Es war ein sehr schöner Abend. Schon bei der Ankunft wurden wir von Herrn Fehling freundlich begrüßt. Die Mitarbeiter sind alle sehr freundlich, höflich zu den Gästen aber alles dezent. Das Essen war/ ist visuell eine Augenweide, teilweise echte Kunstwerke die toll serviert wurden. Geschmacklich wer das Essen toll komponiert, hervorragend für die Geschmacksnerven. Kenner und Genießer kommen unserer Meinung nach voll auf dem Geschmack. Sehr gute Weinauswahl sowie Beratung zu den einzelnen Weinen. Wir haben die ca. 3,5 Std. sehr genossen und können das 3 * Restaurant sehr empfehlen Rundum ein toller & gelungener Abend in schöner Atmosphäre.

Im The Table Kevin Fehling ist jedes Detail perfekt durchdacht – das Essen lässt keinerlei Raum für Verbesserungen: präzise, ausdrucksstark und meisterhaft komponiert. Die Küche agiert mit der Harmonie und Exaktheit eines perfekt eingespielten Orchesters. Der Service ist außergewöhnlich aufmerksam, souverän und zugleich angenehm unterhaltsam. Ein aussergewöhnliches, modernes Ambiente mit einem geschwungenen "Table" , welcher alle Gäste in lockerer Atmosphäre vereint und doch irgendwie so ausgelegt ist, dass man sich privat gut unterhalten kann. Man hat den Blick auf die offene Küche, welche ein perfektes Zusammenspiel aller Mitarbeiter in sehr ruhiger Atmosphäre abgibt. Das Menü "Tor zur Welt" hat uns sehr gut gefallen und ist selbstverständlich eine Reise wert. Das Serviertempo der einzelnen Gänge, sowie der sehr harmonierenden Weinreise waren auch perfekt. Optimaler Zeitraum zwischen den Gängen und sehr informative und freundliche Dialoge mit dem Sommelier und den fachlich sehr gut ausgebildeten Mitarbeitern perfektionieren das Erlebnis im "The Table". Kevin Fehling empfing uns persönlich und war auch aktiv Teil des Teams in der offenen Küche. --> Jederzeit wieder und DANKE, dass wir sowas erleben durften.

An all-around fantastic experience and a delight for every sensory sensory sensory system in your mouth and nose. Each course and each wine was explained in detail. And even when the wine was explained again to the neighbors 2 meters away, additional information was provided. In other words...it wasn't just a reciting of a memorized text, but rather a passionate experience that was conveyed to the discerning guest. Each course was a poem. The harmony of flavors and aromas...even the firmness of the individual components formed a coherent whole. The staff was dedicated and attentive in every respect. The concept of the long table works perfectly. You inevitably strike up a conversation with your immediate neighbors in the arched table and may even meet interesting people and their stories. The background music is appropriate and unobtrusive. Highly recommended if you can afford the price.

Yesterday, the time had finally come for our long-awaited visit to "The Table." It's not easy to find the right words; you simply have to experience it. From the first contact at the door to our farewell, we had an absolutely perfect evening. Both the food and the service were 100% perfect. Our expectations were high, and we were not disappointed. What Mr. Fehling and his team create there is the perfect fine-dining experience. We were a little early, but were still greeted right at the door and taken to the upstairs area, where we enjoyed a glass of welcoming champagne. Our culinary journey around the world began at 8:00 p.m. sharp. Mr. Fehling made sure to briefly welcome us at our table. The service was arguably the best I've ever experienced. Attentive, thoughtful, and unobtrusive, the service team accompanied us throughout the evening. Each course was a highlight, introduced by competent and easily understandable explanations. An incredibly pleasant atmosphere; the team communicates predominantly non-verbally and exudes calm and serenity, without a trace of hecticness or stress. We are absolutely thrilled and can only recommend "The Table." This restaurant is truly worth a visit and lives up to its three Michelin stars.

This review dates back to last year. I have been hesitant to post because I was a bit disappointed and felt it may have been just a bad day. Yet, can a 3 star Michelin restaurant afford a bad day? I think not. First things first, the food was very good, this is undeniable. For me the wow effect was missing, but the dishes were creative and well executed. Flavours and preparations from different influences. Still, I would not rate it higher than most 3 stars I have been to, or even some 2 stars (in my personal opinion, the Lakeside in Hamburg is far better). Service was very good and friendly. With a notable exception, the Sommelier. He seemed genuinely disappointed or disinterested when we selected our own bottle against the pairing. He also did not seem to know much about the wine (Priorat), which he admitted. This is a first for me. I am fully aware that he had received awards, but none of those qualities were shining on that day. Besides, he put his full attention to a group of four people, largely ignoring not only us but all others parties too. The chef was not present on that night. It can happen, but disappointing nonetheless. This is a harsh review, and I did not rate it any lower because of the exceptional dedication of the kitchen and service staff, besides aforementioned exceptions. Perhaps it was a bad day, but I would not go back.

I had high expectations – but what Kevin Fehling and his team offer truly exceeds everything. Every single course was a surprise; creative, incredibly balanced in flavor, and beautifully presented. The setting with the long table is extraordinary – you sit right next to the kitchen and can watch everything being created. This creates a special atmosphere, almost like a small culinary theater performance. I particularly liked that the dishes weren't just "upscale," but also enjoyable. There are flavors from all over the world – from Asia to South America – but everything seems harmonious and never overdone. The service was excellent; professional, relaxed, not intrusive, but always there when you needed something. The wine pairing was also perfectly matched.

We were at La Belle Epoque. Ten years later, "The Table" in Hamburg, and the chef wasn't there. He was on board the MS Europa. We were greeted by restaurant manager and sommelier David Eitel. He has been working alongside Mr. Fehling for twenty years. It must be love 🫶. Mr. Eitel and the young service team looked after us in a pleasant manner. It was my wife's wish to dine here once. I was rather reserved and uncomfortable with her request. So my basic attitude was rather critical, which was certainly grossly unfair. Even finding a parking space proved difficult. My preferred P-Haus was full. I tried the navigation system, but the fabulous voice recognition didn't understand a thing. My stress level rose, as did that of my loved ones in the passenger seat. My comment that I was wearing "shoes" that were unsuitable for hiking didn't help the mood in the car. Despite these adversities, we arrived at the restaurant "The Table" on time and, as already mentioned, were warmly welcomed. Our expressed preference for seating and my wife's aversion to goose liver were taken into account. We appreciate this kind of attention. From our "armchairs," we had a very good view of the kitchen and the other guests. Therefore, it wasn't boring. The long table seats 22 people. All the chairs were occupied. Despite the proximity, everyone kept to themselves that evening. The atmosphere was subdued, but not reverent. We actually like things a bit more "turbulent." There may have been some Hanseatics present, who are said to have a certain distinction. According to Mr. Eitel, it can certainly get cheerfully loud and turbulent on some evenings 🥳🍾😊. Contrary to expectations, despite my height, I sat surprisingly well in the bar chair I dreaded. However, if your bottom is a bit more expansive, it can be a tight squeeze. Even the soundtrack told me what to expect, which rarely happens. It actually turned out much more splendidly here at "The Table" than I expected 😁. My wife also liked the fact that her grumpy husband seemed increasingly more relaxed. I was impressed by the precision of the kitchen crew; the entire evening was perfectly choreographed. It never became hectic or loud. When I studied the menu in advance, I had the feeling that I might like what was on offer. "The Gateway to the World" was at the top of the menu. By the end of the evening, I had experienced a joyful journey around the world. There was no clear commitment to one culinary style. The dishes served were consistently artisanally precise, highly aromatic, and very satisfying. The five greetings alone showed a range that stretched from North America to Hamburg, Italy, India, and Vietnam. It was a wonderful introduction that set the tone; a culinary feast awaits us today. My highlights were a delicately prepared unstuffed goose liver, with a woodruff broth with vanilla oil and goose liver ice cream particularly appealing. The seaweed taco with avocado and jalapeños, served with the cod, was also very delicious. The two meat courses, Moroccan quail and a perfectly cooked duck breast, delighted not only my palate, but also my wife's. That's saying something; she rarely "celebrates" meat, but at "The Table" she did. After about three and a half hours, the delicious meal concluded with an exceptionally exciting and unusual dessert, as well as three petit fours, which we hadn't had in this form before. Looking at the pictures and comparing them with the menu, you should be able to understand why, at the end of the evening, I returned home feeling extremely exhilarated and satisfied, despite having blisters on my heels. Conclusion: I can wholeheartedly recommend a visit to Shanghaiallee 15. This is true regardless of whether the boss is in the restaurant or at sea. His team in Hamburg seems to be doing quite well without him 😊.

The Table by Kevin Fehling Last weekend we finally made it and I fulfilled my long-held wish to go to “The Table”. With 3 stars, we naturally expected perfection that you wouldn't expect in less decorated restaurants. We were greeted and greeted at the door by the boss himself. A nice young lady then accompanied us to the table, of which there is actually only one in the restaurant. All a maximum of 20 guests sit here, as if at a counter, with a view of and into the open kitchen. I like this concept that promotes communication and allows you to have a little chat with the people sitting next to you. Nevertheless, you have enough distance so that it doesn't become uncomfortable. We actually had very nice conversations with the young couple to our left throughout the evening. In general, the atmosphere is very pleasant, modern but not cool. The service was very friendly but quite reserved. A few nice words from me quickly relaxed the atmosphere and we were able to exchange a few words with the service. The two sommeliers presented the wine very attractively and defrosted it quite quickly if you asked a few questions. You always received competent answers and you were happy to elaborate a little further if you noticed our interest. Nevertheless, you can tell that everything here is planned down to the last detail and in the end I was actually missing something that wasn't quite so perfect to bring across a little more personality. The meal consisted of 6 courses plus aperitifs and sweets. The food was very good across the board. Visually perfect of course, taste excellent. Nevertheless, I have a small point of criticism here: Why are there two courses of “poultry” one after the other and both with a very similar jus? I would have liked a little more ingenuity here. I found the wine accompaniment to be outstanding except for one wine. The wines went perfectly with the individual courses and were all special. Only the wine with the quail was much too strong and dominant for me and it just didn't suit my taste. But others may judge that completely differently. All in all, The Table is definitely worth a visit and we had a lovely and unforgettable evening.

Dear Mr Fehling, It was nice with you and I would like to come back because you and your team can cook - and at the highest level. We enjoyed your wonderful tasting menu and ordered it with wine accompaniment. We corrected this mistake immediately after the first wine, because what was offered in the recommendation gave the impression that this wine had to come from the cellar. Here there was the second shock. I have never seen such a wine list with so little structure and so unbalanced in a 3 star hotel. There are 8 Mersaults on the menu, of which the one I ordered was not in stock. Back to the menu. Up to the main courses (quail and then duck), the menu was absolutely top-class, but why anyone would try to cook a quail sous vide is inexplicable to me. The jus was supposed to fix it, but it only partially did. The next course had duck. The duck fillet was fried to perfection, 100 points for that!!!---and then????????--the master ran out of ideas. Again jus with side dishes. There could and should be a little more to come. It was good that there was NO bread with the whole cream! Not for this reason, but due to the relatively easy courses, one or two courses more would have been adequate for the price of Euro 375.00. Joerg Wiebe

I have been to over 40 three Michelin Street restaurants in my life, this restaurant is one of the best in my memory, the chef Kevin Fehling was a great host. A great entertainer responds to every customer and sees that there is a lot of passion and love involved. Really admirable and remarkable, especially as a culinary trip, I would do it again.

The Table is the only three-star restaurant in Hamburg. There is space for up to 22 people at the table. Nevertheless, the atmosphere was pleasantly calm. The menu costs more than 300 euros per person. For this price, guests get a varied menu, extremely attentive service and very tasty food. I found it particularly interesting to watch the team at work since the table is right in the kitchen. Unfortunately, there is no vegetarian menu, but the restaurant caters individually for intolerances and allergies. I was able to pay conveniently by credit card. American Express cards are also accepted.

Eines vorweg: Alles, was serviert worden ist, war ohne Abzüge grandios. Nun zu den Details: Die jungen Servicekräfte waren deutlich freundlicher und zugewandter als der Sommelier Herr Eitel, der sich ausschließlich um die wichtigen Stammgäste kümmerte, und als Herr Fehling, der an jenem Abend seltsam distanziert war - das kennen wir anders. Das Konzept, an einem langen geschwungenen Tisch zu sitzen, ist optisch durchaus ansprechend, kann aber zum absoluten Stimmungskiller werden, wenn man Sitznachbarn hat, die ohne Punkt und Komma mit vollem Mund (!) über ihre wichtigen Wirtschaftsprojekte reden, abfällige Kommentare zu den Speisen haben (Soll 'n Sandwich sein), das Essen nicht genießen, sondern wie gesagt beim Reden die akribisch zubereiteten Speisen in sich reinwerfen, um danach in wenig temperierter Lautstärke weiterzureden. Unserer Bitte nach anderen Sitzplätzen weit weg von diesen Personen da konnte leider nicht nachgekommen werden, da im Zwei-Schicht-Verfahren die 19 Uhr-Schicht bzw. die 20 Uhr-Schicht an Gästen bedient worden ist, fein säuberlich getrennt. So haben wir vier Stunden in höchst unangenehmer Nachbarschaft verbringen müssen. Und da angenehme Umgangsformen sowie Rücksicht nichts mit dem Einkommen zu tun haben, werden wir The Table nicht mehr aufsuchen, weil das Risiko bei 22 Sitzplätzen deutlich zu hoch ist, wieder Nachbarn zu haben, die die Einschläge nicht merken. Schade.

Beste Küche, freundlicher Service, keine abgehobene Veranstaltung. Grandioser Blick in den Anrichtebereich. Leichter Kritikpunkt: während man die letzten Gänge isst wird schon im Anrichtebereich geputzt und geschrubbt. Das lässt einen auf den letzten Metern ein wenig die Wohligkeit verlieren.

We were warmly greeted by Mr Fehling. Otherwise, the service seemed too neutral, smooth and mostly emotionally disengaged to me. But this seems to have more of a conceptual nature, which the “complaint management” also provided an indication of. When Mr Fehling, when asked about the inadequate selection of non-alcoholic drinks, simply says "I'm out of there" (probably with the sommelier in mind), it's a bit strange. A young sommelier was able/allowed (and wanted) to find an improvised solution - at least. I find it difficult to have background music in every restaurant because it will never suit everyone's taste. Of course, the playlist shouldn't repeat itself. She could perhaps stay a little more in the background (or stay away entirely). When it comes to the essential thing, the food, there is nothing to complain about from the dilettante's point of view, even the odd wow (for me, for example, the variations with goose liver, egg shakshuka or the skrei). I would like bread/butter as a reserve of satiety and for in between meals - but it's also good not to leave a restaurant feeling excessively full. The ambience is of course largely a matter of taste, as is the proverbial table with the well-intended effect of the kitchen counter. In fact, it promoted a certain amount of communication, for example in the “cross-party” discussion of sensory impressions. On the sidelines: Stacked chairs in the mezzanine area should be out of sight or hidden.

Report comes a little late, was here in May last year. I had a very nice evening here and felt very comfortable. This was not only due to the very good food but also to the very good staff. Almost invisible at the right moment and then, always very competent and present when necessary. I would like to highlight the great sommelier (who meant very well to me). You sit very comfortably on bar stools at a curved counter and watch the chefs prepare things in the show kitchen, so I would have expected more cooking and more "action". I had previously heard a lot of interviews and podcasts from the boss, where he said he was always in his restaurant, unfortunately he wasn't there, which was a shame. You should bring your time (approx. 4 hours), which is normal at this level.

Unfortunately, what remains after our visit to Kevin Fehling's The Table is a stale feeling. Unfortunately, our expectations were only met. T. fulfilled. To start with the most astonishing and then also the most annoying thing to deal with: There was nowhere near a serious, non-acoholic drink selection. In 2025 it should be clear that there can be many reasons for not wanting to drink alcohol. I would have loved to be surprised in a 3-star restaurant by what creative things are possible there. What was there: a juice accompaniment. I rejected this one - I don't like drinking juice with meals, and some reviewers had already reported on the sweet bottled juices. When I asked what else they had to offer (non-alcoholic winemakers' wines or sparkling wine, of which there are now quite exciting offerings, vert jus, whey creations, etc.), they said nothing of the sort. What remained? Cola, Sprite, tonic or non-alcoholic beer (Stauder - there really are more exciting offers!). But what really annoyed me was how my obvious dissatisfaction was handled. The older sommelier reproachfully: “We put a lot of effort into this!” Mr Fehling, looking at the sommelier: "I'm out of there." (Excuse me??!!? Where is the boss and owner ever?) Only the young, approachable sommelier tried to explain in the conversation that non-alcoholic wines and sparkling wine would not convince her. Yes, I too know how difficult these products are, but if you look around you can find really interesting variants. In addition, Cola or Sprite are certainly not convincing from a culinary point of view - but they are still on the drinks menu... Finally, the young sommelier came to our table again and offered me a kind of fruit vinegar with lemon and tonic water as a mixed drink. And what came out was a very tasty and bitter drink. It works! All in all, the entire handling of this issue was very disappointing and unprofessional. I give the complaint management a solid 6. The guests next to us heard the conversation and agreed with us, shaking their heads. So it wasn't just our perception. Well, the food was very professional and appropriate for a 3 star restaurant. Service politely distant. Unfortunately no passion or personality. Music e.g. T. uncomfortably loud. The concept behind the selection of musical numbers was not apparent. Too bad. All in all, our happy expectations for the evening were disappointed. We won't come again.

Der Service: 10 Punkte Sehr höflich, dabei zurückhaltend und sehr freundlich und aufmerksam: Das Restaurant mit einem sehr schönen lang geschwungenen Tisch mit Blick in die offene Küche, der hohen Decke, alles sehr stylisch. Das Dreisternelokal von Kevin Fehling liegt im Hamburger Hafenviertel. Konzipiert als Thekenlokal – ein für mich persönlich grundsätzlich immer überzeugendes Konzept – mit einem einzigen vorgegebenen Menü. War es vor einigen Jahren noch fast unmöglich, eine Reservierung zu sichern, hat sich die Lage mittlerweile entspannt. Grund daher, eine Reise nach Hamburg anzutreten. Um das Gesamtfazit vorwegzunehmen: von allen Gerichten inklusive Amuse Bouches konnte mich kein einziges überzeugen. Hauptgrund: die Tendenz in Richtung „international angehauchte Kompositionen“ mit fehlendem Fokus auf das Produkt. Zum Teil aus meiner Sicht auch einem Lokal dieser Größenordnung nicht ausreichende Produktqualitäten wie zB der Thunfisch. Ein paar weitere Beispiele: Tiefpunkt ein Gang mit Kabeljau (per se ein schon oft – vor allem in unseren Breitengraden - nicht sehr überzeugendes Produkt) – exotisch mexikanisch angehaucht mit überwürzter Sauce und viel zu süßen Chutney. Der rare gegarte Hummer, der im Falle einer solchen Garung sehr oft eine gummiartige Konsistenz annimmt – wie auch in diesem Fall. Der schon etwas in Richtung „Plombenzieher“ gehende (gefüllte) Zylinder beim à part Teller zum Hummer – üblicherweise der Fall, wenn der aus Isomalt gefertigten Zylinder zu lange am Pass stehen und Feuchtigkeit ziehen. Zum Teil also wirklich auch handwerkliche Schwächen. Schwierig. Weitere Kleinigkeiten – die per se noch nicht problematisch sind, aber repräsentativ für das Konzept stehen, haben für mich das Gesamterlebnis deutlich nach unten gezogen: eine für einen Dreisterner unüblich kleine Weinkarte (obwohl das für mich üblicherweise kein Problem ist). Eine etwas skurril zusammengestellte Playlist mit Stilwechseln zwischen Jazz und House Music, ohne erkennbare Linie. Die medizinisch sterile Stimmung im Lokal. Überzeugend ist das alles nicht. Insgesamt von allen deutschen Dreisternern das für mich sicherlich am wenigsten überzeugende – sowohl was Konzept als auch Küche angeht. Verglichen mit anderen, höher eingeschätzten deutschen Lokalen mit dieser Bewertung wie beispielsweise Jan Hartwig oder der ES:senz liegt eine ganze Klasse zwischen The Table letzteren. War es also die Reise nach Hamburg wert? Nein. Nächstes Mal wird es in Hamburg wieder das von mir geschätzte Haerlin werden. Für mich auch definitiv der Hauptkandidat für eine mögliche Abwertung am Dreisterne-Horizont in Deutschland.

The service was excellent and the concept of the eponymous table running across the room is extremely appealing. This means that every guest has the opportunity to sit at the chef's table and watch how the dishes are completed in the kitchen. I chose the non-alcoholic accompaniment, which consisted of various purchased juices. These were fine, but I found it disappointing that, unlike many top three-star restaurants, there were no home-made fermented juices or kombucha specifically tailored to the dishes. As for the food, it was consistently good, but I missed that certain something. Unfortunately, there was no course that really stuck in your memory or was surprising. Many of the dishes included either a hollandaise or a chutney — always with different flavors, of course, but it was very reminiscent of a modular principle. In addition, two courses served directly one behind the other were visually very similar, which reinforced this impression. This criticism may be high level, but overall it was a successful menu.

It was with a certain degree of skepticism that I embarked on the daring menu “The Gate to the World” – a composition that ranges from Shakshuka to unstuffed goose liver, neither of which are necessarily at home in my preferred world of taste. But with a few exceptions (the somewhat undercooked quail course - there could have been a little more roasting here - and a kimchi as a barely noteworthy side dish), the menu was consistently impressive. Particularly noteworthy are the surprisingly nuanced aromas of the “Indian Summer” and the intense flavor density of the bluefin tuna. The quality of the other products was in no way inferior to these - proof of the uncompromising dedication of the kitchen. Special praise also goes to the service team, especially the gentlemen sommeliers, who made the evening a real experience. Mr. Eitel shone in his role with a passion that is second to none. When he tasted a red wine, he was so enthusiastic that he poured me a sip without asking - a generous gesture that I unfortunately couldn't enjoy in a fuller glass due to my role as driver. The younger sommelier was also convincing across the board. His descriptions of the wines were so seductively precise that I found it difficult not to faint. I would like to thank the entire team for a thoroughly successful evening and a performance that will be remembered.

Wir waren bereits mehrmals bei Kevin Fehling in Hamburger The Table zu Gast. Es war jedes Mal ein absolutes Erlebnis! Ich denke, das Menü bedarf keiner weiteren Erklärung, die 3 Sterne geben ausreichend Auskunft. Hervorzuheben ist allerdings das Konzept, dass sämtliche Gäste an einem Tisch platznehmen. Trotz dessen muss allerdings gesagt werden, dass die Privatsphäre dennoch gewahrt wird. Dies unterscheidet den Besuch im The Table deutlich von anderen 3 Sternern.

Speaking from the perspective of someone who has dined at multiple 3 Michelin star restaurants, we both felt that The Table fell short in several areas. The service, in particular, was disappointing. We were initially served the wrong champagne, and the correct one only arrived 15-20 minutes later. Additionally, the restaurant did not accommodate dietary restrictions in an inclusive manner. When we provided feedback about wanting to be informed of any substitutions, the chef seemed less than receptive. For example, our beef was replaced with fish, but we would have preferred a less rare meat option. While the food itself was still excellent, for a special occasion like a birthday, I would choose a restaurant where they make you feel truly celebrated. For a meal costing over 300€ per person, it’s surprising that there wasn't even a simple gesture like a "happy birthday" acknowledgment.

Bravo absolutely top Mr Fehling. Anything other than giving this 5 stars would be disrespectful. Having been here several times now, I can now make a judgment. The food is excellent and the entire atmosphere is very calm. Every move is perfect and the staff moves very carefully and calmly in the room, which is why, in addition to the insulation elements that are often installed, a very calm and stress-free environment is created. The food is served at a single long table and, as expected, each course comes with a corresponding explanation of the course. Even if the dishes are top, they are further enhanced by the selected wines (I say intentionally not accompanied) - there is no other way to put it. Here everyone should really choose the appropriate wine accompaniment, as they are so well matched to the courses that it is a real pleasure to taste them. The only drawback I noticed was that one or two seats at the table might be a bit tight. Since I've been there three times now, I'll have to wait a while until all the dishes have been changed. Of course, everyone has to decide for themselves whether the visit is worth €600-700 per person (which is on a normal level for a restaurant of this class), at least it was that way for me. I'm already looking forward to the next encounter.

Ein Restaurant der Extraklasse, das Essen für 350 Euro für alle Sinne. Fabelhaft! Die Bedienung - teilweise - etwas zu cool und am "distanzierten Runterbeten" des Ganges. Sehr enttäuschend die Weinbegleitung für 205 (SIC!) Euro. Langweilige, ausdruckslose Weine - keine Klasse, keine besonderen Noten und Nuancen. Würde ich auf keinen Fall wieder wählen.

The excellent non-alcoholic beverage pairing deserves special mention, featuring surprising, profound, and perfectly matched flavors, each specially created for the menu. Unfortunately, this isn't yet standard practice in top-tier restaurants and should be included as information by the relevant guides (Michelin, etc.). The wine pairing was also quite good…
