles tip top!

Tolle Begrüßung. Wunderschönes, entspanntes Restaurant. Stilvoll und clean eingerichtet, dabei trotzdem gemütlich. Die Jungs sind extrem nett, lustig und verstehen ihr Handwerk in Perfektion. Weinempfehlung auch klasse. Der Service ist stets aufmerksam. Auch die Verabschiedung einfach herzlich und immer am lachen gewesen. Bei Veles ist es keinesfalls spießig, sondern genau richtig: moderne, junge Sterneküche für entspannte Leute die auf geniales Essen stehen.

Une sublime soirée d’anniversaire de mariage ! Veles mérite son étoile ! Le repas était sublissime ! Une succession de mets plus surprenants les uns que les autres. La présentation était parfaite et nous nous sommes régalés. Un grand merci à l’équipe ! Ils ont été charmants, très professionnels et vraiment très sympathiques. Juste un tout petit bémol… pas de champagne… ça m’a manqué…mais nous y reviendrons tout de même sans hésiter

A sublime wedding anniversary evening! Veles deserves his star! The meal was sublime! A succession of dishes, each more surprising than the last. The presentation was perfect and we enjoyed it. A big thank you to the team! They were charming, very professional and really very friendly. Just a small downside... no champagne... I missed it... but we will definitely come back again without hesitation
