Masa Japanese Cuisine in Frankfurt am Main

We went to Masa for the first time for our anniversary and had a wonderful evening there. From the excellent service to the extremely delicious Japanese cuisine. The service was very friendly, accommodating and immediately available for every request. And all of this without being intrusive. The food was of course the highlight and we were able to enjoy our omakase menu for 4 hours in a noble ambience. Of course, the fact that we were able to watch the food being prepared from our seat at the counter made the evening perfect. The matching wine pairing was fantastic and absolutely suited my taste. Although it was a bit much for me as I hardly drink alcohol. The wine sommelier, as well as everyone else, do their job from the heart and you should feel that in every interaction. The ambience was simple and elegant and, despite the full cast, it was never too loud. It was just a little too cold for our taste, but that's a personal interpretation. In summary, I give 5 stars for our stay at this restaurant. A restaurant that takes all the senses on a journey through Japanese cuisine. We can wholeheartedly recommend Masa to anyone who values ​​good food.

Today we visited Masa Japanese Cuisine in Frankfurt for the second time. We were once again impressed by the outstanding quality of the food and the excellent service. Our photos show the entire menu - an experience that is worth every visit. We are already looking forward to the new menu in February!

I was so impressed with the food when I visited a few years ago that I made a reservation for my mom's birthday, but I was so disappointed that I couldn't help but write a review. First, the sauce was too salty and looked fancy, but the ingredients overlapped too much, making it monotonous. Those were ingredients you would expect from a Japanese restaurant, but it was a shame that they were used so much. First of all, almost every menu had 3 or more courses, including tempura and dessert, and although the yuzu and shiso leaves were in different shapes, they kept coming out as foam and garnish, so many of the dishes felt similar. The ingredients were fresh and the food was great, but overall it didn't live up to expectations. The dessert in particular was very disappointing. The yuzu basil sherbet was delicious, but I think the combination of the panna cotta and cubed pineapple underneath, along with the chocolate cookies, was a sub-par dessert that didn't live up to its reputation. Maybe I had high expectations because I enjoyed the dessert so much the last time I came here. Second, the service staff were courteous but did not provide anything other than a mechanical explanation of the food. One of the three employees could not speak German except for ingredients, and I had to concentrate to understand the other employees' explanations because the surroundings were noisy. And the chef saw me when I went to the bathroom, but didn't say hello, and the customer sitting at the bar saw me off at the door on his way out. ha ha ha Third, we sat in a space where we couldn't see the bar, and a total of 14 people could sit there: 6, 4, 2, and 2. The table arrangement was so narrow that you could hear people talking at the table next to them. I thought I was in the same group as the table next to me. There was a feeling of anticipation while waiting for the next menu, but I could already see everything coming next to me, so that wasn't great either. You can't see sushi being made in a small space reminiscent of a warehouse, and since there's nothing worth mentioning as interior design, there's nothing to see, so it's boring to just wait for food. It may seem fresh because the ingredients are unfamiliar to German people, but the food definitely needs to be improved. We paid around 600€ for 3 people and I think there were plenty of other options to have a great birthday. I don't think I'll ever visit again.

Our second visit to Masa was once again an absolute culinary spectacle! The dishes were perfectly balanced and of the highest quality, complemented by truly exzellent service. This time, we chose the extended menu with Ozaki Wagyu sirloin and eel, paired with delicious wines – highly recommended! A special tip: sit at the bar to watch the masters as they craft each dish into a true work of art. A must for lovers of Japanese cuisine.

Der Besuch im Masa war ein Erlebnis. Die Räumlichkeiten sind spartanisch eingerichtet und entsprechen in ihrem reduzierten Stil der japanischen Kultur. Ganz im Kontrast hierzu überzeugt jeder einzelne Gang in seiner Präsentation durch Schönheit und Kreativität und führt immer wieder zu Geschmacksexplosionen. Die Zutaten sind von höchster Qualität und bewirken, dass selbst "einfache" Gänge wie Sashimi oder Sushi anders und besser als bei anderen japanischen Restaurants schmecken. Der Service war freundlich und aufmerksam und gab zu jedem Gang ausführliche Erklärungen. Kein Wunder, dass das Masa seit 2023 einen Michelin Stern hat. Wir kommen gerne wieder.

Unfortunately a huge disappointment today. Last time we had great service and great food. Unfortunately today we were seated in the last seats at the counter without warning. In puristischem Ambiente bekommt man in diesem kleinen Restaurant einen umfangreichen Ausschnitt japanischer Esskultur geboten. Die Qualität der Zutaten, die Zubereitung und die Präsentation der Speisen sind absolute Spitzenklasse. Ebenso das hervorragende Service-Team. Menü und Wein-/Sake-Begleitung ergänzen sich wunderbar. Spezielle Erwähnung verdienen aus meiner Sicht die Vorspeisenplatte, die Präsentation der Garnelensuppe, der Adlerfisch-Gang und das süße Finale, in meinen Augen eine süße Fanfare, grandios. Freund*innen der japanischen Küche, aber auch Menschen, die einen Ausbruch aus der französisch dominierten Spitzengastronomie suchen, sind hier genau richtig!

Unglaubliche Vielfalt der Gerichte. Alles super und aufwendig angerichtet- das Auge isst mit, und wie! Mehr feine und zurückhaltende Aromen als Geschmacksexplosonen. Lediglich das Wagyu (55€ Aufpreis) war eine Enttäuschung. Sehr gute Auswahl bei den offenen Weinen. Auf den Plätzen am Tresen kann man bei der Tellerdekoration zusehen. Toll!

Es gab zu viele überlappende Zutaten in jedem Gang, sodass sich viele Gänge ähnlich anfühlten. Insbesondere die Qualität der Desserts war im Vergleich zum Preis und dem Ruf des Restaurants lächerlich niedrig. Sofern Sie sich nicht im Tecke-Raum befinden, erinnert das Innere des separaten Raums an ein Lagerhaus. Ich kam mit schönen Erinnerungen an die Zeit vor ein paar Jahren zurück, aber es entsprach nicht meinen Erwartungen und ich denke, es wäre viel besser gewesen, wenn ich ein anderes Restaurant ausprobiert hätte.

Ambiance 4 Service 5+ Food and Drink 5+ In a purist atmosphere, this small restaurant offers an extensive selection of Japanese food culture. The quality of the ingredients, the preparation and the presentation of the dishes are absolutely top class. Likewise the excellent service team. The menu and wine/sake accompaniment complement each other wonderfully. In my opinion, the appetizer platter, the presentation of the shrimp soup, the eagle fish course and the sweet finale, in my opinion a sweet fanfare, deserve special mention. Fans of Japanese cuisine, but also people who are looking for a break from the French-dominated top gastronomy, have come to the right place!

Probably my favourite Japanese restaurant in Frankfurt now, definitely deserve the Michelin star. We had the 9 course Omakase menu, the ingredients are super fresh and definitely worth every penny! Service is professional and polite (just like in Japan) and the aperitif we had was also mind blowing (matcha sake aperitif). We sat at the counter before the chef’s cooking bench so we were able to observe all the detailed cooking and cutting (which itself was an art and performance!)

Update von heute: leider beim zweiten Mal negativ überrascht worden mit einem Tisch am Tresen. Dazu die Belehrung, dass ich es ja bei der Inline-Reservierung anders hätte schreiben können. Fakt: habe einen Tisch bestellt; kein Tresen; Abend gelaufen. Hilfe NULL. Werde es gerne wieder versuchen. Aber so war der Service leider 0 von 5.

Wieder ein besonderes Erlebnis freue mich schon auf das nächste Menü im September

Eat: By far the best Japanese food I have ever eaten. You get some sushi and sashimi but the dishes are not based on sushi! It's actually almost just other dishes that I hadn't tried before. Wagyu beef with a sauce and Japanese ingredients. Basically everything comes from Japan, which definitely makes the experience very individual. If you want to try star cuisine for the first time, you should definitely come here. Price: The most expensive thing I've ever paid. The omakase menu costs €273 + €55 if you take the Wagyu instead of the flank steak. Included in the price above is €88 for the wine accompaniment. So this must be a very special occasion if you pay €328 per person for food here. But you also sit there for 4 hours. There were seven of us and we had a lot of fun. Ambience: So the store doesn't look nice at all. Very bad because it is very small, very narrow and more reminiscent of a storage room. So the owner actually has to do something because it doesn't do justice to the food and the reputation at all. Service: The service is great, but is severely hindered by the small space. I had already ordered the menu beforehand and told who had which allergies and what we wanted to eat, but no one was aware of it there. The tables are too small and the service has difficulty placing everything well. You constantly have to move around to make room. In summary: Very expensive, great experience, very small and not very inviting, but you should definitely do it. Definitely worth it, but it should be a good occasion!

Until I read an article that Masa got a Michelin star, I didn't even know it existed, although I could occasionally get Frankfurt specialties across the street. Of course, Masa Japanese Cuisine is not a restaurant you go to every day. It should be a special day. And the time had come, my birthday was approaching and I wanted to have a special evening and reserved a table for two. On March 13th at 8 p.m. the time had come. From the outside it seems so inconspicuous and inside everything is reduced to the bare essentials, no frills. We decided on the menu with wine accompaniment. The service is very attentive and always explained exactly what each dish was. Then the menu started and it is indescribable. You get one taste explosion after another on your palate. It's unimaginable that you can get so much flavor in one bite. In the end I can't say which one I liked or tasted the best, EVERYTHING was great. The star is well deserved and the price for the menu is very reasonable. If you expect a normal sushi restaurant, you're in the wrong place here, but if you value taste and sensual food, you'll have an unforgettable evening. Many thanks to the entire Masa team

Masa is the best restaurant in Frankfurt. And definitely underrated with a Michelin star. What Masaru Oae conjures up on the various plates, bowls and platters is absolutely unique, not only in terms of technical perfection, but also in terms of the creative ideas and quality of the ingredients. Each individual course on the menu is a small work of art in itself. And not just culinary, but also visually. The appetizer platter presents the current flavors of the season like a painting, the fish course is always full of color and aromatic aesthetics, the meat course not only culminates in the sequence of flavors, but also sometimes tells little stories, with mushrooms like little men next to crispy "rocks" in a "forest floor " made of matcha green. And while the work of art appetizer plates, the magnificent soups, the perfect sashimi are already out of competition in each of Masa's menus, the beginning and end of the meal order in particular are worth mentioning in their own right. The greetings from the kitchen have such sophistication that they alone present a world of aromas that goes far beyond the announcement of the upcoming dishes. Every time, the dessert takes up simple sweet ideas so cleverly that even dessert skeptics won't be able to avoid completely eating the dessert. How often even first-class menus are destroyed when it comes to dessert - either because the kitchen is so concerned with borderline flavors that it goes completely overboard. Or because you unimaginatively slam down an ice cream. Not so with Masaru Oae. Here, Japanese precision is carried through to the end. In a consequence that is second to none. Practically every time you come to this restaurant you will find culinary delights leaving memories that resonate. This is what you expect from a Michelin-starred restaurant: more than just good food. This also applies to the service - wonderfully attentive, but not intrusive. The sommelier Shota Akatsuka is extremely friendly and at the same time so professionally engaging that you always feel confident with his recommendations. He is the congenial partner of Masaru Oae and complements its top class with absolutely perfect service - and masterful knowledge of sake. Tip: Rely on his sake recommendations for the courses. Nowhere else will you have the opportunity to enjoy a Japanese star menu with perfect sake accompaniment. The dishes are explained calmly and knowledgeably. That is also necessary. The sophistication of the compositions can only be imagined visually. From the outside, the restaurant is perfectly camouflaged. Nobody would suspect such a culinary paradise next to a “Binding | Japanese Restaurant” sign. The interior is Japanese purist. Perfect for concentrating on the flavors. The cooking here takes place with a level of precision that is unrivaled in Frankfurt. In short: If you want to experience how top-class (Japanese) cuisine is celebrated, you will find it here. You will leave the restaurant knowing that you have eaten something that you will remember for some time to come.

We went to Masa for the first time yesterday and were thoroughly impressed. The food and drinks were excellent, the service was excellent. We had the 9-course menu with Wagyu beef, which was also a real highlight. I have never eaten beef as tender as I did that evening. Otherwise, the courses were convincing with a lot of creativity and love in the preparation (we were able to watch how the food was prepared at the counter). The individual flavors and ingredients were perfectly coordinated. We'll definitely be happy to come back :) Edit: One star deducted due to massive price increase. Instead of 9 courses there are only 8, but instead of 149€ it is now 185€. Wagyu 55€ instead of 45€.

An amazing restaurant and experience. The only two points where I was not 100% satisfied with was: (i) limited interaction with the chef (esp. compared to the three other top-tier Japanese restaurants in Frankfurt); and (ii) the fact that they do not offer a pure sake pairing. I am looking forward to my next visit. P.S. point (i) has been better during my follow-up visits.

great Japanese fine dining experience. Very nice menu, liked everything we got. I especially enjoyed the creativity to make the sashimi stand out, the superb fish dish, and the nigiris. You can add wagyu beef to the menu. It isn't cheap, but the quality is outstanding. Nice attentive service. Great environment over all. Totally worthy of its star and one of the best Japanese dining experiences I've had in Germany

Es war rundrum, ein hervorragendes Erlebnis. Japanische Kochkunst auf höchstem Niveau und auch für das Auge ist gesorgt, wunderbar angerichtet und extrem lecker. Dazu dann noch ein unaufdringlicher und stets freundlicher Service. Auch die Weinbegleitung ist sehr zu empfehlen. Es kommen auch zwei sehr gute Sake darin vor. Und alles wird prima erklärt.

Absolut empfehlenswert. Die Sake-/Weinbegleitung ist bestens abgestimmt auf das hervorragende Menü.

Eine Geschmacksexplosion nach der nächsten, dazu eine überaus stimmige Wein- und Sakebegleitung. Optisch auch großes Kino, zumindest auf dem Teller. Eine deutsche Kommode in Eiche rustikal mit quietschorangenen Fliesen als Abdeckung die ganze Zeit vor Augen zu haben, passt nicht so ganz zum gehobenen Anspruch. Aber das ist Meckern auf sehr hohem Niveau.

The waitress greeted us warmly and led us to our table. Our jackets were received with care, which left a positive first impression. Service was attentive and unobtrusive throughout the evening. Empty glasses were promptly refilled and the staff were always on hand without being overwhelming. Eat: The highlight of the evening was undoubtedly the culinary offerings. We had the pleasure of enjoying a select menu of eight or nine courses, with each course offering an explosion of flavor. The variety and creativity of the dishes were impressive. Each course was carefully selected and presented, reflecting the chef's fine artistry. Special praise also goes to the Saa wine, which harmonized perfectly with the food. The atmosphere: The Masa restaurant offers a pleasant and welcoming atmosphere. Despite the lively exchange at the table, we were not disturbed by loud music or other guests. The acoustics of the room allowed for entertaining conversation, while the lighting was perfectly balanced - not too dark, but not too bright either. The ambience of the restaurant, which is rather small and intimate, with a maximum of 20-25 seats, contributes significantly to the overall experience. General impression: As a long-time resident of Frankfurt and connoisseur of Japanese cuisine, I was deeply impressed by the quality and standard of the Masa restaurant. The combination of excellent service, exceptional cuisine and a warm atmosphere makes the restaurant an absolute recommendation. The fact that I have only now discovered this gem surprises me and I am grateful for my friend's invitation. It's a testament to the passion and commitment of the entire team and I would highly recommend a visit here.

Das kulinarische Erlebnis im Masa ist ausgezeichnet. Jedoch empfanden wir die Platzierung unseres Tisches als ungünstig, da die häufige Bewegung des Servicepersonals hinter uns für eine gewisse Unruhe sorgte. Des Weiteren hätte ich mir einen intensiveren Austausch mit dem Küchenchef gewünscht, insbesondere da dieser die Speisen direkt vor den Gästen zubereitet. Bedauerlicherweise fand jedoch keinerlei Interaktion statt.
