My first visit to this restaurant was absolutely fantastic! From the reception to the excellent table assignments, the service in general, and the quality of the food, I was completely satisfied. After this wonderful evening, I'll definitely be back and highly recommend a visit. Of course, the prices are comparatively higher, but everything is just right! Conclusion: Absolutely excellent value for money!

This was our first visit to Humboldt1a, and it certainly won't be our last. The staff are unobtrusively attentive, and the food was delicious and of high quality.

A very nice location, somewhat hidden away. Since there aren't any large rooms, it has a very cozy feel, and the noise level is kept to a minimum. Stylishly decorated. The menu is modest, but very special. We would have liked a few more side dishes (vegetables), but that's not a problem. Very friendly and attentive staff.

I've been a Delinat customer for years and drink the premium red wines, which held up against a Mouton Rothschild in a blind tasting. I'd be happy to come back. Update 2025: Unfortunately, after more than 10 visits since 2020, we were disappointed today for the first time! We order the house classic, veal cordon bleu, at least once on every visit. A significant reduction in portion size was visible, and the long interval between the appetizer and main course was clearly noticeable. Then the main course arrived lukewarm. That was disappointing. The service has also been significantly better in recent years: We didn't feel treated as attentively as usual, and one waiter addressed guests informally, irritated them with "superfluous remarks," or stood at the table without saying a word, which we found unpleasant. Too bad we can't give it 5 stars anymore.

Fish with spinach, just as it should be. Great food! The only negative aspect: Here, too, they serve café crème instead of a long espresso when you order an Americano. But the coffee is still good.

For starters, we had beef fillet carpaccio and quail consommé: both very delicate and perfectly flavored. For the main course, we had veal cordon bleu and veal cheeks: juicy, tender, and well-seasoned. The "Chocolate Humboldt" dessert was a highlight. All in all, a successful evening in a beautiful restaurant with a stylish ambiance.

We visited the restaurant shortly after each other. It's a beautifully decorated restaurant with a lovely ambiance. White tablecloths, cloth napkins, and flowers on the table – everything was very tasteful. The food was absolutely delicious. The service is the only thing that wasn't really convincing. The staff, including the owner, aren't particularly friendly; there's a complete lack of warmth. No one is attentive to the guests. This is something they urgently need to work on.

It was a wonderful evening in Kassel's most beautiful beer garden. The food was excellent, the service superb, and their sommelier was a particular delight. We're already looking forward to our next visit.

A thoroughly successful evening at Humboldt 1 We had the pleasure of dining on the newly opened terrace of Humboldt 1 – a true oasis surrounded by nature! The atmosphere was wonderfully relaxed, stylish, and pleasantly quiet, perfect for a special evening for two. We were absolutely spoiled with culinary delights: I chose the monkfish with green asparagus – tender, juicy, and served in a delicate, aromatic sauce. My husband opted for fresh pasta with chanterelle mushrooms and truffle butter – a poem! The whole thing was accompanied by a wonderful aperitif, which perfectly kicked off the evening. The service was also excellent: attentive, friendly, and unobtrusive – making you feel truly welcome as a guest. We will definitely be back – a real insider tip in Kassel for anyone who values ​​quality, ambiance, and enjoyment.

First-class service, extremely child-friendly and attentive, excellent food, excellent drinks and wine list and the seating is also very nice, what more could you want! 2025: This time I ordered a 6-course meal alone in the evening on a business trip. In short: it was terrific. I was accepted as a guest at a fairly late hour - and with a six-course meal! As a result, initially the kitchen and later also the service were practically exclusively there for me. Even though I am sure that the quality - which I have already experienced on other days - is always at the highest level, this experience is one of the most unique and beautiful restaurant visits I have had so far. The service was prompt, attentive and impeccable. The menu and the menu selection were excellently put together, and the wine list was also convincing. Particularly pleasing: High-quality classics start at around 30 euros per bottle - a pleasant exception in a price category in which you otherwise often have to dig much deeper into your pockets. I also found the idea of ​​a small wine accompaniment with three glasses of 0.1 liters for just 15 euros a success, instead of being confronted with a 60 or even 100 euro option. All wines were excellent and perfectly tempered. Particularly noteworthy is the Maximin Grünhäuser Riesling QbA fine dry, which I ordered in advance - a great pleasure. And then the kitchen! You immediately notice that not only Maître Johannes Wicke and his colleague excelled in service, but also head chef Alexej Jakovlev and the entire kitchen team worked with passion and perfection. The attention to detail in the preparation was particularly impressive. For example, a hollandaise was whipped as a foam in a way that I had never experienced in terms of consistency, stability or depth of flavor. I was really happy that it appeared in two courses. The fish course – turbot with lukewarm salad and mashed potatoes – was also absolutely perfect. Really delicious, a pleasure both visually and in terms of taste. The mashed potatoes were creamy with a slight chunkiness – exactly how they need to be. The portions were perfectly sized: neither too small nor too large, so that the enjoyment of a six-course meal could be enjoyed to the fullest. The sea bream ceviche was just as classic as it was sophisticated, which, in addition to asparagus and the finest wild broccoli, was also combined with a fine lobster sauce and small slices of mini orange - I think they were briefly caramelized. A brilliant contrast of sweetness, acidity, umami and a subtle freshness. The fish itself was perfectly cooked. The second main course, an excellent rack of lamb with fondant potatoes, was also a masterpiece: buttery tender meat, perfectly cooked, accompanied by a delicate sauce and the wonderfully melting potatoes. The ganache with salt and olive oil at the end was also simply perfect - a harmonious interplay of creaminess, subtle saltiness and a subtle fruitiness of the oil. Just as convincing was the wonderful asparagus salad with pomegranate seeds as a starter, which impressed with its crisp freshness and delicate acidity. And as far as the price-performance ratio is concerned: 80 euros for such a 6-course menu? Absolutely fairly priced – especially in this quality and with this precision in preparation. In short: I can only recommend a visit to everyone – and will definitely come back. Guaranteed. There are two reasons for me to travel to Kassel - and the other reason is the Documenta. ;-) PS: Dear Mr. Wicke, I apologize for the mix-up and the faux pas!

Es ist spürbar… diese zwei wundervollen Menschen lieben ihren Beruf, und sind glücklich wenn der Gast zufrieden ist. Das Essen ist mehr als perfekt. Ich hätte gerne persönlich der Küche meinen Dank ausgesprochen. Mache ich beim nächsten mal. Und die Weinauswshl ist legendär. Herzlichen Dank für dieses wunderbare Erlebnis. Phew, Kassel, what exactly is this Kassel?! And then you suddenly end up in Humboldt 1a. So you don't expect anything and Hamburg, Frankfurt, Berlin, Stuttgart or Munich are very close. At least from the gastronomic level (without it being formally star-rated) and wonderful, personal service. Excellent menus with a variety of combination options, excellent German wines, great value for money! Well, I now know exactly where I should go, so when I go, Kassel, phew, there's something there... ;-)
