Yesterday, we went to Bianc as a couple. What can I say, it was outstanding! By far, one of the best Michelin-starred restaurants. The process was smooth, and the staff was extremely friendly and competent. The food and drinks were presented very well. Flavorfully, it was an explosion on the palate. We'll definitely be back.

Ein wirklich tolles Restaurant. Wir hatten einen wirklich spannenden Abend, jeder Gang war eine echte Überraschungstüte.Es gibt natürlich eine Menükarte, aber kein Gang sah optisch so aus, wie man es erwartet hatte. Ganz tolles Konzept, alles, aber wirklich alles war sehr sehr lecker, ohne Ausnahme, wir waren begeistert. Superliebe Servicemitarbeiter, ganz lieben Dank nochmal an dieser Stelle, und vielen Dank nochmal für die vielen vielen Eiswürfel an diesem entsetzlich heißen 2.Juliabend!! Wir werden das Bianc unbedingt wieder besuchen und auch unseren Freunden weiterempfehlen. Ganz toll und eine sehr erfrischende Ausnahmeerscheinung abseits vom Mainstream , super kreativ🥰🙂👍👍👍

Meine Frau und ich waren am 27.06. im Bianc. Es war ein unvergesslicher Abend. Ein tolles und hoch engagiertes Team. Gute Laune, sehr aufmerksam. Speisen auf höchstem Niveau, schon vom Einkauf (Tränenerbsen, wo bekommt man so etwas) mit Kabeljau. Was für ein Vergnügen. Ich habe uns das wunderbare Kochbuch von Matteo geschenkt, dass er dann selbst signiert hat. Schon das Stöbern im Buch macht Freude. Wir kommen bald wieder

Una experiencia muy agradable de principio a fin, unas 4 horas. Los platos eran perfectos, sutiles y delicados. El chef confía en su idea de dejar que los ingridios hablen por sí mismos. 17 porciones y no estábamos hartos! Tuvimos una buena botella de Mersault en lugar del maridaje de vinos. Creo que fue una buena elección a un buen precio. También visitamos la cocina y vimos cómo se preparaban los platos. Si hay un pequeño problema es que hacía un poco de calor en el comedor.

Food: The food was extremely disappointing. Many courses could have been omitted. We sat there for almost four hours, and at some point, we just wanted to go home, annoyed. It simply took far too long for the food to arrive. It felt like a mass-processing operation, as if all the tables were simply being processed. The portions were also very small, so you were done in seconds. In the end, you still went home hungry and paid a lot of money. That leaves a bad taste in your mouth. Service: The service staff was too "professional" for my taste, so I simply missed the authentic/human touch. Ambience: I found the restaurant's design too sterile and functional. The only thing that stood out was the olive tree. Conclusion: For a price of at least €300 per person, I expected to at least be full and to have a nice ambiance. Unfortunately, in retrospect, it wasn't worth it.

The evening at Bianc was great. We had asked for a vegan menu and a vegetarian gluten-free menu. Both were excellent and superbly executed (2-star level). We didn't lack for anything. When you are greeted, you are encouraged to go to the kitchen pass during the evening and talk to the chefs. We did this, and everyone was very warm and friendly. It was interesting to watch the chefs at work. It was a very successful evening. We were there for almost 5 hours, and although that is a long time for dinner, we weren't bored for a moment and had a fantastic experience.

A few days before our visit, they reached out to confirm our reservation and even checked for potential food allergies. A simple gesture, but one that set the tone for the evening. Upon arrival, we were warmly welcomed and given an introduction to the restaurant’s architecture—a unique and personal touch that made us feel like more than just customers. The attention to detail continued with the food. The first bite, a delicate olive explosion paired with a homemade grissini, was a surprising and flavorful start to the meal. The dishes that followed were small, beautifully presented, and packed with flavor. Every plate was like a miniature piece of art, making it almost difficult to disturb the perfect arrangement. One small but memorable detail was the replacement of our napkins whenever we stepped away from the table—a subtle yet thoughtful act that added to the sense of refinement. The staff at Bianc were exceptional. They spoke fluent German but also had excellent English, engaging with us and answering every question with enthusiasm. Every aspect of the dining experience was carefully planned—from the shape of the plates to the precise temperature of each dish, ensuring the perfect balance of flavors alongside the thoughtfully chosen wine pairings. Restaurant Bianc is more than just a place to eat; it’s an experience where every detail is considered. If you appreciate fine dining that goes beyond just the food, this is a place worth visiting.

Ich hatte das große Vergnügen, im Bianc das 1. mal zu speisen – und war ehrlich sprachlos. Das Menü war einfach nur eine wahre Meisterleistung in jeder Hinsicht. Jedes einzelne Gericht war ein kleines Kunstwerk. Geschmacklich präzise, harmonisch – eine echte Geschmacksexplosion auf höchstem Niveau. Die Menüzusammenstellung war nicht nur kreativ, sondern auch wunderbar abgestimmt. Man spürt, dass hier mit großer Leidenschaft und großem handwerklichem Können gearbeitet wird. Der Service war herausragend: professionell, herzlich und aufmerksam, ohne dabei jemals aufdringlich zu wirken. Jeder Gang wurde mit viel Wissen und Begeisterung präsentiert – man fühlt sich vom ersten Moment an willkommen und geschätzt. Auch das Ambiente trägt seinen Teil zum Gesamterlebnis bei. Angelehnt an Appulien, modern und stilvoll noch dazu- ein Ort, an dem man sich gerne Zeit nimmt, um den Abend voll auszukosten. Da wir schon in mehreren Sterne-Restaurants gegessen haben, waren wir umso überraschter, das Matteo Ferrantino selbst beim Service und vorstellen der Gänge dabei war. Wir kommen definitiv wieder!!!

It was an all-around successful evening. The menu was fantastic overall and very intelligently presented in its sequence. It was a skillful interplay of flavor profiles, each with varying strengths and textures. The craftsmanship was consistently excellent: from perfectly emulsified sauces to molecular tricks, everything felt of the highest quality. The wine pairings were superbly selected and brought out the very best in each course. The service was friendly, precise, and attentive, albeit rather formal for our taste. We would have appreciated a bit more warmth and informality, such as Matteo's obligatory visit to each table. However, we understand that this is hardly feasible at a two-star level. The excellent value for money deserves special mention. We paid less than €340 per person: for the champagne aperitif, menu, wine pairing, and water.

I reserved a table using the app TheFork. On the day of the reservation, I wanted to cancel, but shortly after, I received a call from the restaurant informing me that if we didn't show up, we would still have to pay €100 per person. So we went, but with little enthusiasm, as it doesn't feel good to feel forced into something. We chose the "Emotion" menu. Unfortunately, I have to say that out of the many courses, I actually enjoyed maybe one or two dishes. The presentation was elaborate, but the menu didn't impress me in terms of taste – lots of decoration, little flavor. I wouldn't recommend this restaurant for a first Michelin-starred experience. The two of us paid €620 without alcohol, which I think is far too expensive for what was offered. And I've been to several Michelin-starred restaurants around the world, but never has it been so boring and disappointing in terms of taste. The service and staff were very friendly, but I come to a restaurant like this to have a special taste experience, and that's exactly what was missing here.

Unfortunately not as hoped. The welcome was great and also the first impression. Then unfortunately the tide turned, the longer we were there. The dining room is very clear and open, except for the olive tree. With around 14 tables there, the noise level got a bit annoying after a while. To understand the waiter, you have to listen carefully. The dishes are okay, but I was missing that certain something. Since I've already been to similar restaurants, I can also rate this and I'm very surprised at most of the reviews that some people didn't mind. Maybe no one dares to say anything. The time between courses is far too long, so after 4 hours I hoped it would finally be over. So next time I'll go to 'Altberaten' because I know what I'm getting. Really a shame!

Very friendly reception with steadily increasing toughness in the process. After FOUR hours, three courses of the 6-course menu were still open, so we left in frustration. The farewell was friendly. The announced contact has not yet taken place four days later. I waited extra to give the review to give myself time to get in touch. It has now expired. The food was visually very good and varied, unfortunately there was no explosion or special taste in terms of taste. Very disappointing from that point of view. The wines were very good and some special. The head was fine the next morning. Well, of course the food in a 2-star restaurant is delicious and meets all expectations. Nevertheless, next time I would rather go back to Lakeside or 100/200. At Bianc I had the historic, upscale restaurant feeling that the service was more distinguished than the guests. I also understand that it's boring to rattle off the same menu 10 times a night, but since we can read, that wouldn't have been necessary. Nevertheless, the Bianc is worth the money and if I frequented multi-star restaurants more than once a year, they would also get a second chance. Maybe they'll loosen up at some point.

That was a mega evening at Bianc! It started with the great service from Ursula, who welcomed us and let us into the parking garage. Then we went charmingly into the restaurant via the delivery entrance. The decor was warm and also seemed cozy. We were greeted by Matteo and then chose our food. Every course was a poem! The four of us ordered the 6-course menu with wine accompaniment, what an experience, the menu with 15 delicacies was incredible Delicious, the service was a plus, the wine accompaniment was excellent and the refills were friendly. With a lot of respect, we were always happy to stop by the kitchen and watch how much delicacy and concentration the dishes were prepared, for all of this we give all 4, 110 out of 100 points! It's now been a week since we ate at Bianc and not a day goes by where we keep telling each other how outstanding that evening was. We were welcomed by the incredibly friendly Ursula, who first explained to us the concept of the restaurant with the small piazza, the Italian floor and wood from Matteo Ferrantino's homeland. In short, a beautiful place to really enjoy. The drinks, I had a wine accompaniment to the menu, were absolutely reasonable in terms of price and harmonized perfectly. The sommelier clearly enjoyed her job. The food was so outstanding that we can't put it into words. For me and my companion it is currently number one among the top restaurants. All of this paired with perfect service! Of course we had to buy the cookbook Simple and Sexy, it's a lot of fun to leaf through it and makes you look forward to your next visit to Hamburg. Ursula, Matteo and team: we can hardly wait!

I've had the opportunity to visit the bianc several times, both when it had one and two stars, and was thrilled every time. The food is extremely creative and artfully prepared, and the serving is like a perfectly coordinated theater piece, with each course offering a new surprise. The interplay of dishes and flavors is fantastic. The wine recommendations – from both the previous sommelier and the current sommelier – were also excellent. The individual support in advance is particularly impressive: a completely individual menu was created for a companion with dozens of allergies and intolerances and a gluten-free, celiac disease-compliant menu was also perfectly implemented and was in no way inferior to the other menus. Matteo is a great host, the stylishly furnished restaurant with an open kitchen completes the experience. The price is high, but absolutely reasonable for the level offered. Regardless of the star rating, the perfect quality of the food and service has always impressed.

Quo vadis Bianc? Unfortunately, the last visit was a big disappointment. Gone are the amuse bouches that Matteo presented so wonderfully (he didn't appear at the table), gone is the bread aisle, gone are the premium products. The service was imprecise, once the food was served from the left, once from the right, water wasn't refilled for 30 minutes, the courses came at irregular intervals, sometimes 10, sometimes 30 minutes. Only the price remained, I left 430 euros for one person, which is almost exactly a net weekly wage in Germany (net equivalent income). From my point of view, the Bianc is no longer a two-star restaurant, but rather a solid one-star restaurant. Too bad!

Dear Bianc team, My wife and I should be able to enjoy a visit to your house this weekend. The first impression of the restaurant made our expectations rise a little higher. Absolutely impressive and harmonious interior. From the terracotta floor, the large olive tree in the middle of the room to towards the wooden ceiling.Absolutely world class.We had decided on the 6-course menu without wine accompaniment.In advance it was very good but then nothing more.The lack of highlights in the individual courses made the menu go to waste.The waiting times between each one too We found the courses (sometimes up to 30 minutes) to be too long. It felt like it was more like three stars, but objectively speaking such a rating would probably have been too harsh. However, given the category and price range, the standards are also very high, and must be very high. We chose Bianc for a double special occasion because we had a great evening there two years ago with a fantastic menu. Since then we have recommended the restaurant countless times as our absolute favorite. This hurdle was too high, which is hardly surprising. However, overall we were a bit disappointed because the menu didn't have any real highlights this time. But there were no real weaknesses either. Overall, it's definitely very good, so I don't want to give the wrong impression. Various small weaknesses in the service and the process mean that in the overall assessment our absolute top recommendation is “only” a very good restaurant, which unfortunately no longer does justice to its price at the level offered.

Unfortunately, our evening in the Bianc restaurant did not leave us with the satisfaction we had hoped for. We opted for a 6-course meal without choosing any wine accompaniment. First we chose a white wine and for the following courses a red wine. The variations of the dishes were undoubtedly creatively prepared, under the motto: "Don't rely on what your eyes see." But unfortunately some of the dishes were so salty that they were inedible for us. The staff reacted to our friendly feedback with a certain stubbornness. A short time later our table was visited by Matteo Ferrantino, who explained that Mediterranean cuisine is naturally salty. Of course, chefs often experiment with new flavors and combinations. A strong intuition for aromas, their interactions and the balance between different tastes is important for the development of fine nuances in the food - Mediterranean cuisine is no exception. We found this explanation to be weak, because the art of cooking lies in meeting the tastes of many, if not all, guests. Apparently we're not alone in our assessment after browsing through the previous reviews. Another not insignificant point was the loudness of the staff, who communicated in a way that involuntarily included the surrounding tables in the conversation. When we ordered our wine it was also noted that the white wine selected was the last bottle available, which meant that an additional order was no longer possible. When it came to red wine, we chose a product from the Rome region with a lively character. The wine reminded us of a high quality Moulin à Vent (Gamay grape) and we were curious to find out more about it. The only comment we received was, "Yes, just like a Burgundy Pinot Noir, only three times cheaper." Although we politely pointed out to him that such a comment was inappropriate, he continued to insist on his view. In this context, it seemed as if the employees were leaning their statements in a way that was detrimental to the atmosphere of the evening. All in all, we cannot recommend the Bianc restaurant and with a final bill of 975 you expect more than to be fobbed off by amateurs. Somehow it is also an expression of an undemanding and superficial zeitgeist. For the same financial framework, you can find truly appealing experiences in other restaurants not listed in the Guide Michelin group and, well fed, you can have fond memories of the evening.

The service, the ambience and the surprising interpretation of the individual courses ensured that we had a great evening. The visual, creative presentation of the courses including explanations were excellent. The accompanying wines were a real enrichment and pleasantly surprised us. All of our questions were answered confidently by the sommelier and the team. We were surprised by the elegant, yet casual atmosphere throughout the entire evening. Special highlights: A Vermut was recommended to us as an aperitif and we were absolutely impressed. An incredibly large, transparent ice cube, which only dissolves very slowly, visually enhanced the drink. The kitchen team will be involved in the evening. We were served a course at the kitchen counter and had interesting conversations with the team at the same time. A wonderful evening that thrilled us on this level.

Really top, top, top. Bianc cooks for its third star, that's how I would describe it, then the dishes and presentation are in no way inferior to Kevin Fehling's. What should be highlighted here, however, is that, unlike Mr Fehling's, the tables are much further apart and you therefore have absolute privacy, which I really appreciate. This is often not the case in other restaurants and you are almost sitting on your neighbor's lap. Thanks for that, I really appreciate it. The restaurant itself seems a little self-centered to me and everything is 100% tailored to Mr. Ferratino. The olive tree in the restaurant is even said to come from his hometown. Maybe you need a story like that in addition to the perfect food to get the third star. We definitely liked it very much. The service works perfectly, which means that everyone at the table gets their food served at the same time, and by simultaneously I mean at the same time, even without a delay of a quarter of a second. The procedure can seem a little stiff. I really liked the Iberico Secreto as a course. Sensationally prepared and super tender and buttery, simply more than PERFECT. Also worth highlighting are the transparent ice cubes, which are certainly to be expected in such an establishment, but are still worth mentioning. I like these "little things". I will definitely come by again after not being there for a while now.

Food was truly amazing, this was our second time and we decided to celebrate our 14 wedding anniversary there as we knew it would be great (based on our first experience) unfortunately we were not that lucky this time, although food was really amazing, beautiful, creative, great taste, service was not great 😵‍💫 it all started well but after a while they kind of ‘forgot’ we were there and left us unattended so we had to eat some of our dishes without nothing to pair (drink). At some point we were just waiting for someone to notice we were trying to get something to drink but just decided to ask for the check and leave, no one supported us to the door to get coats and stuff, which is common at restaurants in this level though. Shame cause food wise is really wonderful but I honestly dont feel like going back ever again.

We saved up to enjoy the visit as a mini vacation and then the opportunity finally arose. I could now rave about the culinary details, but the truly extraordinary ambience created by the team is my biggest highlight. We felt completely comfortable and welcome. The warm-hearted interaction in service and kitchen (including with each other) perfects the pleasure of creating the entire menu. By the way, the wine accompaniment also really impressed us. The culinary delights also come to guests in a unique room. I admire how, sitting at the table, you actually feel like you're having a family meal in an open piazza and at the same time an intimate dinner. Nothing is simple, everything is pure - bianc. Matteo Ferrantino's Bianc is one of my favorite restaurants in Hamburg. Why? Because no one knows how to cook light Mediterranean cuisine that essentially tastes like that of an Italian mother. On the one hand there is the lightness, then there is saltiness, acidity, sweetness, fat, umami - everything you know from Mediterranean cuisine. This is soul food, food for the soul at a star level. The portions are small and the dishes are not massive, you are full but don't feel too full. So don't be afraid of the many aisles. Service is excellent and the same applies to the wine accompaniment. Location very nice centrally in the Hafencity. Feels like sitting outside in an Italian piazza, with the Italian floor and the great olive tree in the middle. Everything was very consistent, Matteo is a great host with super positive energy. Tip: reserve in advance and ask for a place in the great open kitchen. It's great to see all these young talented chefs at work. Pro tip: go next door to "pan con tomate", also owned by Matteo. Great Mediterranean tapas, definitely try the glazed baby octopus, great wines, especially the homemade sangria is great. Perfect for afterwork, team dinner, meeting customers or friends. I send all my customers and higher management there and everyone is always super excited. Great price-performance ratio.

We were in the “bianc” for the first time in August 2021. We had never experienced what was on offer here - in a positive sense, of course - before. Once or twice a year we look for starred restaurants for special occasions that we don't know yet. So we've already eaten a bit of something at this level. On Friday, June 7th, 2024, we were in Hamburg again and really wanted to go back to the “bianc”. Of course, we had the highest expectations and secretly hoped that it would be just as good, if not better - it had received a second star in the meantime. We weren't disappointed! To put it bluntly: everything was perfect! Starting with the friendly welcome to the farewell by Matteo Ferrantino. There were three of us and we all chose the “Emotion” menu; twice with wine accompaniment and once non-alcoholic. Since we are not professional restaurant critics, I won't go into the individual menu courses here - but the conclusion is: overwhelming in all its variety of flavors. Combinations that we had never tried before – simply top notch. In fact, we couldn't find a “favorite course” as everything was simply delicious, including all of the patisserie creations. The wine pairing, presented by Vadim Kremnev, was of course perfectly matched to the menu. Including a few drops that we didn't expect. Great! We will try to buy these again. But the 0% beverage accompaniment was also excellently chosen. Unfortunately, this has still not caught on in some other star-rated restaurants and you have to make your way through the menu with mineral water or a maximum of one or two - often uninspired - non-alcoholic "drinks". As hostess, we were able to get to know Emily Fürstaller, who we immediately liked because of her unpretentious and open-minded nature. Absolutely competent and with her Austrian charm, she and her team impressed with perfection and attentiveness. She and her team didn't miss a thing - they acted like an excellently well-rehearsed orchestra. We felt extremely comfortable. A few short table discussions that went beyond the technical aspects were very amusing. About the ambience: We knew this from our previous visit - and were already impressed by the materials, colors, the beautiful floor tiles - and, last but not least, the olive tree in the middle. For us, the desired impression of an Italian piazza has been well thought out down to the last detail and succeeded. Finally: A wonderful evening that we will remember for a long time. Matteo Ferrantino and Miguel Marquez as well as the entire “bianc” team more than deserve the second star. We're actually wondering what else can be done to get the third one? But we're not professional critics ;-))) The “bianc” is one more reason for us to visit Hamburg more often. WE WILL BE BACK!

I was finally able to get to know the “Bianc” on Thursday evening. After a very friendly and warm welcome, our cloakroom was taken away and we were first introduced to the entire restaurant. A quick look into the open kitchen and then we went into the dining room, which is designed like a piazza that is intended to be reminiscent of Matteo Ferrantino's Italian homeland. Bright, open, spacious, nothing that bothers the eye. The centerpiece of this piazza is the olive tree from Matteo's parents' garden in Puglia. The dishes are a feast for the eyes. Wonderful creations, always surprising in terms of taste and true to the motto “Don’t trust your eyes”. Overall, I enjoyed a solid, creative menu and went home full but not oversaturated. Everything was perfect, both visually and culinary, corresponding to the two Guide Michelin stars, but honestly no more (which would be complaining on a high level and would not do justice to the performance of the entire team (or as Matteo says: the family)). The Bianc family in general: friendly, warm, informal, unconventional: that's how I would describe the service. During one of the Amuses Gueules we were invited into the kitchen and got to know the kitchen crew straight away. We were looked after by highly professional service staff without it ever being inconvenient. When Matteo came to our table at the end of the menu and had a long chat with us, the evening was completely perfect. The only downside: if a regular guest at Matteo's (both in the restaurant and at his cooking courses) hadn't asked if he was still coming to the table, he probably wouldn't have come to his guests for the evening. That would have been a shame and I think that if the patron is in the house (whether in the kitchen or in the office), he should show himself briefly. Somehow you come to the restaurant because of the personalities and not just because of the delicacies. :-) All in all, a fantastic evening that calls for a repeat.

Don't get me wrong, the food was excellent. However my main reason for giving 1 star is because they ensured all allergens would be catered for. I am allergic to nuts and it was made clear that non of my food would have any nuts in it. The waitress then questioned why I was not eating one of the pistachio chocolates. I said it was because i'm allergic to nuts. and she proceeded to explain to me that pistachios are "technically" a seed and not a nut and therefore if i am allergic to nuts i can eat pistachios without dying. I tried to explain to her that i was also allergic to pistachios and she basically argued with me. My party paid a whopping amount of money and i don't expect to be killed or argued with at such a highly rated restaurant. NOT ALLERGEN FRIENDLY

Difficult to say. It is true that the restaurant is an upscale one. You can enjoy Chef's philosophy with good company. Wine is also good according to my group But for me, who didn't order wine pairing, it was too long - 4 hours.. And some plates were too salty or only focused on surprise and creativity, not taste. Compared to the cost, the portion wasn't enough either. So far I have had experience from other Michelin restaurants that made me feel at least 80% full. Here 40%... What a shame. Hat leider etwas verloren. Früher stand das bianc für eine Art Leichtigkeit und Verspieltheit. Es war mir von mehreren Besuchen mit den kleinen verspielten Tellern auf denen die Grüße aus der Küche serviert wurden in sehr guter Erinnerung. Leider ist das bei unserem gestrigen Besuch nicht mehr so gewesen. Die Grüße waren immer noch sehr gut, aber durch die neue Art der Präsentation hat es ehr die Leichtigkeit verloren. Auch das wir dann für einen weiteren Gruß vom Tisch zur Küche gebracht wurden, empfand ich ehr als kleine Unterbrechung, Störung, als eine gute Art der Präsentation. Die einzelnen Gänge waren von herausragend bis - okk war ganz nett. Was völlig abstürzte war das Hauptgericht, was aus einem kleinen Stück Lamm und einer (1) Stange grünen, kalten Spargel bestand. Der Spargel hat nach Spargel geschmackt nur eben leider kalt, mehr nicht. Das Lamm hatte leider eine sehr zähe Textur und war eben seeehr klein. Dafür war das Dessert wieder ein Highlight, so wie die Pralinen am Ende. Alles in Allem war es gut, aber in meinen Augen als Laie und einfacher Gast keine 2 Sterne, ehr dann doch wieder 1 Stern.

Bianc offers an exceptional combination of great food, a thoughtful ambience and outstanding service. We chose the meat-free and the meat-containing menu and were extremely impressed with both. Even the greetings from the kitchen are technically perfect, and in the starters unusual flavors complement each other in a truly fascinating way. The bread is served with an incredibly delicious butter, pushed to such an extreme by orange flavors that you have to be careful not to eat too much here. Because the following courses are all carefully thought out so that you definitely don't get too full. Special mention: the desserts, which are also prepared with high precision and beautifully. Big plus: The food is consistently light and fresh, no heaviness, everything seems wonderfully harmonious. If you really want to complain about something, it's that the meat menu could do with a bit more meat flavors. A good fillet would have been good for the menu. Someone really thought carefully about the ambience. The dining area is grouped around an Italian olive tree, with tables arranged in curved arcs around the tree. It looks like you're sitting in a marketplace. The lighting design is extremely clever: spot lighting directs the focus to your own table and separates it from the neighboring tables. Very subtle and elegant. The cooking area is separated from the dining area by a glass pane. If you want, you can watch the food being prepared. All in all, the atmosphere is wonderfully relaxing, calm and elegant. The best thing, however, is the service, which goes beyond a 2-star level. The sommeliers are not only knowledgeable, but also very pleasantly friendly and approachable. The service was extremely attentive and professional in the best sense of the word. You never have the feeling that something could go wrong here. Everyone knows what everyone else is doing, as if the processes had been ingrained for many years. A perfect team. If you want to spend a truly relaxing evening with first-class food and perfect service, this is the right place for you. A noble Italian in the best sense of the word. Unpretentious, professional and really tasty.

Bianc masterfully balances dim ambiance lighting with spotlighted tables, ensuring the focus remains on the culinary art, your company, and the detailed menu in front of you. This thoughtful lighting design, reminiscent of photography principles, creates an intimate atmosphere within an open setting and beautifully highlights the dishes as if they were performing on stage. The kitchen, visible behind large glass panes, resembles a culinary theater, with bright lights and a tranquil environment that allows guests to witness the meticulous preparation of their meals without the typical kitchen clamor. Opting for the "Emotion" prix fixe menu, I embarked on a 20-course journey (13, if you count the first seven as part of the amuse-bouche) that was nothing short of a culinary masterpiece, with each dish artfully presented and paired with meticulously selected wines, predominantly from Germany. The à la carte menu offers a robust wine selection, presented in a sophisticated box for guests to explore and choose from. My "Emotion" experience began with an array of creatively served amuse-bouches and continued through a main menu featuring dishes like tuna with anchovy and blood orange, lobster with carrot and lemon, and a dessert that was the epitome of a perfect summer day on a plate. Each course was accompanied by a harmonious wine pairing that enhanced the flavors of the dishes. The level of creativity, attention to detail, and passion at Bianc is palpable, from the food and service to the ambiance. Chef Matteo's personal table visits to describe each dish and engage with guests underscore the exceptional dining experience Bianc offers. It's not just a meal; it's a journey that excites the senses and leaves a lasting impression. Bianc stands out as a world-class destination for those who appreciate the art of fine dining. On a side-note, I was absolutely certain after my visit that one day, they would earn a Michelin Star. Sure enough they did...not one, but two.

The boss was not present. Can you feel that? What would have been different? About the food: The presentation of the dishes is extremely convincing. The creativity is definitely visually redeemed. I really liked the “reconstructed olive”. However, there were some compromises when it came to the flavors of the other courses. The tartare at the start of the 2nd course was very on the salty side, too much for my taste. In contrast, the turbot at the end of aisle 4 was on the “mild” side. It was not possible to tell from the taste that it was fish. Everything else was okay, but not something that really excited me. Overall, the portions were so economical that I somehow stayed hungry. Upon request, more meat was added (Iberico Presa). Overall, the wine pairing was very successful. In my opinion, the service seemed extremely effortless, but it lacked the quality and sovereignty that I expect in this environment. The information accompanying the meal was very routine and, above all, quickly "voice-streamed" that I had to ask several times because it happened so quickly. You can stage it like this as a “brand”; I wasn't convinced. Somehow semi, you can forgive me the term. My feeling about the evening in terms of food, atmosphere and service remains ambivalent. I just lacked heart(kindness).

The bianc deserves six stars for the ambience and the incredibly great service alone. Then there was the great food. You could hardly be welcomed more warmly and guided through the evening. That alone was an experience. The food was wonderful for me, despite seafood - which I don't really like. We had also asked in advance for another course. This wish was fulfilled and it was perfect! Thanks to the entire team for this incredibly wonderful evening! A special thank you goes to the great sommelier, who treated us to delicious drinks even without wine. A liaison with a relaxed atmosphere, every detail on the plate was a feast for the eyes as well as a taste explosion. And every porcelain is an eye-catcher. The service was great; precise and conveyed something casual. Very pleasant. The work in the kitchen is also a feast for the eyes, watching how precision work was carried out with calmness and tweezers. Unfortunately, we didn't choose any wine to accompany the meal because we were in the middle of alcohol Lent. Service and ambience are good. Unfortunately, Mr. Ferrantino was not present in mid-November, but, as we were told, in Dubai. My partner had already been to bianc a year earlier and was able to report that the variety of the individual courses and their components was decreasing. Unfortunately, the evening was neither a culinary enrichment nor a surprise for us. We won't be coming back.

Zum runden Geburtstag solltes es etwas besonderes sein und so haben wir uns im Bianc verwöhnen lassen, denn ein Geschäftsgebaren mit Vorkasse selbst beim freiwilligen Trinkgeld wie im 100/200 gedenke ich nicht zu unterstützen. Also der inzwischen vierte Besuch bei Matteo Ferrantino (der es sich wieder nicht nehmen ließ bei den Gästen sich nach dem Wohlergehen zu erkundigen - sehr sympathisch) war wieder ein besonderes Erlebnis. Ein sympathischer Service mit perfekter Kulinarik hat uns alle begeistert. Wiederholung sehr wahrscheinlich!

Matteo Ferrantino and his team gave us a wonderful evening. A culinary delight that we are still dreaming about 2 weeks later. The “Emotion” menu really satisfied us and we are “good eaters”. The wine accompaniment was an additional pleasure, although the non-alcoholic beverage accompaniment also amazed us. The ambience with the lighting concept makes you immediately relax and the open kitchen didn't just catch our attention. A big compliment goes to the service team! Perfection and warmth perfectly combined! In short…. We from Lower Bavaria felt very comfortable at Bianc and will visit this great restaurant again! The 3rd star will certainly not be long in coming!

Wine pairing was strong, yet food came sometimes later and we had to wait, this way I felt hungry. It is as simple as that. You want to be at least nourished for this price, not just drunk. I must admit that there was no dish that I will truly remember. Kitchen itself is gorgeous and an atmosphere is indeed Michelin. It was just lacking smth I will truly remember in terms of food.

I agree with the previous reviewers' assessments regarding the food, it was exquisite. UNFORTUNATELY, as a wheelchair user, I have to point out something that completely spoiled the evening at bianc for me and my companion: When I made my reservation by phone, I specifically stated that I was a wheelchair user and asked whether the restaurant had a disabled toilet. Yes, of course that is the case, I was answered. So, with peace of mind, I made a reservation. When I looked for the toilet in question, I couldn't find it in the restaurant. When I asked, the receptionist told me that they had a disabled toilet, but it was in another building... In disbelief, I asked if I actually had to leave the building and dress accordingly - it was raining heavily and had some strong winds. I was answered that the path was only about 30 m to the building opposite. So I had to leave the restaurant during the meal, was accompanied by the receptionist to the office building opposite (luckily the path was covered), the lady opened the huge glass doors using a code and then led me to a door for which she gave me the key handed over. Behind the door there was actually a disabled toilet, combined with a storage room for cleaning supplies and vacuum cleaners. Back in the restaurant, whose door was held open for me by a friendly passer-by, I tried, with little success, to suppress my disappointment and anger. The evening was ruined for us and after dessert and espresso we left immediately. Once again to clarify: I don't want to create pity, ridicule or what-about-ism here. Rather, I would like to make other wheelchair users aware of the problem and warn them. I am outraged that I was given the wrong answer when I specifically asked about it over the phone, because contrary to this statement, the restaurant does NOT have a disabled toilet. Across the courtyard, out of the building, accompanied by a key "keeper" means something completely different to me... pathetic. Disappointed: DoeSte

After an initially somewhat haseatically stiff reception, we spent a wonderful evening saying goodbye to a colleague. The service became increasingly personal while remaining professional. The dishes were excellent and imaginatively presented and offered unexpected, wonderful taste experiences in every course. Highly recommended, priced in the upper range but appropriate for the quality.

2 stars Michelin restaurant didn’t disappoint. Great dining experience. Service was of high level. Good wine recommendations to dishes. Pauses between courses were on point. The interior is nice. I like the fact that chef designed restaurant himself and brought a tree from his parents’ house, as well as imported tiles from Italy.

We decided on the restaurant at relatively short notice and reserved a table on the terrace. When we made the reservation, we were actively asked about any food intolerances. We received a very friendly welcome and were shown to our table. A personalized envelope was waiting for us, containing our menu selection. One menu featured fish and meat, the other vegetarian. Both had several courses, and two more could be ordered. Each course was described in more detail on a separate page. There is a wine recommendation for each course. However, we opted for the non-alcoholic beverage pairing. The individual courses mostly had a theme, such as peas, pumpkin, mushrooms, pike-perch, venison, or blueberries. Each theme was prepared in many surprising variations, perfectly matched, and simply a culinary delight with positive flavor surprises. Sometimes hot and cold dishes were even combined. The drinks paired perfectly with each course and were equally varied. The entire composition was simply a poem and without exception delicious! Special requests: I personally found two ingredients on the menu that I personally don't like. We had already mentioned one of the unpopular ingredients when making our reservation, and I mentioned the second ingredient (cheese) two courses before it would have been served in one dish. In both cases, my course was adjusted accordingly, so the taste experience wasn't diminished. Another very positive thing I noticed: Many of the ingredients are made in-house. I noticed this especially with the drinks. I usually find sodas and the like far too sweet. The ginger, on the other hand, was simply perfect. This restaurant seems to use sugar as a flavor enhancer wonderfully sparingly. I'm thrilled!
