Wir waren am Sonntag hier zum Mittagessen. Beim Betreten des Restaurants wurden wir direkt und sehr nett begrüßt und platziert. Der Kellner war sehr aufmerksam und vom Aperitif bis zum Kaffee fühlten wir uns sehr gut aufgehoben und super bedient. Das Essen (orientalische Linsensuppe, Artischocken auf Erbsenpüree und Pulposalat als Vorspeisen, dann Roulade, und Ceasarsalat mit Garnelen und Rinderstreifen) war sehr schmackhaft, schön angerichtet und in angemessener Wartezeit serviert. Dazu empfahl uns der nette Kellner passende Weine, die vorab alle probiert werden konnten. Alles in allem ein gelungener Sonntadmittag

Nettes Ambiente. Speisekarte und Tagesangebote waren bereits um 18:30 Uhr teilweise ausverkauft. Schnelle Küche und unterbesetztes Personal im Restaurant.

On Friday evening, seven of us came over, wanted a wine and were treated to a wine tasting that was second to none. The sommelier had each of us try at least three wines until we found the wine we liked. His friendly service was professional and personal, even including a generous sip at the end. Egal ob man einen deftigen Hauptgang oder leichte Vorspeisen wählt – jede Mahlzeit zeigt eine hohe kulinarische Kunst. Die Getränkeauswahl ist ebenso beeindruckend, mit einer breiten Palette an hochwertigen Weinen, regionalen Bieren und innovativen Cocktails. Everything is just right: super nice, comfortable, modern rooms, attentive and super friendly service, very tasty food (turbot and rump steak), the dessert was also a delight, highly recommended!!! We would like to pack you up and transplant you to our city :)

We have lunch here on Sundays. The service was a bit grumpy at first but within a very short time she picked herself up and was very nice and attentive. Food was quite good. Toilets were super clean which I didn't expect after going down so many stairs. We'd love to come back.

We went to Dachsbaum for the first time today - we were thrilled by a great fillet of beef and a delicious beef roulade!

We were here on a Sunday evening with 5 people. Had reserved the table for 6 p.m. When we arrived there was only a set for 4 people, the 5th place setting was carelessly added after a while. The delicious starters were served promptly, but we had to wait 1 hour and 40 minutes for the main courses. What we were then served was subterranean in places. One of the two steaks was not medium as ordered but well done and tough. The two spaghetti dishes with truffles looked and unfortunately tasted very unappetizing. The spaghetti was completely drowned in a greasy, fattening cheese brine. The 5th dish: Beef roulade with napkin dumplings and red cabbage unfortunately didn't taste good either. The roulade tasted dry, you had to look for the napkin dumplings on the plate and they didn't taste freshly prepared either. We weren't asked whether we liked it, otherwise we could have commented on it directly on the spot. But nobody was interested in our opinion that evening. Unfortunately, the service wasn't great either. We sat for a long time with empty glasses and had to draw attention to ourselves so that we could receive more drinks. All 5 people were looking forward to a delicious meal in an upscale restaurant in Fulda and 4 of them were very disappointed. The quality of the food does not justify the prices quoted. Unfortunately, we cannot recommend this restaurant and will not visit it again.

Had reserved online 1 week in advance before a Bonifatius performance. Worked perfectly. We were immediately assigned the booked outdoor space for 2 people and were served very attentively and friendly. We ordered the rump steak and the salmon and were completely satisfied and enthusiastic about both the portion size and the taste. The only drawback - if any - is the direct contact with passers-by who are looking directly at your plate. A bit of “discretion” with plants or privacy protection would definitely be an advantage here! Conclusion: Definitely worth a visit.

Best food in the best ambience. Very nice service. Food was delicious. And the little ones’ food wishes are also fulfilled. The desserts were worth every euro. The restaurant delivers what it promises from the first moment.

We spontaneously went to dinner at the Dachsbau last Friday. We didn't have a reservation, but it was very uncomplicated. Our big dog wasn't a problem either. The food was excellent, in a great atmosphere with good, discreet service. 5 points - great!

On July 26th We went to the Dachsbau as part of a private party with 10 people and we really enjoyed it. Booking: A few weeks earlier, I had booked a suitable table in a small separate room with an online request. Locations and ambience: The location was perfect because it was right next to the entrance, so we had a nice view outside through the windows and at the same time didn't notice much of the rest of the restaurant and other guests. The restaurant itself is very stylishly decorated and we felt we were in the right place for our special occasion. Eat: We had à la carte and all guests could choose their own food and drinks. Our meal consisted of a starter, main course and dessert and due to the variety of our orders I would only like to give an overall conclusion at this point instead of rating each dish individually. My impression as well as the feedback from my guests were very positive and we really enjoyed the various dishes and courses. The various courses were served at the same time and the breaks between each course were well coordinated so that the hunger was not too great and the appetite was not too small. The food itself was very appetizingly prepared and tasted fresh and delicious. Service: We received a very warm welcome and were looked after very attentively and yet not intrusively throughout the evening. Perfect and exactly how you want it! Overall conclusion: We can recommend the Dachsbau in every respect and would visit again ourselves. Many thanks at this point to the team for the friendly service and the really great evening!

Es war unser erster Besuch im Dachsbau und wir wollten unseren Freunden etwas Besonderes bieten. Fulda hat ja nun wirklich eine tolle Gastroszene, aber der Dachsbau war leider nicht das, was wir erwartet haben. Aufmerksamkeit und Service wurden einem Lokal mit diesem guten Ruf nicht gerecht. Getränke- und Essensversorgung waren nicht aufeinander abgestimmt. Das wurde durch lockere Sprüche und dem ungefragtem Du nicht unbedingt besser. Während dem Essen wurde sich nicht erkundigt, der Wein war erst gegen Ende auf Trinktemperatur im Weinkühler, usw. Wir hatten die ganze Zeit das Gefühl, dass wir irgendwie im Weg saßen, und auch nicht weiter beachtet wurden. Das Ambiente konnte das nicht auffangen und so verlebten wir einen Abend, bei dem das Essen zwar sehr gut, aber das Wohlfühlmoment nicht soo groß war. Auch wenn die Gastronomie es schwer hat - wer 10 bis 20 % über dem Preisniveau agiert, solte auch dem Gast das Gefühl geben, dass er gerne gesehen ist.

Today we ate at the Dachsbau in Fulda for the first time and it was super delicious! The starter (tacos) were just right and the main course (pasta & beef roulet) was very good. We always enjoy coming back, Toni served us really well and gave us a warm welcome.

After the takeover, I was here again for the first time with a friend and on a recommendation. The Dachsbau used to be a very good restaurant in Fulda. Unfortunately the visit was disappointing. We had roulade and spaghetti with truffles. I don't often find spahetti with black truffles or roulade on a menu, so I was excited. The food came quickly but was neither visually nor taste convincing. The spaghetti wasn't homemade and was only spiced up with truffle oil and cream. The truffle on top was at most a summer truffle and tasted okay. It was the same with the roulade. Unfortunately, the taste is not more than canteen level. After complaining, the innkeeper was surprisingly accommodating and we only paid for the drinks. Fair enough.

Wir mussten eine Stunde auf unser Essen warten, das war sehr unzufriedenstellend. Auf diesen Hinweis hin wurde uns ein Freigetränk versprochen. Auf unserer Rechnung jedoch waren dann Getränke im Wert von 13€ abgerechnet, die uns eigentlich als Entschädigung zugesagt waren. Dies haben wir leider erst im Taxi gesehen. Das Essen war dafür sehr lecker.

In den vergangenen 13 Jahren, unter Führung des vorherigen Betreibers, war der Dachsbau mein absolutes Stammrestaurant in Fulda. Nun erstmals im neuen Dachsbau gewesen. Ambiente und Essen gut, aber Bedienung leider unterirdisch. Werde daher dort nicht mehr hingehen.

For the past 13 years, under the leadership of the previous operator, the Dachsbau was my absolute favorite restaurant in Fulda. Now for the first time in the new badger building. Ambiance and food good, but service subpar.

Nach dem die ursprünglichen Eigentümer/Betreiber in Rente gegangen sind, wird der Dachsbau wird nun unter der Regie einer bekannten Fuldaer Gastronomenfamilie weitergeführt. Besonders hervorzuheben sind die Freundlichkeit des Eigentümers sowie sein Umgang mit Gästen, der sich sehr positiv von der Dependance in der Kanalstraße abhebt. Das Essen war bei zwei Besuchen grundsätzlich sehr gut. Das Tatar und die Ravioli haben uns hervorragend gemundet. Gleiches gilt für die Weinauswahl. Die Roulade könnte nach unserem Ermessen erheblich mehr von der leckeren Sauce vertragen und das gefüllte Hähnchenfilet mit Kartoffelsalat wirkte irgendwie unvollständig, dort fehlt noch irgendeine Beilage oder Sauce Leider wurde bei einem Besuch ein Hauptgericht vergessen und erst nach einem Hinweis später nachgeliefert. Das sollte nicht passieren.

Bir kaç gün önce arkadaş grubumuzla gittik. Gerçekten tüm yemekler o kadar lezzetliydi ki anlatamam.. Personeller güler yüzlü, hizmet harikaydı. En kısa zamanda yine geleceğiz:)))) Eğer güzel bir ambiyans, güzel bir hizmet bekliyorsanız şüphesiz tercih edebilirsiniz.

We are disappointed. It was supposed to be an unforgettable evening, but unfortunately it wasn't. The roulade was very small and dry, the soup tasted ok, but wasn't seasoned properly. The price-performance ratio is not right here. The ambience also has room for improvement. Background music would certainly make you feel better here. The service and the boss were friendly. Unfortunately we cannot recommend this restaurant.

The price/performance ratio is not right. You might want to reconsider the food prices... Either increase the quality or reduce the price. Cesar's salad for €11.90 is okay in terms of price, but €12.50 is far too much for 40 grams of dry, well-done beef fillet on top.

The reception at 5:30 p.m. the day before yesterday was very unprofessional. If we wanted to go to the concert we wouldn't be right. But we didn't want to... Only the boss spoke German, the waiter didn't speak a single word....!!!!! Food was cold, ravioli overcooked, sauce was a disaster and the plates were unclean. Nobody even asked!!!!,,ordering drinks wasn't possible at all. According to the boss, land is currently under.........!!!!!! Since I ran a restaurant myself for many years, I was stunned... I haven't experienced anything so unprofessional in a long time. Definitely not again...

I had the fresh salmon with teriyaki sauce and celery purée and yummy!! 😋The overall service was amazing, the menu had options also for vegetarians, the restaurant’s interior has a historical rich background and the food itself is not only esthetically pleasing but also fresh and delicious! I have been informed how the fish has been prepared all the way from the cook and well done! Overall great experience and perfect ending to my Germany and Fulda trip

The service was poor. Nobody asked if they wanted another drink or dessert. The food didn't come as ordered either. The operator should pay attention to this. Only the second attempt did the food work. There were three of us with different menus. The individual meals were delicious.

Unfortunately we didn't have a nice evening here. I can give full points for the great ambience. Unfortunately the service was catastrophic. The food was good, but not extraordinary. The boss was very nice and tried to make amends, but in the end that couldn't save our mood. Maybe we'll come back to give the restaurant a second chance.

We were at the badger den on a Saturday evening. We went in at lunchtime and asked if we could come with 9 people in the evening. The boss is very nice and offered us a place for our group. When we arrived in the evening, a beautifully set table awaited us, we even sat separately. Let's get to the most important thing. The food was fantastic. The starters, the main courses and the desserts were all very tasty. The drinks were also very good. Aperitif and wine were great. Service was also very good, you felt comfortable. If I am in Fulda again, I will pay the badger den another visit.

We would especially like to thank the owner for the delicious dessert that was offered to us on the house. This gesture rounded off our evening perfectly and left a lasting impression. Most star restaurants do not consistently deliver such high quality. I think it's crazy. In addition, no matter how dressed you are, you will not be treated as a second-class citizen. So my highest praise to the boss. Every time in Fulda my visit is safe. Update 05/03/24: Unfortunately it's no longer the same as under the old owner.

Dachsbau vermittelt ja schon einen gewissen Anspruch in seiner Präsentation und im Preisniveau. Der Anspruch wird jedoch nur zum Teil erfüllt. Das Ambiente, der Empfang, das Personal sind absolut in Ordnung. Wir haben uns gleich sehr wohl gefühlt. Der Gruß aus der Küche war sehr gut. Die Vorspeise ebenfalls absolut in Ordnung. Beim Hauptgang kam dann aber die Enttäuschung. Für den aufgerufenen Preis war der Wolfsbarsch auf durchgeweichter Süsskartoffel ohne sonstigem Beiwerk einfach enttäuschend. Hier hätte man mit wenig mehr Aufwand ein dem Preis entsprechendes Ergebnis servieren können. Das Knusperhuhn auf Bratkartoffel hatte exakt das gleiche Problem. Das wirkt dann einfach lieblos und einfallslos. Im Kontrast dazu steht die Atmosphäre des Aufenthalts, die wirklich schön war. Die offenen Ausschankweine waren ebenfalls sehr gut. Aus unserer Sicht: An den Hauptgängen arbeiten!.

Unfortunately, the visit to the Dachsbau Fulda didn't go well. We were assigned a table with eight people where two people could not communicate with each other due to a protruding corner. The person sitting at the end of the table had no direct contact with the people sitting on the bench. we always had to bend over backwards to include this person in our conversations. We ordered wine and water with our meal. And actually the rest of a bottle of wine was poured out three times and then refilled from a newly opened bottle. As a result, I had a lot of cream of tartar in my glass. Last but not least, the waiter, who said he had to add up our bill in his head, also miscalculated by €10. We politely pointed out to him that the €84 might not be correct. He immediately responded with the accusatory reply that we had the two most expensive dishes at the table. No apology. Then he took pity and did the math... and lo and behold, he only came to €74. Then he graciously put the €10 from the tip back on the table. The food was very good, although the portions were not very generous. I have to praise the fact that another waiter, who was apparently clearing the table, found my cell phone and brought it after me.

It was great. Friendliness, ambience, food and service. We were in Fulda looking for a restaurant to eat before an evening event. During our search we passed the badger den. We were very kindly informed in front of the restaurant that the menu was new. We were offered a table in the restaurant. Only on the way to the table did the owner tell us that it wouldn't open for 20 minutes. I am thrilled that we are still invited in in a courteous and friendly manner. The service was very nice, the food was high quality and very tasty. I would be happy to come back at the next opportunity.

The welcome was very nice, service was very inattentive, plates were not cleared, no request for dessert, cafe, espresso, we had a table in the counter area with a view behind the counter, it was very untidy, there was chaos when paying, but the drinks and food were tasty and rich.

I found the atmosphere a bit clean and therefore not quite as comfortable. We had three courses in total. The quality of the food was consistently good, but compared to other restaurants in this price range, the dishes could have had a little more flavor. Both the owner and the service staff were extremely friendly and attentive.

First time there... delicious food at a good level

The converted and newly opened Dachsbau is an enrichment for Fulda. It offers above-average quality with standard, home-style dishes, but also a few more creative and international approaches. Everything was freshly cooked and tasty. The price level is a little higher than at the usual ready-made sauce restaurant, but then again it's not that much more. In the end we found the price-performance ratio to be very reasonable, also considering the ambience. We will be back!

Very nice restaurant with excellent classic food in a pleasant, stylish atmosphere.

An absolute tip if you want to have a cozy meal in Fulda; I knew the badger building from before and was excited to see what the new operators did with it. I have to say, we were absolutely thrilled. A really great ambience, upscale, stylish, cozy and friendly furnishings. The staff was very friendly and attentive and responded to all requests. The food (we had fillet of beef and saddle of lamb) was absolutely great, well prepared, hot and really tasty. The price is a bit higher, but absolutely justified for what you get. Really great all around!

Der Gastraum ist im unteren Teil sehr eng bestuhlt, ein intimes Gespräch würde ich im vollbesetzten Lokal nicht führen wollen ohne Gefahr zu laufen, dass der Tischnachbar jedes Wort versteht. Auch ist der Sitzkomfort auf der Bank eher bescheiden, da die Sitzfläche recht schmal und die Rückenlehne völlig unbequem weil angeschrägt angebracht ist. Die Sessel sahen jedoch sehr komfortabel aus, da hatte sich aber bereits meine Freundin platziert. Leider waren die Weingläser nicht wirklich sauber und ab 20:30 Uhr wurde es sehr frisch, da die Tür zur Straße hin dauerhaft geöffnet war, um uns als letzte Gäste möglicherweise zu "verabschieden". Dennoch war das Essen in Ordnung und der Chef als alleinige Servicekraft höflich, freundlich und nicht aufdringlich. Hätte trotzdem insgesamt "mehr" erwartet.

The ambience definitely won. The dishes are quite different, but that's not a bad thing. We expected more. When greeting us from the kitchen we couldn't detect any taste (goat cream cheese). We ordered both dishes with gratin, which was not warmed through. There was an espresso for free. But fillet and tuna were very well prepared. The service was friendly, but still needs to improve. The price level is too high for my opinion.

Wir wurden sehr freundlich empfangen und an unseren Tisch begleitet. Die Bedienung erfolgte zeitnah und ebenfalls sehr freundlich. Abwechslungsreiche Speisekarte, umfangreiche Weinkarte. Die Gerichte waren sehr schmackhaft und einwandfrei zubereitet, die Wartezeit angemessen. Einen kleinen Abzug von unserer Seite für die Temperatur der Speisen. Sie erreichten unseren Tisch etwas mehr als lauwarm und die letzten Bissen waren bereits kalt. Da ist der Weg von der Küche zum Gast wohl etwas zu lang? Trotzdem eine Empfehlung in Fulde

Hier haben wir mit gut gegessen. Auch der Rotwein war sehr gut. Weinauswahl könnte etwas größer sein. Würde hier jederzeit wieder einkehren.

Das Essen war sehr gut, die Bedienung aufmerksam und sehr freundlich. Der Tisch an der Theke war sehr laut, häufiges Klingeln des Telefons und Gespräche haben unsere eigene Unterhaltung etwas gestört. Die Weinkarte ist sehr umfangreich und ansprechend - leider gab es bei den französischen Weinen nur einen Bordeaux, bei dem es halbe Flaschen gab. Die Mousse au Chocolat war sehr gut…. nur die Teigkrusties darin waren gewöhnungsbedürftig und man könnte sie einfach weglassen.

Ein sehr Uriges, altes Haus. Am Anfang ist man etwas überrascht, das legt sich dann auch nicht mehr, denn alles andere ist sehr sehr gut. Guter Service, sehr gutes Essen und ein nettes, stilvolles Ambiente. Selten in Hessen so zuvorkommende Bedienungen gesehen.

Leider der totale Reinfall. Zunächst wurde unsere Gruppe von 40 internationalen Gästen nach ihrer Ankunft nicht mal gefragt, ob sie denn etwas trinken wollen. Nur wiederwillig wurden zumindest Sprudelflaschen auf meine Intervention hin auf die Tische gestellt. Dort stand bereits die Vorspeise, ein mickriger, bereits labberig gewordener Blattsalat. Daraufhin schaffte es die Belegschaft nicht, die vorab bestellten Essen (wir hatten drei Optionen zur Auswahl) tischweise gleichzeitig zu bringen. Die Leute sassen vor ihrem kalt werdenden Gericht und warteten 10 min. darauf, dass die anderen Personen am gleichen Tisch bedient werden. Als ich (als Gastgeberin) den Inhaber wirklich höflich darauf ansprach, beschwerte er sich, dass er ja seit 7 Uhr morgens in der Küche gestanden habe. Wenn ich mich jetzt auch noch beschweren wolle, würde er mich rauswerfen. Leider hatten ca 5 Pesonen kurzfristig abgesagt. Da das Essen aber vorab bestellt werden musste, packte man uns die fünf nicht benötigten Essen kurzerhand in Styroporboxen mit dem Hinweis, diese seinen bestellt, also müssten sie auch bezahlt werden. Der am Tresen sitzende Inhaber verabschiedete mich mit einem missmutigen "Hat es Ihnen wenigstens geschmeckt?", als ich ging. Wirklich total peinlich. In jeder Imbissbude werden Gäste freundlicher bedient. Jedenfalls definitiv das letzte Mal, dass ich diesen Laden betreten habe.

Generally too expensive for me personally, but absolutely worth the money. Of course you also pay for the great ambience. Small, cozy - yet stylish guest room that rightly bears the name Dachsbau. There is nothing wrong with the food and service. Toilet great. Highly recommended. A 2nd ...or 3rd type of beer would be desirable...e.g. You won't find a wheat beer here.

Simply great!!! Everything about the food was fried to perfection. The waiters and ambience are just perfect. Here you are happy to leave an extra euro.

Great restaurant with great food.

I had dinner here with a friend. And aside from the incredibly good waiter, the food was phenomenally good. It was damn tasty, well prepared. You can tell that people cook with passion here. The service was very good. Always had an overview and was always there when you wanted to order something. We had adequate waiting times. The price-performance ratio was great. We'll definitely be back!

Lebensmittelvergiftung nach Besuch Das Restaurant ist wirklich super. Wir waren begeistert während des Besuchs, Ambiente toll. Service gut. Essen wirkte super lecker. Wenige Stunden nach Verzehr der Hähnchenbrust und Panko-Mantel, entwickelte meine Partnerin die typischen Symptome. Ich habe noch ein Stück probiert und dachte wie zart, aber das war offensichtlich eine Fehleinschätzung und es war nicht ausreichend lange erhitzt worden. Das halte ich für echt kritisch. Obwohl es ein sehr schöner Abend war, ist das wirklich ein sehr schlechtes Ende.

Wir waren nicht zufrieden: Der Empfang durch einen Mitarbeiter (der Chef, wie wir hinterher erfahren haben) war freundlich, Karte und Getränke kamen zeitnah und wir konnten unsere Bestellung aufgeben. Danach haben wir gewartet - es waren außer uns noch 4 Gäste anwesend, die aber schon gegessen hatten bzw. ihr Essen grad bekamen. Der Mitarbeiter verschwand, dafür kamen 2 weitere Gäste, die sich setzten, eine Weile warteten (etwa 10min), nach einer Bedienung gesucht und gerufen haben - kein Mensch mehr da. Sie sind dann wieder gegangen, ohne, dass Jemand das wohl bemerkt hätte. Irgendwann kam dann auch unser Essen (ca. nach 30min), in denen mittlerweile ein neuer sehr freundlicher Kellner gekommen war.Bei mir fehlte das bestellte Gemüse, was dann sehr schnell und leider noch seeehr knackig nachserviert wurde und bei meinem Mann war die Portion sehr übersichtlich und schmeckte eher trocken. Wir kommen nicht wieder.

Unforgettable birthday dinner in August 2023 We were really looking forward to our birthday party with our siblings and partners in the Dachsbau when we received a call on the day we reserved the table asking whether we could set a table for us outside on this summer evening. It was the most beautiful sunny day of the year and it was crowned with great hospitality and fabulous food and drinks by the attentive service! The wine recommendation in particular was a hit!! We and our guests had an unforgettable evening that we will remember very fondly. The crew managed to serve us as a larger group of guests á la carte service to the point. Compliments to these great hosts. We can hardly wait for our next visit to the badger den. Thank you for this lovely experience!
