Veles in Nürnberg

We had a wonderful evening at Veles. The entire team was very attentive and well-organized. The individual courses and the wine pairings were explained very well. The breaks between the individual courses were neither too long nor too short. The ambiance is very stylishly decorated and harmonious. One minor criticism is the seating; it's unfortunately a bit uncomfortable for the approximately four hours you should allow for the seven courses. The individual courses are very lovingly presented, the concepts of the dishes are harmonious, and the recommended wine is an experience. I would like to highlight the following courses: *Salmon trout / tarragon *Potato / leek *Pointed cabbage / pear / chamomile and the homemade bread (a dream). The parsley root ice cream didn't suit our taste, but that's purely a matter of taste. Unfortunately, our entrecôte was a bit too marbled, which somewhat detracted from the otherwise excellent main course. In summary, you can spend a wonderful evening at Veles. We wish the Veles team continued success.

Amazing food, great non-alcoholic drinks, and fantastic wines!

We celebrated our wedding anniversary here and were very pleased. The service was very attentive and friendly. The food was excellent, as expected. The homemade soy sauce deserves special mention; you could really dig in it. All in all, a very successful evening and we would gladly go back.

All I can say here is that every wine was my favorite. The food was top-notch, fresh, tasted fresh, fresh, and fruity and aromatic. Top-notch, clean service; I'll definitely be back. Joking aside, I've eaten here many times, and this cuisine is right up there with the best. The great thing about it is that it's not completely overpriced. The value for money is definitely geared toward the customer!

The food was of the highest quality – every dish was not only a culinary highlight, but also beautifully presented. You can immediately tell that the cooking here is done with true passion. We were particularly impressed by the exceptional service: The two brothers who run the restaurant together are incredibly warm, attentive, and professional. They personally looked after us, fulfilled all our wishes, and made this special day perfect. A huge thank you to the entire Veles team – we will definitely be back and can highly recommend this restaurant!

Very nice place. Fantastic service and food that is characterized by a devotion to good flavors. The place is located walking distance from the train station, a little out of the way. But it is really worth the trip.

A really great experience: wonderful creations on the plates, incredibly attentive, friendly and relaxed service, great (and unusual) wine recommendations, a very inviting and cozy dining room, chilled out music...everything just fits. We were definitely not here for the last time.

I reserved a table here five weeks before a special event. On-line. You need a credit card and will be threatened with a fee of €115 per person if you do not show up or cancel less than 1 day in advance. Understandable, I think, nobody wants to be rejected at such short notice. And what the heck, I think to myself, the occasion has been fixed for years, so nothing will change for me. A week before the day, then a call: "They found that it wasn't worth opening on that day, it wasn't profitable enough. But I could come on any other day." I could, but I don't want to. The day is special, which is why I reserved a table weeks in advance. I can't judge whether your food deserves a Michelin star. Your customer service really deserves the one star on Google, at least in my opinion.

Absolute highlight, the food is simply a pleasure. What we found most impressive was the choice between wine accompaniment and a non-alcoholic alternative: juices. The juices are created by the restaurant itself, we couldn't decide whether we should order the delicious wine or the great juices... We usually ordered both :-) Highly recommended.

Incredible dining experience! Took someone here for a birthday dinner -- we were impressed with the meticulous preparation and flavor of the food and the non-alcoholic beverages, which are all made in-house. Ideal for a special occasion during "dry January" or for anyone who is not drinking alcohol that evening (but they do also have an extensive wine list). The staff were attentive, knowledgeable, and friendly, and the atmosphere was warm and inviting. Veles is on par with the other fine dining restaurants in Nuremberg and Mittelfranken, although I would like to see them highlight/advertise their uniqueness and backstory a bit more. Can't wait to come back.

Ein kleiner, liebevoller Laden mit absoluter Wohlfühlatmosphäre. Das Menü birgt immer wieder kleine und große Überraschungen, die liebevoll von einem der Köche erklärt werden. Ganz besonders ist jedoch die Weinbegleitung. Selten haben wir so spannende und abwechslungsreiche Weine zu einem Menü bekommen. Jeder Wein ergänzte den Gang um eine weitere geschmackliche Nuance und holte das Gericht wunderbar ab. Ein absolutes Juwel in der Nürnberger Fine Dining Szene. Wir möchten jedem, der es noch nicht probiert hat, empfehlen, das Veles zu genießen. Ein Abend, wie bei Freunden! Herzlichen Dank und auf bald!

An incredible evening! I have to admit that I was critical... Michelin-starred cuisine? Is this something for me? In this case a resounding YES! What I experienced is a combination of unusual ingredients, a surprising culinary delight with a great wine accompaniment. In the end I couldn't answer the question about the highlight correctly. Instead, it was a firework of culinary moments of happiness. So if you are looking for a restaurant for a special occasion or meeting with special friends, this is the right place!

We had a sensational evening at VELES, from the food to the wine to the team on site 110%, if a course doesn't taste good in the sense of "we know it, we like it", it causes a - then - new taste explosion in the palate gets stuck. Super!

Food started strong, but then I think the flavors tapered off. Usually water/coffee is included at such local places, unfortunately this was not the case here. Otherwise a very nice evening - deductions clearly due to the location, the toilets, the ambience and the food - the price/performance ratio isn't quite right and one of the service people wasn't very attentive, the rest was great.

Wir besitzen eine breite Erfahrung hinsichtlich Michelin-Sterne-Restaurants. Das "Veles" ist eines der besten, das wir je besuchen durften. Hier stimmt alles: Grandiose Speisenqualität, tolles Ambiente und eine sensationell gute Atmosphäre, die insbesondere der kompetenten Mitarbeiter vor und hinter dem Herd geschuldet ist. Die Protagonisten sind in jeglicher hinsicht herausragend gut, es macht große Freude, hier Gast sein zu dürfen. Absolut empfehlenswert und eine reise wert, wir selbst haben 350 km Anreise in Kauf genommen, nach unserer Erfahrung wäre sogar ein Mehrfaches davon noch lohnenswert!

Mein 2. Besuch im Veles hat mich abermals positiv überrascht! Bereits das erste Mal vor 1 Jahr war stimmig, aber jetzt war es fast unschlagbar. Diese Jungs wissen, was sie tun! Jeder Gang war perfekt abgeschmeckt und es gab dementsprechend Geschmacksexplosionen im Mund. Persönlich würde ich mir lediglich zu jedem Gang eine etwas kürzere Erläuterung der Gänge wünschen. Alle hin, alles tip top!

Tolle Begrüßung. Wunderschönes, entspanntes Restaurant. Stilvoll und clean eingerichtet, dabei trotzdem gemütlich. Die Jungs sind extrem nett, lustig und verstehen ihr Handwerk in Perfektion. Weinempfehlung auch klasse. Der Service ist stets aufmerksam. Auch die Verabschiedung einfach herzlich und immer am lachen gewesen. Bei Veles ist es keinesfalls spießig, sondern genau richtig: moderne, junge Sterneküche für entspannte Leute die auf geniales Essen stehen.

Overall Good quality food, very creative and fresh at still a great price for a Michelin restaraunt. It’s not your typical uptight atmosphere it’s very casual. it did catch us off guard I probably would have picked a more up scale attitude for our event but it’s not a big deal, I’m glad we found this place. but we would definitely rather come with friends next time and have fun with great food in the casual, but classy environment. (Parking is a pain)

Really innovative techniques with an focus on using local ingredients akin to Noma. The technique , flavors and creativity behind every dish along with a detailed explanation truly made it a memorable experience more. I particularly appreciated their focus on various ways to make “garum” and flavored oils from what would be considered “waste products”. The service was immaculate and the wine pairings were well thought out to match and complement the taste of the dishes.

Exceptional evening thanks to the staff at Veles. These guys have a passion for food. Cuisine was creative with layers of flavors, and well balanced. The chef draws from many different cultural food experiences. The wine list pairs very nicely with each dish. One of the most memorable Michelin dining experiences we’ve ever had. Highly recommended if you are visiting the area. It’s definitely worth it!

Rundum gelungener Abend. Alle sehr zuvorkommend und aufmerksam. Perfekte Beratung, nicht aufdringlich, aber immer zur Stelle. Die Atmosphäre familiär-leger, freundlich-elegant. Erstaunlich und bemerkenswert, dass bei sieben Gängen keiner auch nur leicht abfiel, Geschmack, Komposition und Präzision blieben auf konstant exzellentem Niveau. Die Weinbegleitung harmonierte abgestimmt mit den Gängen und ergänzte sie sogar, die Weine sind teils extravagant gewählt und sicherlich nicht alltäglich. Die Gänge kamen nicht überhastet, aber auch nicht unnötig in die Länge gezogen, ganz wie zu Hause. Das Essen selbst war köstlich, das Menü war geprägt von Säuren und Raucharomen. Die Küche experimentiert, ist aber nicht experimentell, das regional-saisonale Konzept bodenständig, aber nicht bieder - ganz wie eine moderne Sternegastronomie sich präsentieren sollte. Besten Dank für das Gesamtkunstwerk und das besondere Erlebnis!

Nice evening overall👌. The food was really special and interesting (except for one sweet item right at the very beginning, IMHO), the service was great, and the atmosphere was very pleasant as well. I wasn’t a fan of the wine list that goes with the concept, but I completely understand why they choose to offer those wines. It would still be nice to have a „backup wine list“ for people who prefer a different taste. All in all a great evening, thank you 🙏!

I have only recently discovered the desire for reviews and would therefore also like to rate Restaurant Veles. I have visited so many good restaurants and I would like to emphasize clearly... This young and committed team stands out and deserves its star. The quality of the food is first class and the wine selection to accompany the courses is fantastic. The service is extremely professional and very friendly. So far one of the best restaurants here in the country with a great future.

Wir hatten einen tollen Platz genau gegenüber der Theke, sodass wir das Dekorieren der Teller sehen konnten. Das Essen war sehr geschmackvoll. Auf meine Sonderwünsche (ich esse keinen Fisch und kein Lamm) wurde kreativ eingegangen. Das Essen wurde am Tisch erklärt und individuell serviert. Die Getränkepreise sind etwas hoch (vor allem das Wasser) - das ist der einzige Minuspunkt! P.S. Ich kenne das Lokal noch als "Planungskneipe" (meine Lieblingsstudentenkneipe, die ich nahezu täglich besucht habe). Insofern war es für mich auch ein kleines Retro-Ereignis.

Das Essen war sehr ausgefallen und hervorragend angerichtet. Einziges Manko waren aus unserer Sicht die Portionsgrößen, die ruhig hätten größer sein dürfen. Verglichen mit dem Eisvogel oder dem Tantris sowie Ikarus waren die Portionen hier doch noch wesentlich kleiner, sodass wir diesmal noch mit Hunger nach Hause gefahren sind. Das Personal als auch das Ambiente war definitiv herausragend. Vom Küchenchef bis hin zur Bedienung waren alle gut gelaunt und locker und haben die Stimmung Ihrer Gäste förmlich nach oben getrieben. Zugleich waren Sie dabei auch sehr aufmerksam und mit Leidenschaft bei der Sache. Allem in allem ein gelungener Abend.

We visited Veles on a special day and both food and wine selection was impressive. My personal favorite was fish dish and it had a very complex and satisfying flavour. The only improvement point that I see was deserts. I would appreciate if a deeper flavour mix in deserts and maybe a good touch of chocolate based stuff.

Wir sitzen gerade am Silvesterabend 23/24 bei einem unglaublichen Sylvestermenü, mit tollen Kreationen - ein Fest für die Sinne. Sehr aufmerksamer sympathischer Service - hier macht einfach alles Spaß. Wir kommen, keine Frage!!

Da es für mich das erste mal Fine-Dining war, hatte ich ein wenig Respekt davor. Was im Nachhinein komplett unnötig gewesen war. Wir wurden super Freundlich empfangen und man hatte sich zu jeder Zeit willkommen und Wohl Gefühlt. Das essen war einfach nur Super und auch die Alkoholfreie Getränkebegleitung war fantastisch. Wer sich also mal ans Fine-Dining heran wagen möchte ist hier super aufgehoben.

Tolles Gourmetrestaurant mit super Service

Ich war mit drei anderen Leuten dort und wir waren alle hellauf begeistert. Das Ambiente ist modern, aber trotzdem sehr gemütlich. Der Service ist angenehm lässig, aber dennoch höchst profesionell und voller Fachtkenntnis. Das Essen ist auf höchstem Niveau und man hat den ganzen Abend ein aufregendes Geschmackserlebnis nach dem anderen. Wir hätten nicht zufriedener sein können. Was mir noch besonders positiv aufgefallen ist: Wir hatten einen Vegetarier dabei, was überhaupt kein Problem war und sein Essen stand unserem in nichts nach. Außerdem wurde ich vor dem Besuch noch telefonisch nach etwaigen Unverträglichkeiten gefragt. Sowas hatte ich noch in keinem Restaurant auf diesem Niveau, wo zwangsläufig viel vorbereitet und aufeinander abgestimmt ist. Dass man im Veles also darauf noch eingehen hätte können, hat mich sehr beeindruckt.

Sehr feines Restaurant mit hervorragendem Service, entspanntem Ambiente und überragender Küche. Ein Abend mit guten Freunden und leckerem Wein vergeht dort wie im Flug und macht richtig Spaß. Absolut empfehlenswert!
