Markgräfler Winzerstuben in Badenweiler

Die Entwicklung und Kraft des Chefs zeigt sich in der Weiterentwicklung und Neuentdeckung der Speisen und man spürt die Heilung. Die Versucherle sind ganz klar einige Level weiter, als die Speisen der Winzerstube vor einigen Jahren. Die neuen Speisen und Konzepte haben so viel Seele, Lebenslust, Kraft und Ausstrahlung und dadurch gibt es für dieses Restaurant auch in der Umgebung keine Konkurrenz, weil es was eigenes ist, authentisch und nicht versucht etwas zu sein, was es nicht ist. Eine Rezension bemängelte die Mengen der Versucherle und dass man nicht satt werden würde, sich das dann auf die Rechnung auswirkt. Das finden ich und mein Partner nicht, Tapas sind zweckmäßig und für das gesellschaftliche miteinander immer eine kleinere Portion, die man bestenfalls genießt, mal probiert, teilt und mehrere Sachen gleichzeitig bestellt, das ist das Konzept und der Preis für diese Menge (welche mehr ist als in anderen Tapasbars) ist absolut gerecht und macht satt, der Aufwand ist größer als beim Kochen zwei großer Standardgerichte, wir haben heute zu zweit 13 Gerichte gegessen, eine bessere Zeit hatten wir in einem Restaurant lange nicht mehr und haben genauso viel für diese ganzen Speisen gezahlt, wie für ein normal großes Essen im Restaurant für zwei Personen wir fanden es sogar zu günstig für diese Art Qualität, die Gedanken,die in die Ergebnisse geflossen sind, die Experimentierfreude, Vielfalt, Kreativitat, Expertise, Arbeit und Herzblut. Ich denke das wird oft vergessen und sollte mehr Wertschätzung erfahren, denn es ist wirklich selten. Das Restaurant war heute Abend randvoll, der Service war trotzdem schnell und freundlich. Das Überraschungseis haben wir erraten können, es hat für Gespräche mit den Nachbartischen gesorgt und eine positive Spannung aufgebaut. Die Philosophie Gemeinschaft und Miteinander zu erzeugen haben das Dessert und die Versucherle auf jeden Fall geschafft. Vielen herzlichen Dank für so eine schöne Zeit, wir kommen auf jeden Fall wieder und können die neuen Kreationen kaum erwarten.

Unser Abend in den Markgräfler Winzerstuben war schon jetzt sicherlich eine der besten kulinarischen Erfahrungen in der Region in diesem Jahr. Das Restaurant war bereits mit der klassischen Karte ein empfehlenswerter Ort mit tollem Ambiente, Jörg Calvis' neues Konzept der 'Versucherle' hebt die Winzerstuben aber nun auf ein ganz neues Level. Am ehesten würde ich die neue Karte als ein geerdetes Casual Fine Dining beschreiben. Gerichte, die die regionale Natur und die jahreszeitlichen Besonderheiten aufgreifen, denen man mit jedem Bissen eine große Liebe zu besonderen Geschmackskombinationen und viel Experimentierfreude, aber vor allem ein großes Talent des Kochs anmerkt, die dabei wunderbar unprätentiös und liebevoll in kleinen Schalen serviert werden. Man bestellt sich pro Gang und Person zwei bis drei der (entgegen dem Namen dennoch recht großzügigen) Versucherle und genießt sie entweder für sich allein, am Schönsten aber geteilt in der Tischmitte. Hervorzuheben ist auch das exzellente Preis-Leistungs-Verhältnis und die, wie auch schon aus früheren Zeiten gewohnte, große Auswahl regionaler Weine. Wer nach einer Blauenwanderung lieber ein herzhaftes Tellergericht möchte, hat noch immer die Möglichkeit, einen der Klassiker der alten Karte zu bestellen. Wir sind rundum begeistert und kommen gerne wieder.

Wir hatten einen wunderbaren Abend mit ausgezeichneten Speisen, gutem Wein und exzellentem Service. Vor allem das Konzept der „regionalen Tapas“ ist eine schöne Idee, dass man mehr als nur ein Gericht kosten kann. Das Roastbeef beispielsweise war so zart, dass man es mit der Zunge zerdrücken konnte.

Eine absolute Empfehlung für jeden, der in Badenweiler kulinarisch etwas erleben möchte! Meine Familie und ich waren auf der Suche nach einem Restaurant für unseren letzten Abend in der Umgebung und sind dabei auf die Markgräfler Winzerstuben gestoßen – Gott sei Dank. Beim Betreten des Restaurants, das bereits in zweiter Familiengeneration geführt wird, findet man sich in einem urigen und gemütlich eingerichteten Gastraum wieder, wie man ihn von einer traditionellen, lokalen Wirtschaft kennt. Ein Blick auf die Speisekarte lässt einen zunächst jedoch etwas stutzig werden, die Rede ist von sogenannten „Versucherlen“. Anfangs kann man sich darunter nur wenig vorstellen, doch schnell wird klar, dass es sich um eine heimische Interpretation von Tapas handelt. Eine breit gefächerte, saisonale und regionale Auswahl kleiner Gerichte, dabei dennoch überschaubar und mit einem klar erkennbaren Konzept. Hier wird definitiv jeder fündig. Klassische Gerichte werden neu interpretiert, erhalten einen saisonalen Touch oder werden durch regionale Einflüsse veredelt. Jedes Gericht ist etwas Besonderes. Man spürt und vor allem schmeckt die Leidenschaft und Liebe, die in jedem einzelnen Happen steckt. Mein persönliches Highlight war neben dem Essen allerdings die kleine Exkursion des Inhabers, Kochs und Konzeptgebers Jörg Calvis. Herr Calvis nahm sich extra Zeit, um über seine Vorstellung von Gastronomie, die Idee hinter den Versucherlen sowie den Entwicklungsprozess einzelner Gerichte zu sprechen. Schon beim Zuhören merkt man, wie viel Herzblut und Leidenschaft er in die Winzerstube und ihr Speisekonzept gesteckt hat. Wie kreativ und raffiniert er dabei vorgeht, als wäre „kreativ“ fast noch eine Untertreibung. Allein wegen dieses Restaurants würde ich wahrscheinlich noch einmal nach Badenweiler kommen! 10/10 Empfehlung. Wer in Badenweiler ist und sich die Versucherle entgehen lässt, ist wohl selbst Schuld.

Ein charmantes kleines Restaurant mit richtig gemütlicher Atmosphäre. Große Weinauswahl mit vielen Vorspeisen und einigen Hauptgerichten.

Ich habe während einer dreitägigen Radtour einige hervorragende Weine verkostet.

Das Essen war wirklich gut. Es hieß die haben keine Teigwaren aber auf der Karte stand Maultaschen. Die Kellnerin ist von der alten Schule.

Ein echter Kracher, sehr deutsch mit einem satten, befriedigenden Klang; er ist zwar teuer, aber unglaublich gut. Hören Sie ihn sich nach einem kurzen Bad im Baden an, und Sie werden ihn lieben.

Ein herzlicher Empfang in einem traditionellen Restaurant, in dem die Kellnerinnen Tracht tragen. Die Gerichte werden in kleinen Portionen serviert, sodass man verschiedene probieren kann. Und die Idee ist hervorragend, denn alle bestellten Gerichte waren sehr schmackhaft, raffiniert und abwechslungsreich. Wir kommen gerne wieder, um die restlichen Gerichte zu probieren. Der Küchenchef kommt außerdem persönlich an jeden Tisch, um mit den Gästen zu plaudern. Er erklärt seine Rezepte, insbesondere die Zubereitung des Eises. Ich empfehle das Limetten-Ingwer-Eis, das besonders lecker ist. Ein sehr gutes Restaurant zu einem sehr fairen Preis.

Wir haben einen sehr netten leckeren Abend verbracht. Die kleinen sowie großen Gerichte waren sehr lecker und mit Hingabe zubereitet. Die Räumlichkeiten sind perfekt für einen gemütlichen Abend - zu zweit oder auch in einer Gruppe und der nette Service rundet alles ab. Wirklich eine Location an die man sich gerne erinnert.

Superleckere regionale Küche mal anders angeboten. In Form von Tapas gibt es die Möglichkeit viele kleine Versucherle auszuprobieren und überraschende Geschmackskomponenten zu entdecken. Eine sehr schöne Entdeckung – wir haben am Samstagabend in diesem Restaurant zu Abend gegessen und hatten eine wundervolle Zeit. Die Speisekarte bietet mehrere sehr originelle Gerichte aus saisonalen Produkten. Dank der kleinen Portionen kann man verschiedene Gerichte genießen und teilen. Der Service war sehr freundlich und aufmerksam. Wir hatten auch die Gelegenheit, uns ausführlich mit dem Küchenchef zu unterhalten, einem passionierten Mann, der hervorragend Französisch spricht. Wir kommen auf jeden Fall wieder!

Wir waren nun schon zum vierten Mal hier weil das Essen so gut ist dass sich der Weg von Freiburg mehr als rechnet! Wir sind absolute Fans der Versucherle! Schon wenn sie an den Tisch kommen freut man sich sie gleich zu verzehren, weil sie einfach hübsch serviert werden (: Wir haben mittlerweile fast alle durchprobiert, sowohl die Variationen mit Fleisch, als auch die vegetarischen und eine vegane (plus hervorragende Nachspeise -> Espresso-Eis hausgemacht). Jedes einzelne ist für uns ein echter Gaumenschmaus! Man kann spüren, dass die Speisen mit Erfahrung, mit Raffinesse bezüglich der Auswahl der Zutaten&deren Kombinationen und mit viel Herzblut zubereitet werden. Das wissen wir, da sich ein bedeutender Teil der Gastronomie heutzutage kläglicherweise durch convenience food auszeichnet, besonders zu schätzen! Es war nichts dabei was uns nicht geschmeckt hat! Uriges Lokal mit originelle Ambiente. Teilweise kuschelige Sitzecken mit Kachelofen. Das Brot ist wirklich einzigartig lecker und das Konzept mit den badischen Tapas macht Spaß. Man kommt in den Genuss, viele verschiedene Sachen zu probieren, die originell zusammengestellt sind. Sehr freundlich und humorvolle Bedienung, man fühlt sich als Gast wertgeschätzt.

A lovely food concept! It's called "Versucherle" (Taster), where you can order small dishes and "put together" your own meal. Such a nice variety! They also offer full plated meals...

A thoroughly good place. The ambiance matches the name, and the food is delicious. The "tasting" approach takes some getting used to at first, but ultimately proves practical. My robust Pinot Noir was a bit lacking in depth. Highly recommended!

For the past five years, we've been coming here whenever we're in Badenweiler (we live in Switzerland). The food has always been a 20/10! 👌🏼 The new tasting menu allows you to enjoy even more of the many delicious dishes in one evening and have a fantastic culinary experience – from appetizer to dessert. The service team is very friendly and attentive; neither plates nor glasses stay empty for long. What's more, the owner makes a point of personally greeting every guest, even when the kitchen is busy. You can feel the genuine passion for gastronomy here, which is why we'll always be happy to return! P.S.: A high chair for our almost two-year-old was already waiting for us upon arrival, and the team is warm and understanding towards children, even if they're a bit unruly. 😉

Highly recommend this place, if you’d like to get a taste of local food and wine. The chef does a great job by combining ingredients you never thought of would match. Ever heard of a restaurant cabbage ice cream? No? Delicious! The food was great in taste, however my Schnitzel was a bit dry and the potato soup too salty. Overall, would come back here and try more of the delicious combinations. Be prepared to be in a German restaurant where they don’t serve beer. Therefore, they have an amazing menu of digestives, that you can also buy in various sizes as a nice gift. Keep it up guys!

We were there for the first time last night, and they didn't overpromise! The food was absolutely delicious! The cozy dining room and the incredibly friendly staff completely won us over. The head chef himself shared his culinary philosophy with us throughout the evening and even gave us a tour of the restaurant, including the wine cellar, to round off the night. A truly wonderful experience! We will definitely be back!

A blend of flavors, excellent fresh and local ingredients, and a culinary flair to awaken the taste buds. There's something for everyone, including a wide selection of vegetarian dishes! After not having been to the Markgräfler Winzerstuben for about three years, the very friendly waitress explained to us on our last visit that the menu and concept had been changed to "Baden tapas," or so-called "Versucherle," as they are called here. Our initial skepticism, however, was completely unfounded, as the various cold and warm "Versucherle" were all excellent. Kudos to the chef! My recommendation: the Baden vitello, braised beef cheeks, and Baden Maultäschle (raw pork stew). I certainly don't need to say anything more about the cozy atmosphere; many reviewers before me have already praised it in detail. We particularly enjoyed sitting and eating at the same table with very different people on the three evenings. We had a great time chatting and laughing (we could safely leave our smartphones in our pockets :-) Everything was great, keep it up! If you come to Badenweiler, you should definitely visit the Markgräfler Winzerstuben. This wine tavern is an absolute highlight of the town. Delicious Baden dishes, excellent wines, and a rustic atmosphere perfectly round off a beautiful day in the Black Forest. Important: Reserve a table early, ideally a day or two in advance; the Markgräfler Winzerstuben are no longer an insider tip :-)

Jakob greeted us with a warm smile and kindly offered us a table, even though we were late. Only later did we learn it was his last day before returning to his environmental studies. He could have easily said no — but he didn’t. That’s what happens when people truly love what they do. Marion, too, was wonderfully kind and genuine, making us feel completely at home. And the cherry on top was the chance to exchange a few words with Jörg himself — the second-generation owner of Markgräfler Winzerstuben — who shared with us a philosophy that we had already sensed long before he put it into words.

Once a year, Badenweiler and the Markgräfler Winzerstuben have long been a regular part of our itinerary. The rustic, comfortable atmosphere and friendly, attentive, and professional staff have delighted us for years. This year, we were pleasantly surprised by the new concept. Many small snacks/tasties, ideal for sharing in tapas style, offer the opportunity to sample the entire menu together. Seasonal produce, classic dishes with some new interpretations, and exciting combinations and creations. A delicious variety that made it difficult to choose. Our absolute highlight: red cabbage sorbet. We've rarely had such a good dessert! Unfortunately, the journey is too far for us to just drop in quickly. We're already looking forward to next year!

A wonderful surprise, a concept of German tapas in the Black Forest style.

A perfect evening in a cozy, rustic setting. Very professional, attentive, unobtrusive, and friendly service. We started with "Versucherle" appetizers, which we loved, and continued with "Versucherle" main courses. Everything was delicious, fresh, and of good quality. Every bowl was a taste experience! Finally, we shared an "Irresistible Desire" dessert, which lived up to its name. All in all, it was a success and definitely recommended.

A very beautiful and excellent restaurant. The decor is superb, in a very traditional regional style. The food is excellent, with very successful flavors and combinations. The only downside was that we were a couple and were seated at the end of a table already occupied by three people. The service remains very efficient and professional; nothing to complain about. Reservations are highly recommended. I recommend this restaurant and we will definitely return on our next visit because it was an excellent experience and their menu is regularly updated.

Wow – what an experience! We received a very warm welcome the moment we walked in. The service was simply fantastic: friendly, attentive, full of joie de vivre, and genuinely passionate about what they do. You can immediately tell that the work here is done with passion. And then the food… simply amazing! These little "tasters" – a dream! Each bowl was a little explosion of flavor, perfectly balanced and beautifully presented. A true journey through autumn in terms of taste – creative, delicate, and incredibly delicious. We went there twice during our vacation because we just had to go back after the first visit. The concept of small portions totally won us over – just right for trying everything without feeling completely stuffed afterward. Add to that the fantastic atmosphere: stylish, cozy, and simply a place to feel good. Everything is lovingly done down to the last detail. I've enjoyed going to the Winzerstube for many years. The ambiance—whether inside or outside in the beautiful courtyard—is very special. I particularly like the ever-growing selection of vegetarian and vegan dishes. In many places, they only serve salads, but not here. The owner puts a lot of thought and care into the selection! The newer concept with the "Versucherle" (tastings) really appeals to me, as you can try a lot of different things and share them. The staff is also super friendly. What more could you want! The prices are absolutely reasonable for the quality. Highly recommended.

The food was a 14/10. With the exciting "versucherle" concept, it was a tapas-like experience. And all that with well-selected ingredients and innovative dishes. Every component was carefully chosen, and you can taste it. High praise for the kitchen here. The service was authentic, friendly, and personable :) They also serve good wine. Highly recommended!

It takes a lot of courage to rethink the concept of a traditional restaurant and offer lots of delicious, creative "Versucherle" (small portions) instead of the usual hearty cuisine, without losing the regional connection. We were impressed and won over by the chef's passion and dedication. We wish anyone who cares so intensively about their guests success from the bottom of their hearts. It takes a bit of getting used to the menu. For your first visit, in addition to making a reservation (it works perfectly online), a visit to the website is helpful. We can allay any worries about not getting full. And the price isn't any higher than in other regions, even though the effort involved here is certainly considerably higher. We give it a 100% recommendation.

A great idea to offer small portions at a low price. This allows you to try a variety of dishes. Everything was excellently prepared! Excellent service, and the courtyard is a lovely place to sit.

Fantastic!! I was totally blown away. I went in expecting a homely wine cellar and came out with a feeling of "simply wonderful." Incredibly friendly staff, including the chef, delicious food that leaves nothing to be desired, fast service, and the food arrived in no time. Cozy ambiance with a mix of rustic and chic. And a wide selection of dishes. I'd be happy to go back anytime, thank you for the great start to my vacation!

This was our second time here, and it was fantastic again. The food was delicious, and we felt very welcome. We were there with our children (5, 7, 8, and 15), and it was very relaxing.

Great restaurant with local cuisine. Tapas, Baden style! Very, very good, delicious in every way. Plus, the cozy courtyard, and the owner personally looks after the guests and is always available to help and advise. Wonderful. We've been there twice and will definitely be back.

Unfortunately, we found our visit here very disappointing. First, we had to wait a long time to order, and then another long time for drinks and, eventually, the food to arrive. The sausages weren't cooked all the way through and had to be put back in the pan. The fried potatoes were cold, and the schnitzel, in our opinion, was a frozen product. These poor dishes don't match the high prices. We were seated as a couple at a table for four, and another couple joined us a while later. We did get chatting, but we would have preferred to enjoy the evening alone. Overall, we wouldn't recommend visiting this restaurant because the price and service don't match at all, even though the wine was at least good.

Best meal of our trip to the black forest. Very innovative dishes, all delicious, and wonderful and warm people. We had a bunch of the tasting dishes and they were all fantastic, especially the beef cheek. Strong recommendation to visit!

The welcome was warm, the restaurant authentic and full of charm – with a beautiful old oven and a floor made of traditional tiles, which contribute to the warm and typical atmosphere of the restaurant. But even more than the ambiance, the cuisine is impressive. Regional specialties are served that are rich and flavorful. The concept allows you to sample a wonderful selection of dishes – a culinary journey of discovery. The staff is professional, friendly, and attentive. I would like to sincerely thank the kitchen team and the service staff for their friendliness. A place not to be missed if you appreciate authentic regional cuisine.

Highly recommended restaurant with a unique concept (portions are served in "tapas" size). The dishes feature finely balanced ingredients – a delight from appetizer to dessert. The dining experience is also characterized by exceptionally polite and competent service. A cozy wine-tasting atmosphere is guaranteed in the beautiful interior and also in the well-kept courtyard. Advance reservations are essential.

Markgräfler Winzerstuben is the kind of place that reminds you why dinner with people you care about matters. Everything from the menu to the building itself is centered around tradition, quality, and investing time in relationships. The food was phenomenal. The Schnaiker Schniddle was a great way to start. The Roasted Goat Cheese Mozzarella was my personal favorite, packed with some of the most flavorful cheese I’ve ever had. The Badisches Maultäschle stood out with its perfect noodle texture and rich, savory meat. For dessert, “Irresistible Desire” was a solid brownie classic with ice cream, but the Lemon Buttermilk Ice Cream stole the show. It was super sweet, and the seeds added an extra flair. Also, don’t skip the roast beef. They’ve built 50-year partnerships to get the best ingredients, and you can tell. Every dish has a story. Recipes are generationally preserved but they add just enough of a twist to make each one unique. The service was awesome. We were constantly checked in on, even with our large group. The space itself is historic and full of character, with seating in different rooms that each have their own backstory. Some parts of the building are over 200 years old, and everything has been done to keep it feeling authentic. This place does German food right. It is authentic, thoughtful, and full of meaning.

Unfortunately, we arrived a little late (9:00 p.m.) for a spontaneous dinner and were nevertheless greeted very warmly. The "Versucherle" system is certainly a nice idea, but we decided against it due to the late hour and the rather hefty prices. There is a small selection of "regular" dishes. We chose the farmer's sausages with fried potatoes and the schnitzel, also with fried potatoes. Each came with a small side salad. These were well-made, albeit a bit small. Unfortunately, due to a misunderstanding in the service, my friend's meal was served a quarter of an hour earlier than mine – which was annoying. (Tables were mixed up.) What we think is completely beyond good and evil are the absurd drink prices. The Aperol Spritz blend, which is non-alcoholic, is quite expensive at €8.50 for 200 ml. (Ordered on the server's recommendation, unaware of the price.) Plus a small carafe of apple juice and a 0.7-liter bottle of water, the drinks came to over €20. That's downright extortionate and can't be justified by rising prices. All in all, a small dinner for two people costs around €80! These are prices more commonly found in Michelin-starred restaurants. Therefore, I unfortunately cannot recommend the Winzerstube and will not be returning.

We were particularly taken with the inner courtyard – a small, rustic idyll that invites you to linger. From a culinary perspective, it was a true experience. The menu surprises with creative ideas – including "Versucherle," charmingly named Baden tapas that interpret regional cuisine in a new, playful way. Each dish was harmonious in taste, well-thought-out, and prepared with a keen sense of flavor. You can tell: The cooking here is done with passion. Whether it's the ambiance, service, or food – everything, absolutely everything, was perfect. If you're looking for good food in a relaxed, stylish setting, this is the place for you. Conclusion: A place where you feel comfortable and enjoy lingering – tasteful in both senses of the word. We will definitely come back and highly recommend the restaurant!

Unfortunately not, smokers are not welcome outside, smoking is prohibited at the tables in the courtyard, very intolerant, the only restaurant in beautiful Badenweiler that follows this policy

Erg lekker gegeten, leuk concept met allemaal kleine bordjes. Alles vers bereid met producten uit eigen regio en niks uit een potje. Prijs/kwaliteitverhouding = top. Aanradertje.

Whenever we're in Badenweiler, we eat here. This time, the concept had changed to food sharing. We're sometimes a bit critical of that, but that wasn't justified: here, everything was very well thought out. Each dish is based on Baden cuisine, and everything fits together perfectly, which isn't often the case with other sharing options, where it gets a bit messy. Those who prefer their own large main course can still choose from four classics. Every dish was top-notch, and we ate things we otherwise would never have chosen in a large dish, and we loved it. The lady serving in Dirndl is still top-notch, and the terrace is delightful. For us, the restaurant has only improved, and the wine is also very good. We keep coming back. Tip for the owner: stay true to the concept of Baden cuisine and don't be tempted to take too many detours. It's precisely this well-thought-out concept that makes the restaurant so unique.

Very tasty, very authentic. Traditional dishes are given a modern twist and are very delicately seasoned. The staff is friendly and uncomplicated. The location is rustically decorated and very authentic.

This winery is something special. The small Baden specialties, known as "Versucherle," are a great opportunity to try different things. The owners have put a lot of thought into their creations. It's cozy, you get to chat with other people, and the "Kalte Sophie," a delicious aperitif, is especially recommended. We'll be happy to come back! 👌👍

Since every dish is served in small bowls (like tapas, but only Baden cuisine), you'll need three or four. Overall, with relatively expensive drinks, it's quite expensive. Even when it's busy, they still try to serve you well.
