When you enter the Nigrum, an almost different world opens up... Stylish in every area combined with the old walls of this historic building. The food, which is offered as a menu, can be chosen by the number of courses and tailored to your own hunger. Every course is a delight and perfectly prepared. The wine list is optimally matched to the food, with the chefs always making a sometimes unknown recommendation and scoring 100 points there too.

A review in 2 parts. 1st part The food: Omakase (in German I leave it to him) in 7 courses. Each course on its own was delicious and, with the exception of the dessert, beautifully presented. Unfortunately, the first four courses consisted almost exclusively of tuna and salmon 1. Tuna tartare 2. Fish soup (this mainly contained salmon) 3. Salmon carpaccio 4. Tempura sushi with salmon and tuna For us, that's just not enough variety for a fish restaurant. The Hamachi in nut butter with ponzu was our highlight, unfortunately nothing was offered to eat the broth, e.g. bread or a spoon would have been enough (the dish hasn't been thought through to the end here) The main course was a whole turbot on a cold plate, so when I turned it (to get to the other fillets) the fish was already cold. The dessert was a frozen mochi filled with ice cream and an extra scoop of ice cream, served with a spoon. Unfortunately, the mochi was rock hard and therefore not edible until it had thawed, the ball of ice cream was neither round nor smooth (the temperature of the ice cream was too cold) which was unfortunately a very unbalanced ending. 2nd part of the service When making the reservation (e-mail), we already stated that we wanted the 7-course menu twice, one of which was without alcohol. When we arrived no one knew anything about it (just not enough given the price level) The courses were briefly mentioned but not explained (as a chef we know what it is, but as an ignorant person I wouldn't have been able to say what it was...) After our main course we had no water, wine or non-alcoholic cocktails. The service completely missed this, it's not only inattentive but it also costs restaurants a lot of sales. We weren't asked again until we left and then we had 30 minutes waited and then paid. In a restaurant where you pay several hundred euros, you should work differently.
