The restaurant has an upscale ambiance. I wasn't there as a guest, but was looking for a part-time job for evenings and weekends. The chef was very friendly and accommodating. The dishes I saw all looked very appetizing.

I recently visited the Wolfshöhle in Freiburg and had a thoroughly enjoyable evening. As soon as I entered, I was impressed by the elegant ambiance on Konviktstrasse. It's stylish yet unfussy, just the right setting for a special occasion. The service was attentive, friendly, and professional, without being intrusive. The menu was a true experience. I particularly remember the intense sauces and the perfectly matched courses, where the quality of the ingredients was immediately apparent. The fish courses were outstanding, and the dessert also provided a fine conclusion. You can see the precision craftsmanship and passion in the kitchen in every detail. I did notice a slight wait between courses, but it didn't really matter because the evening was overall very harmonious. I would have liked a bit more variety in the wine selection, but the selected wines complemented the menu well. The Wolfshöhle is priced at the higher end. This is absolutely justified for the quality offered. For me, it was a culinary highlight in Freiburg, which I can always recommend for special occasions.

We celebrated my birthday at the Wolfshöhle. The food was absolutely fantastic. The culinary delights were outstanding. The goose liver cream with blueberries, in particular, completely blew us away. The actual menu was equally impressive. Even if some of the ingredients in Michelin-starred restaurants may seem off-putting to some (probably many) people, I can only recommend giving this taste experience a try and getting involved. We tried veal sweetbreads for the first time. Even if you're initially skeptical after Googling what they actually are... It was incredibly delicious and definitely the highlight of the evening. Special thanks go to the fantastic service team at the Wolfshöhle, who rounded off the evening with their relaxed and informal atmosphere.

Diesmal bestellten wir das Mai-Menü (ohne Käse) und die Bresse-Taube. Mit den Grüßen aus der Küche erlebten wir einen genußvollen Abend, auch aufgrund des hervorragenden Services. Dass die Taube zunächst zu blutig serviert war, wurde umgehend geändert, nicht ganz gefiel dabei die Zwiebelzutat; der zarte Maibock konnte dafür besonders punkten Insgesamt wieder ein gelungener Abend.

We booked the Adler & Wolf package. We had a very good menu at the Black Eagle. But here, they went one step further. Not only with the food, but also with the service. We were treated to a fantastic menu with wine pairings. The service was unobtrusive but very friendly and attentive. The wines were presented significantly better. Another very positive thing we noticed was that there was no foie gras or frog legs. Only one criticism: The outdoor seating and tables are simply awful. When we arrived, we were initially shocked. But the ambiance inside was, thankfully, tasteful, and we felt very comfortable.

As a vegetarian, I've rarely had such a well-seasoned and wonderfully spiced meal. The flavors of the basic ingredients harmonize wonderfully with the combined spices. There's a vegetarian menu, which I wasn't aware of before. Just ask! The wine list is fantastic. Such great wines by the glass are rare, and the bottles and accompanying wines are expertly selected. The service staff are extremely friendly and always on hand with advice and expertise. Thank you for a thoroughly enjoyable evening. 😍

Unser Stammlokal war die Wolfshöhle bisher nicht. Aber nach vier Jahren Martin Fauster stand unser dritter Besuch an, nachdem wir sowohl die Küche der Ehepaare Inge und Caspare Gallina wie auch Manuela und Sascha Weiss genossen hatten. Das Interieur der Gaststätte hat sich nicht verändert. Als Neuheit steht der Name "Martin Fauster" groß vor dem Namen "Wolfshöhle", und beim Gehen wurde uns ein besonderer Gruß von Martin Fauster nachgerufen. Das Personal bedient korrekt. Vermutlich auf Grund der doch recht hohen Preise für Freiburg von mindestens EUR 155 für ein 5-Gang-Menü bewegt sich die Kundschaft nach unserem Eindruck an diesem Abend Richtung Kurzzeittouristen und weg von Einheimischen. Die Speisekarte war auf den ersten Blick vielversprechend. Die gewählten Fischgerichte -Seezunge und Wolfsbarsch- führten in der Nacht jedoch zu nicht unerheblichen Durchfall und der empfohlene Wein aus dem Burgenland war nach unserem Zustand am nächsten Morgen mit 14% Alkohol zu heftig. I love Germans for their perfectionism, purity and simplicity. Their attention to detail, organization and discipline is commendable. I am impressed with both the restaurant and the service. Recently I noticed that many chefs pay more attention to preparing appetizers than main courses. Here, I had the impression it was the other way around. The appetizers were delicious but uncomplicated and simple. However, the main course was the star of the evening, which I really liked. Amazing turbot! Honestly, I can't remember turbot being better than this one. I'm glad it's included in the menu, because this particular fish is rarely seen. The entire menu included interesting suggestions for main courses, appetizers and desserts. The staff willingly and tirelessly talked about all the dishes. Their kindness, tact and culture remain in my memory. It is a pleasure to return to such places. Finally, a handshake with a talented, yet balanced and modest man, such as the chef. Very elegant behavior, worthy of an elegant restaurant. I encourage everyone to visit.

Das Restaurant bietet exzellente Qualität, sei es im Menu oder a la carte. Es gab hier vereinzelt Kritik an der Dauer, die ich nicht teile. Allerdings kann diese Wahrnehmung ggf. dann entstehen, wenn die einen mehr Gänge(Zwischenmenü oder überhaupt ein Menü vs a la carte Bestellung) haben als andere am Tisch. Der Service und auch das Weinangebot sind nicht zu beanstanden und individuelle Anpassungen werden berücksichtigt. Die Inneneinrichtung ist nicht ganz mein Geschmack, aber das natürlich nicht relevant für den hochwertigen Essensgenuss. Dem entspricht dann aber natürlich auch das Pricing.

Martin Fauster has been on my wish list since he moved into the Freiburg Wolfshöhle and the subsequent inaugural visit from Eckart Witzigmann. His menus seem fascinating to me on paper because of their culinary intellect. In principle, it is the classic Witzigmann school that connects Austria, France and Alsace in a carefree and lastingly pleasant way that remains in your consciousness. Of course, what I couldn't guess on paper was the sensitivity and love that emanated from every single plate and touched me deeply. By the second course I couldn't hold back my tears anymore. It was a feeling of finally being home again after a long, long time. Because it's rather an exception in star shops these days: everything, absolutely everything, was salted and leavened with the utmost precision. Martin Fauster currently only has one star from Michelin. The quality of his food goes far beyond that.

Wir denken gerne zurück an die vor-vorigen Besitzer der Wolfshöhle und danach an Sascha Weiss. Heute wird das Restaurant von einem Inhaber bewirtschaftet, der seine Meriten andernorts (zu Recht) verdient hat, - aber ist er hier richtig? An einem Samstagmittag kehrten meine Frau und ich spontan ein, um nach längerer Abwesenheit die Küche nochmals zu probieren. Besonders zur Mittagszeit gefällt uns die Einrichtung mit ihrer Stringenz und Schlichtheit gut. Wir wählten das «Lunch-Menü» - 3 Gänge für 63 €/P in der Annahme, dass wir «mal eben» eine zeitlich angemessene und kulinarisch gelungene Mahlzeit haben würden. Weit gefehlt! Drei Gänge, die jeder ambitionierte Privathaushalt leicht vorbereiten und in schlanker Folge hätte servieren können, dauerten geschlagene 2 Stunden. Dass uns die Pastinaken im Hauptgang und die bitteren Quitten im Dessert nicht geschmeckt haben, kam erschwerend hinzu, ist aber klar subjektiv. Der Service wirkt ungelernt und überfordert. Dem Restaurantbetrieb fehlt die Seele. Schade. Vielleicht war der Küchenchef in München besser aufgehoben.

The three of us went to the Wolf's Cave today and ate very well for our taste. Unfortunately, our daughter didn't want to go with her boyfriend because he doesn't eat fish and the selection of dishes is very small. The selection is very fish-heavy and today there was, for example, fish, lamb, pigeon, these are all dishes that not everyone eats. It would have been nice if there had been an alternative to veal and beef and an alternative menu without fish. For the three of us, the food was very good, but I also ate more or less the menu with fish, although I would have preferred to eat one course from the menu without fish. You don't have to have fish twice in a 3-course menu. The service was very good and the farewell to the sous chef was also very nice and was well received by us. And at the end it would have been even more comfortable and nice if all the tables had been covered with white tablecloths. The distance between the tables and other restaurants is also very good. If the selection of dishes had been a little more generous so that every guest could find something, we would have rated it 5 out of 5. Actually, there should always be beef, veal, fish and poultry to choose from on the menu and then the unusual ones. But we would still like to come back as a group of three, but not as a group of five.

Freiburg's not-so-large selection of good restaurants is rounded off by the Wolf's Cave. You can dine excellently in the rather simple but cozy rooms. It would be nice if it was open more often for lunch. The cooking style certainly has modern tendencies, but in a slightly slower way. Occasionally you would like a little more “oomph”. The service and wine selection easily maintain a good standard.

Hoped for more There was a reason to celebrate at short notice and my husband and I were lucky and managed to get a spot in the Wolf's Den. The reception was polite and attentive. We were politely shown to the table. Everything was ok, an aperitif was quickly taken. My drink came quickly but unfortunately my husband had to wait 10 minutes. The wine only came when we asked. After a little greeting from the kitchen we started. Some courses tasted more than average and others were very good. We sat for 4.5 hours for the 6 courses. Unfortunately, the atmosphere was cool and a bit old-fashioned. I won't leave 550 euros lying around so quickly.

We were once again in the wolf's den. Unfortunately the service was slow and inattentive. The food was better compared to the last visit, but still has room for improvement. The prices are for restaurants with a ⭐️ star at the top end. We found it negative that we needed over 4 hours (!) for the 6-course menu.

Es gab kurzfristig einen Grund zu feiern und mein Mann und ich hatten Glück und ergatterten noch einen Platz in der Wolfshöhle. Der Empfang war höflich aufmerksam. Wir wurden höflich zum Tisch geleitet. Alles ok, es wurde schnell ein Apéro aufgenommen. Meiner kam aber leider musste mein Mann 10 Minuten warten. Erst auf Nachfrage kam der Wein. Ein kleiner Gruß aus der Küche und dann ging es los. Einige Gänge war durchschnittlich und andere sehr gut. Das Ambiente leider kühl und etwas altmodisch. So schnell lass ich da nicht mehr 550 Euro liegen.

In itself a nice restaurant with a nice atmosphere and good quality products, but the preparation is very boring. No dish was convincing and there was always something special about the food that was missing. I have never experienced anything like this in any other star restaurant. But wines were good. The waiter was also unfriendly. The food is not an experience and in my opinion not worth the money due to the boring preparation. The entire group shares this opinion.

We had high expectations of this Michelin-star restaurant, but left feeling very disappointed by our experience. It just wasn’t worth it. The food was quite good, but the wine pairing did the opposite of enhance the flavors of dishes. The selected wines were off-putting and detracted greatly from the meal, with the exception of an unusual, slightly sweet, almost vegetal red dessert wine at the end. In retrospect, I wish we had ordered a la carte and selected our own wine(s) for our meal. At 250€ per person for the 5-course menu and wine pairing, I give Wolfshöhle 2 stars for price value, at least for our visit. You really need to offer a better experience for this kind of money. On a side note, the restaurant was surprisingly empty, even for a Wednesday night, which put a bit of a damper on the atmosphere.

The Wolf's Cave is located in a romantic location in Freiburg's old town. Star cuisine in the usual good quality. The ambience is very clear and unfussy. Without tablecloths, but with fabric laid over the table - simply different than usual... The service was very friendly and attentive. The lunch menu was delicious. If you want star cuisine in Freiburg city center, you can't ignore the Wolf's Cave. Parking is great, the Schlossberggarage is right in front of the door.

As a birthday present I received an invitation (thanks H.!) to the Wolf's Cave; it was a revelation! As drinks we had: • 1 fl. Liel Castle Fountain • 1 forest house naturally cloudy • 1 Am Klotz sparkling wine (!) • 1 fl. Arneis Ruero Magia • 3 glasses of Am Klotz Cabernet Sauvignon as starters: • Carrots from the Lindenbrunnenhof – barberries – pine nuts – goat’s cream cheese • Crustaceans (!) as main course: • Cabbage – chanterelles – lovage – ravioli • Deer – medallion – semolina dumplings – cabbage – chanterelles Cheese - selection by Bernard & Jean-François Antony (!) espresso Baguette from Bread Brother The gigantic selection of wines is amazing, so you'll be happy to come back for that reason alone. Special works of art were 2 “Greetings from the Kitchen” with the hit “Mexican Mini Cucumber” (!). Everything was so extraordinary in terms of taste that I gave the Wolfshöhle the title “Freiburg's best food temple”. The Michelin star is completely justified. Kudos to Martin Fauster & team. Exceptionally attentive – without being intrusive. was the service team. The Arneis was always refilled in good time. The red wine was at a pleasant temperature of around 15° on this warm evening. A mild evening on the street that lingers for a long time.

We went to the Wolf's Den for lunch. The service is attentive and polite. The ambience is also nice. The food was very good. Only the waiting times when eating between courses is underground. We had to wait an hour between starter and main course and then another half hour for dessert. We sat for two and a half hours in total, which was made worse by the fact that it wasn't an air-conditioned room and so it got really uncomfortably humid, which made the length of sitting even more uncomfortable. We were happy to learn that Mr. Fauster had opened his own fine dining in Freiburg since we enjoyed on numerous occasions his dishes in the old "Königshof" in Munich. So, no questions asked, we went for dinner in Freiburg recently. The location was known to us and has not changed, which is a good thing. The dishes were excellent and the service was likewise. Only two things prevented me from giving 5 stars. 1. The Chef attended/served personally one, respectively two tables. The other tables/guests did not seem to be of interest to him. 2. We paid the not too small bill. When we left the premises there was no one to wish us a nice evening or even thank for the visit. It felt as if one left a McD. This is a pity but hopefully not the new standard.

Wir kennen die Wolfshöhle seit Jahren - auch dessen Vorgänger. Wir wählten das Mittagsmenu (3 Gänge) und waren begeistert von der hohen Qualität, von der Zubereitung und der schönen Präsentation. Hier kocht ein Meister! Auch die Weine waren herrlich, die Weinkarte umfassend und zum Glück gibt es auch halbe Flaschen, wenn man nicht zu Fuss da ist... Aber in der heutigen Zeit dürften ein paar halbe Flaschen mehr zur Auswahl stehen. Das Personal ist sehr gut geschult, freundlich und zuvorkommend sympathisch. Gerne wieder!

Yemekler içinse yediğimiz güvercin ve geyik bu iki özel etin hakkını vermişti; lezzetleri akılda kalıcıydı. Biraz risk alarak 8 yaşındaki kızımızla gitmiştik, ona uygun olarak tavuk kızartması vardı ki, bu kadar basit bir yemeğin bu denli kusursuz yapılması mutfağın asıl başarısıdır.

Mientras visitábamos Friburgo en una parada nocturna comimos en este encantador restaurante en el casco antiguo de la ciudad. La ubicación es muy romántica, justo al lado de una pequeña plaza, y maravillosamente decorado en un estilo elegante moderno. Formal, pero no demasiado formal. La comida era simplemente deliciosa, con sorprendentes combinaciones de sabores. El plato principal de venado fue el mejor preparado y cocido que he comido. Perfectamente preparado y deliciosamente presentado. Toda la comida de principio a fin fue digna del viaje solo. Unas últimas palabras sobre el servicio prestado por el personal. Solo el equilibrio perfecto de atención sin flotar. Los vasos nunca estaban vacíos, los platos terminados se quitaban rápidamente, y una sonrisa cada vez que llegaban a la mesa. Sin duda volveremos.

During a short vacation in Freiburg, my sister and I visited the Wolfshöhle restaurant. The food and service were very good. But we were surprised by the behavior of the sommelier. When I ordered a glass of red wine, I was given a sample sip. When he asked if I liked the wine, I replied that the wine was probably good, but much too cold. The sommelier replied that it was better to be too cold than too warm. The wine will warm up on its own. This answer left me speechless at first!

Bei einem erneuten Freiburg-Besuch stand natürlich ein Mittagessen in Martin Fausters Wolfshöhle (mittags nur Freitag und Samstag) auf dem Programm. Wir wählten einmal das 5-Gänge-Menü (€ 149), zum anderen den Hauptgang Taube und einen zu allem passenden Rosé. Meiner Bewertung vom 19. 5. 2023 ist eigentlich nichts mehr hinzuzufügen; Qualität und Zusammenspiel aller Ingredenzien erschienen uns besonders perfekt bei dem Ochsenschwanz-Gang, obwohl auch die anderen (wie Bresse Taube, € 51) überzeugten. Eine Besonderheit stellt der Tischläufer dar (Foto), eingelassen in zwei Spalte des Tisches und als zusätzliche Serviette nutzbar. Zur vollen Zufriedenheit trug wieder das sympathische Serviceteam bei. Wenn Freiburg, dann unbedingt auch die Wolfshöhle von Martin Fauster.

First of all: Very nice and attentive service team! Otherwise, the food is like the ambience: old-fashioned and boring, not at all appropriate for a star-rated kitchen. Reminds me of a visit to the Hotel Colombi, also in Freiburg. It is a mystery to me why these restaurants received a Michelin star and, above all, for what: Interchangeable and meaningless, no course is remembered for more than two hours. To top it all off, there's a piece of bee sting from the bakery to say goodbye. A few years ago I praised the Wolf's Cave, then under different management and without a star, beyond praise... Times are changing, the only thing that is still great now is the price.

It was a very nice evening - since it was Good Friday, there was a very nice pescatarian menu, highly recommended. Great quality of seafood. Detailed explanations of each individual course. It was our first time in the Wolfshöle, but not the last time. Attentive service staff. The glass was never empty. Nice ambience and atmosphere. What we personally noticed was a positive thing - no unnecessary decorations on the table - apart from a tea light. Nothing was in the way! Beautiful and subtle decorations and pictures in the room and on the sideboards. We liked it very much. We were personally bid farewell by Mr. Fauster. It was a successful evening! Many thanks to the entire Wolfshöle team.

The ambience and service was great. The menu that was served that evening was first class in terms of composition and preparation. Couldn't be done better. My wife really liked the taste, for me it was good, but unfortunately I didn't have the so-called AH experience, something outstanding was missing. But that doesn't mean it wasn't good, it just didn't quite suit my taste that evening, that's all. And you have to admit, no matter how much effort you put in, and the cooking team definitely has that, it is very difficult to meet the tastes of every single guest. What I also thought was really great, despite the fact that there was only one menu, you could change it if you wanted and you were asked at the table whether you wanted a vegetarian option or whether you had allergies to certain products. I found that very accommodating. Finally, even if it didn't quite work out for me in terms of taste, we'll be back.

After 5 days of wellness and lots of sport, a top dinner to celebrate my birthday and Valentine's Day was a must. A top kitchen with adapted wines (asked if a PDO version was an option and luckily that was possible ;-)! The beautifully balanced sauces are especially striking! Very tasty food and drinks! Nothing to comment and only praise for both the gastronomic level and the correct, friendly and relaxed service! Ps just a few more snacks with the coffee would better match the expectations of a restaurant with a flower!

I finally made it to the Wolfshöle again in January. Unfortunately, I can only go there to eat on my vacation, as the Wolfshöle is closed on Sundays and Mondays and I also have those days off. I was there last summer and was thrilled. And this time, in my opinion, Mr. Fauster has gone one better. Every course was perfectly seasoned and a delight. The restaurant is decorated in dark wood and has beautiful black and white photos on the wall, and some of the pictures were even painted by a young lady from the service, as I found out at the end (see my photos at the end... the lobster and others) The staff, that evening 4 nice young ladies and a man in service.... and everyone was so incredibly nice and always had a smile on their faces... only every restaurant had a staff like that... and even Mr. Fauster himself has them Food served with... What I personally don't like are the table runners. I'm just a fan of classic white tablecloths. But of course that's a matter of opinion... because when it comes to the monthly costs for table linen and napkins... you can now pay an employee for that. So either table linen or one more employee... of course everyone should decide for themselves. and another small suggestion for improvement .... for someone who likes to eat alone like me... I would like to see a larger selection of small bottles of wine. But of course that doesn't detract from a wonderful evening in the Wolfshöle.... and I'm already looking forward to my next vacation so I can enjoy this delicious meal again.

Mein Lieblings-Gourmetrestaurant heisst Wolfshöhle. Der Chef Maitre Martin Fauster schreibt höchstselbst ein Menü individuell zuzüglich gibt es eine Riesen à la carte. Der Kalbskopf mit gebackenem Bries und Lamm in tausendfacher Art oder der Ochsenschwanz geschmort aber auch die Taschenkrebspflanzerl aberauch noch und und und ...alles ist genial und kreativ auf den Punkt gekocht. Der Chef serviert schonmal jeden Gsng persönlich und verabschiedet sich bei jedem Gast mit Handschlag. Der Sommelier macht immer treffende Getränke zum delikaten Essen fertig. Chapeau. Wolfshöhle bleib wie du bist. Zum Glück hat sich der Österreicher in der einstigen Vorderösterreichischen Hauptstadt so gut eingefunden.

Herrn Fausters Wolfshöhle war leider eine Enttäuschung. Das Preis-Leistungs-Verhältnis stimmt nicht. Die geschmacklichen Komponenten wie auch der Service vermochten nicht zu überzeugen. Nach der Platzzuweisung vergingen 20' bis wir endlich immerhin die Getränke bestellen konnten und weitere 20' bis Wasser, Wein und Brot eintraf. Eine Restaurantfachkraft wollte nach dem Dessert und Kaffe noch etwas Süsses bringen, was aber nie am Tisch ankam. Das Steirische Backhendl und der Kartoffelsalat waren extrem fade. Ich hoffe sehr, dass wir einfach Pech hatten und der Chef an diesem Tag verhindert war. Ansonsten wäre der Michelin Stern u. E. nicht gerechtfertigt. Das Lokal ist schön eingerichtet und die Teller waren zumindest optisch ansprechend.

Gepflegtes Essen in einem historischen Stadthaus. Sehr schöne reduzierte Einrichtung. Zum Teil traditionelle regionale Speisen kreativ interpretiert. Sehr ansprechend präsentiert. Wolfshohle is Michelin star dining in Freiburg. The cooking is superb. One of the starters involved raw, but warm salmon that was incredibly good. One picture shows a close up of fried sea bass in a spectacular bouillabaisse sauce with a tiny drop of mashed potato on it. The other photo is potato on top of a tiny perfectly cooked egg and a sauce. We ate here twice this trip. All the staff are friendly and the chef comes to say good bye as you leave. Highly recommended

Das Essen war sehr gut und wurde erwartungsgemäß sehr gut zubereitet. Einziger Punkt beim Essen den es zu bemängeln gibt ist die Käse Platte die zuletzt etwas lieblos ankam, nur Brot als beilage und keinerlei feigensenf oder ähnliches zur Begleitung des Käse. Was ich aber definitiv schlecht bewerten muss war der Service. Am Anfang mussten wir erst recht lange warten bis erst mal jemand kam uns unsere Getränkenlbestellung aufnahm und die Karten brachte, zudem wurden bei uns zwei bestellte Getränke vergessen. Bei der bestellten weinbegleitung wurde uns einfach gleich das Glas voll gemacht ohne uns probieren zu lassen um evtl eine Alternative wählen zu können. Was uns aber am meisten gestört hat war, dass am nachbartisch der Service (selbes Personal) sehr viel freundlicher und aufmerksamer war als bei uns. Dort ging es schneller und der Wein konnte vor einschenken probiert werden. Das ist für uns ein NoGo und in dieser Preiskategorie darf sowas absolut nicht vorkommen.

Wir haben ein sehr gutes Mittagessen in der Wolfshöhle genossen. Jeder Gang war wirklich sehr gut, raffiniert zubereitet und schön angerichtet. Die Portionen waren auch wirklich gut. Das Ambiente mitten in der Altstadt ist wunderschön. Man kann sehr gut draußen sitzen und mit einem Aperitif starten.

Italian tradition at its finest – a delight at the Eichhalde! We had a wonderful evening at the Eichhalde in Freiburg. The moment you enter, you sense the special atmosphere – stylish. The traditional menu was perfectly coordinated: The starter was a delicate carpaccio, wafer-thinly sliced ​​and wonderfully seasoned – a classic as it should be. The main course, tender lamb, was simply outstanding: cooked to perfection, full of flavor, and beautifully presented. You immediately notice that the cooking here is done with passion and experience. The service was also excellent – ​​attentive, friendly, and pleasantly unobtrusive.
