The Heinrichs restaurant in Heringsdorf offers fine cuisine and places particular emphasis on regional ingredients such as herbs from its own garden and game from its own hunt. It was even awarded a toque in Gault Millau. Unfortunately, my visit did not quite live up to these high expectations. Experience with the courts: • Truffle tagliatelle: The pasta was clearly undercooked and was more like parpadelle than tagliatelle. The truffle flavor was barely noticeable and the temperature of the dish was disappointing, the plate was warmer than the food itself. • Veal fillet: Although the meat was cooked perfectly thanks to the sous vide cooking, it still seemed surprisingly dry. The jus was too thin and not cooked down enough. The decoration, a single baked cherry tomato, was present uniformly on all plates, which seemed a little unimaginative. • Corn-fed chicken breast: Solid, but without outstanding accents. • Salt was noticeably missing in all dishes. In advance: The offer of an olive and thin slices of baguette (obviously from the frozen range) as a greeting from the kitchen was disappointing and does not do justice to the upscale price category of the house (31-50 euros per person). Overall, the dishes fell far short of the standards of excellent cuisine. Only the sous vide cooking technique showed craftsmanship, but the potential was not used due to details such as a lack of seasoning, insufficient sauce consistency and a lack of variety in presentation. Ambiance and service: The restaurant offers a stylish atmosphere with a terrace and good views of the surrounding area. The service was okay, but could not compensate for the weaknesses of the kitchen. Conclusion: Heinrichs has a great foundation through its philosophy of regionality and freshness, but is currently disappointing in its implementation. For the higher price range, there is still a lot of room for improvement, especially in terms of taste and details of preparation
