Dachsbau by Caliskan in Fulda

Würde ich wiederkommen? Nein. Wir waren zu viert hier und hatten im Innenraum reserviert. Leider mussten wir draußen sitzen. Das Dachsbau befindet sich in einer recht engen Seitengasse. Malerisch, könnte man meinen, wären da nicht die Fahrräder, Kinderwagen oder andere Gefährte, die regelmäßig durch die Gasse geschoben werden. Und jeder Passant guckt einem auf den Teller. Größter Kritikpunkt: Der Service. Ich weiß nicht, ob die Jungs neu waren. Jedenfalls kannten sie die Tischnummern nicht. Regelmäßig stand einer an unserem Tisch, um uns etwas Falsches zu bringen. Unser Essen ging auch erst an einen anderen Tisch. Wir haben sehr lange auf die Speisen gewartet. Nach der Vorspeise wurde über eine halbe Stunde nicht das Geschirr abgeräumt. Ebenfalls über 30 Minuten saßen wir vor leeren Gläsern und mussten zweimal um die Rechnung bitten (Wartezeit darauf 40 min). Der Chef (zumindest glaube ich, dass es der Chef war) saß derweil am Nachbartisch bei offenbar ihm bekannten Gästen, schüttete ihnen in einer Tour Wein nach und zeigte ihnen Videos auf seinem Handy, deren Ton über die Lautsprecher des Restaurants abgespielt wurden ... Das Essen war ... durchwachsen. Die Mezze waren gut. Nicht herausragend, aber okay. Allerdings mussten wir 2x nach Brot fragen, weil uns keines mit den Mezzeschälchen gebracht wurde. Mein Risotto im Hauptgang war von der Konsistenz her gut, allerdings fad. Der Lachs, den es dazu gab, war zweimal gestorben (totgebraten, Eiweiß trat schon aus) und vom Wildbrokkoli gab es zwei Stängel. Mein Mann hatte Leber, die ebenfalls totgebraten ("Schuhsohle") und voller Adern war (die man vor dem Zubereiten ziehen sollte). Er hatte auch vorab das Tartar, dessen Größe für über 20€ ein Witz war (siehe Bilder). Alles in allem: Für uns ist definitiv kein Wiederbesuch geplant.

Perfekt auch für besondere Anlässe mittags! Wir haben hier Geburtstag gefeiert. Vom leckeren Champagner zum super leckeren Essen - alles war stimmig. Die schöne Location und der tolle Service haben den Mittag unvergesslich gemacht. Auch der Weg aus Frankfurt hat sich gelohnt.

Das war das schlechteste Restaurant seit Langem 😠 Die Kellner waren richtig sauer, als wir sagten, wir wollten uns einen Tisch teilen. Das einzig Positive war der Wein. Und dann noch die pinkelnden Ameisen 🐜, die über den Tisch liefen 😡. Wenn ich nochmal nach Fulda komme, gehe ich da nie wieder essen. Es war außerdem noch teuer.

Pasta mit Trüffel und Rind noch bekommen, obwohl die Küche schon zu war. Der Chef Deniz hat es nochmal organisiert. Alles 10/10 besser geht nicht!

Wir waren gestern das erste mal dort, das Ambiente war schön und der Kellner zuvorkommend. Leider haben wir von dem Essen mehr erwartet... Ich hatte das Rinderfilet mit dem Wild Brokkoli und es war einfach nicht geschmackvoll. Und die Jus hatte einen Nachgeschmack von Ketchup, sie war nicht kraftvoll und auch nicht das was ich aus anderen Restaurants kenne. Natürlich lasse ich mich immer auf neue Erfahrungen ein und vergleiche sonst nicht, aber eine Jus sollte wenigstens wumms haben, wenn das Fleisch schon schwächelt. Die Trüffelspaghetti waren leider trocken. Es war eine Erfahrung wert, aber wir würden leider nicht noch mal wiederkommen.

Ein tolles Lokal in der Fuldaer Altstadt mit fantastischer Atmosphäre, besonders draußen auf der Terrasse. Der Service war sehr freundlich und zuvorkommend. Das Essen war köstlich, mit einer großen Auswahl an regionalen und mediterranen Gerichten.

Wir waren zur Mittagszeit hier geschäftlich mit 6 Personen essen und hatten eine Veganerin dabei. In der heutigen Zeit nichts besonderes. Auf Nachfrage was es für Veganer gibt, antwortete der Service: Käsespätzle. Die Verwunderung konnte größer nicht sein. Dem Service war Veganes Essen völlig fremd. Nachdem Salat der Konsens war, war es dem Service zu viel, in der Küche nach dem Dressing zu fragen und speiste uns mit Essig und Öl, welches wir selbst dosieren sollten ab. Als der Salat kam, reichte er nichts dergleichen. In einem Restaurant wie dem Dachsbau zu arbeiten und einen Veganer zu fragen, ob wirklich gar kein Fleisch ginge, nachdem die Käsespätzle verneint wurden und dann nicht bemüht eine gute Lösung zu finden, ist mir ein Rätsel. Der Besuch war leider enttäuschend. Wir kommen nicht mehr wieder.

Essen ist gut (aber auch nicht überragend). Servicepersonal ist freundlich, aber der Chef hat einfach zu wenig Leute für Service und Küche eingeplant. Und dann dauert es halt 90 Minuten zwischen Ankunft und Essen. Wenn dann noch was vergessen wird und so ein paar Ungereimtheiten reinkommen ist es halt eine verpasste Chance zu begeistern. PS: Unser Kellner war super nett und hat sich auch noch mal mehrfach entschuldigt. Die niedrige Service Bewertung entspringt primär der Ressourcenplanung

Wir waren heute zum Mittagstisch, es war super! Der Service ist toll, es gab für das Geburtstagskind eine Überraschung, gegen fliegen wurde Kaffee angezündet, man fühlt sich einfach wohl :) Extrawünsche werden berücksichtigt und umgesetzt. Der Backfisch ist sehr lecker, selbstgemacht und überhaupt nicht fettig, dass man ihn auch bei 35 grad gut essen konnte! Danke dafür!

Ein sehr toller Empfang mit Sekt. Klein, aber eine tolle Ausstattung in einem geschichtlichen Haus. Ein sehr guter und freundlicher Service. Ein tolles Essen, Wein, Snapsauswahl und ein leckerer Nachtisch. Wir hatten eine tolle Vorspeise mit Brot und unterschiedliche leckere Aufstriche. Mein Hauptgang war ein sehr gutes und leckeres Rindersteak, medium auf den Punkt. Als Nachtisch gab es einen Cheesecake mit Vanille-Eis - sehr gut. Sie hatten auch eine sehr gute Weinauswahl

Sehr leckeres Essen in wunderbarem Ambiente. Wir waren auf der Durchreise zu sein. Fulda scheint wunderschön zu sein. Die Ausblick aus dem Dachsbau ist jedenfalls zauberhaft.

Eine Atmosphäre wie im Bilderbuch. Die Küche verzauberte uns mit Gerichten die mit Liebe und erstklassiger Qualität zubereitet wurden. Von der Vorspeise bis zum Nachtisch eine echte Genussreise. Der Service freundlich und mit wirklich guten Humor auf eine sehr lockere Art und Weise. Sehr zu empfehlen!

Wir hatten einen wunderschönen Mittag im Dachsbau. Der Service war toll und wir hatten einen sehr schönen Platz. Die Mezze waren super, nur die Soße zum Schwertfisch (der übrigens vorzüglich war) war etwas überwürzt. Das hat aber an unserem Gesamteindruck, der super war, nichts geändert. Wir kommen gerne wieder!

Nettes Restaurant aber Essen und Service war durchschnittlich. Für 2 Salate und 1x Nudeln fürs Kind, 40 Minuten gewartet, dennoch Teile des Salats vergessen. Essen fürs Kinds mit viel Pfeffer und total übersalzen.

Wir hatten einen netten Abend bei gutem Essen. Der alkoholfreie Aperitiv war sehr lecker. Beim großen Salat mit Halloumi hätte ich mir deutlich mehr Avocado und Mango erwünscht, zumal der Rest tatsächlich nur aus grünem Salat, einer halben Tomate und zwei dünnen Gurkenscheiben bestand. Für den Preis eigentlich zu wenig, wenn auch geschmacklich gut. Leider wurden wir, nachdem wir unser Essen bekommen hatten, praktisch ignoriert. Auch beim Abräumen des Geschirrs wurden wir weder nach weiteren Wünschen gefragt noch wurde uns die Karte angeboten für Dessert. Nach einer reichlichen Wartezeit, in der auch kein Blick des Servicepersonals aufzufangen war, entschieden wir uns gegen Nachtisch und für die Rechnung.

Ehrlich gesagt eines der besten Restaurants in Fulda. Umfangreiche Weinkarte, freundlicher Inhaber, durchweg gutes Essen. Neben der regulären Speisekarte gibt es eine regelmäßig wechselnde Tageskarte, die für Abwechslung sorgt. Schön, dass es wieder geöffnet ist! 🤗

Ein Besuch in einem der Restaurants der Familie Caliskan, Vater und Sohn, ist immer ein Genuss. Ob Mediterran oder Dachsbau – die Atmosphäre gehobener Küche ist stets spürbar. Diesmal genossen meine Frau und ich im Dachsbau ein ganz besonderes kulinarisches Erlebnis: Denis' Meeresfrüchteplatte für zwei Personen. Gegrillter Fisch, Oktopus, Garnelen und andere Meeresfrüchte, ganz zu schweigen von Salat, Gemüse und Kartoffeln, waren exquisit. Die Bedienung war stets aufmerksam und kümmerte sich um all unsere Wünsche, von Getränken bis zu Vorspeisen. Außerdem zauberte sie ein wunderbares Pistazien-Tiramasu direkt am Tisch, das wir uns teilten und dessen hausgemachten Geschmack wir sehr genossen. Ein großes Lob an das Dachsbau!

Finde es ein bisschen unverschämt weiter Reservierungen zu vergeben wenn der Laden zu ist.

Das Essen war sehr gut, der Service jedoch leider sehr langsam. Wir mussten lange auf die Speisekarte warten, und auch das Essen ließ lange auf sich warten. Wir teilten uns Spaghetti mit Grana Padano, Gnocchi und Feldsalat, die alle köstlich waren. Der Schokoladenkuchen mit flüssigem Kern war hervorragend, das Pistazieneis hingegen nicht ganz nach meinem Geschmack, da ich den Extrakt herausschmecken konnte.

Das Essen war gut, nur leider hätte die Suppe heißer sein können. Tolle Musik im Hintergrund

Feedback on our visit on November 30th Among other things, we ordered the shrimp appetizer, which, according to the menu, was supposed to be "wrapped in angel hair." In reality, the shrimp were simply battered, which was unfortunately too pale and rather soft. When we inquired, we were told that angel hair was currently unavailable. It would have been much appreciated if we had been informed of this change beforehand, instead of being presented with a fait accompli after ordering. The meze also failed to impress us – they were unfortunately not very appealing. Overall, the meal was disappointing. We had been really looking forward to our visit and would not currently return to this restaurant. Recommendation: The menu should accurately reflect the actual preparation, and any changes to ingredients should be communicated to guests in advance.

Leider standen aus unserer Sicht Preisniveau und gebotene Leistung nicht in einem angemessenen Verhältnis. Zu Beginn wurde uns ein Aperitif serviert; die entsprechenden Gläser wurden im weiteren Verlauf des Abends jedoch nicht abgeräumt. Zudem erfolgte keine erneute Nachfrage nach weiteren Getränkewünschen. Der Service wirkte insgesamt für diese Preisklasse nicht ausreichend aufmerksam. Die Vorspeisen wurden zügig serviert und haben uns geschmacklich überzeugt. Auf die Hauptgänge mussten wir hingegen vergleichsweise lange warten. Der Fisch war trocken und die Präsentation eher schlicht. In Anbetracht der aufgerufenen Preise hätten wir sowohl im Service als auch in der Qualität der Hauptgerichte eine höhere Sorgfalt und ein insgesamt stimmigeres Erlebnis erwartet. Das ist bedauerlich. Wir kommen nicht wieder.

Absolute Herzensempfehlung! Wir haben hier als Gäste einen Geburtstag mit zwölf Personen gefeiert und zu diesem Anlass die perfekte Location im Dachsbau gefunden. Kompetentes, freundliches und überaus sympathisches Personal. Das Essen ist super lecker und in wirklich ordentlichen Portionen - hier muss niemand hungrig nach Hause gehen…!

We had reserved a table, but were told, almost shouting, to wait outside as it wasn't free yet – inappropriate in winter. Three of us ordered rhubarb spritzer. The menu stated 0.4 liters, but the glasses arrived, not properly filled, only 0.25 liters. On the next round, we were told they were out of spritzer. When it came time to pay, we pointed out that we certainly weren't going to pay full price for the poorly filled 0.25-liter glasses. There was no reaction to this, just a curt comment: "Well, then we'll give you €1 back." Unacceptable. Main course: Turkish dumplings, a tiny portion. Appetizer: Börek, a dried-out piece.

We visited Dachsbaum for the second time with a group of 10 people. Unfortunately, it was nothing like our previous visit. The restaurant wasn't full on Friday at lunchtime, and we waited over an hour for our food. The beef fillet and rump steaks weren't cooked medium as ordered and were quite cold. Even after a second attempt to cook the meat themselves, the result was unsatisfactory. At €37 for the fillet, this wasn't acceptable. The service was slow to even check if everything was alright. One dish was left completely untouched on the plate, and unfortunately, no one asked if anything was wrong. In this price range, one can certainly expect more attentive service. It's a nice restaurant with delicious food; we just happened to catch them on an off day.

We were there on Saturday and got a table without a reservation. The appetizers were very tasty and promising. Unfortunately, the promised ingredients (avocado, berries, etc.) were missing from my parents' salads. After asking several times, as the salad really consisted only of raw leaves, we received annoyed replies, and after half an hour, we were told that the ingredients were no longer available. Two euros were deducted from the bill, but overall, the price and quality of the main course were still disproportionate. It's a real shame, because the food had potential and could have been really good with just a small adjustment (dressing and the promised ingredients). In conclusion: I think the food (based on the appetizers) is usually delicious. Unfortunately, the waitress was very unfriendly in response to our justified inquiries.

Great restaurant with an upscale atmosphere and perfect service!

The ambiance was great, the food good to very good, but the service was lacking. My rump steak was excellent and arrived without any fat. The wild broccoli as a side dish was a good idea. My girlfriend's roulades were too pink and tough for my taste. They could have been braised longer. The service, however, left us to stew. Twenty to thirty minutes after ordering dessert, I canceled it at the counter. During this time, no server came near our table. My cleared plate also sat on the sideboard in the dining room the entire time.

The Dachsbau restaurant is a real highlight. Very inviting, with delicious and creative dishes. The history of the building is very interesting and fascinating. Very friendly staff.

A nice little restaurant with good food. We had filet steak, calf's liver, and delicious tiramisu for dessert. The service was friendly, the food arrived quickly, and it was really tasty.

The ambiance is really lovely, but unfortunately the dumplings served with the duck were ice cold. The meat was very good and tender. The steak was also very good. If I had been asked if everything was alright, I would have said something. But unfortunately, I wasn't! The owner then took the payment and kept the change as if it were perfectly normal. I would have given it to him anyway, but that's just not done 🤷‍♂️.

A lovely restaurant right in the heart of Fulda's old town. Very friendly and excellent service. The liver was tender and a good portion. The grilled sea bream was also wonderfully fresh and tender. It was a perfect end to a lovely weekend.

We had a nice evening at Dachsbau Fulda. The starters were very good, the steak was excellent, and the wine was also great! Unfortunately, the sea bass was disappointing — too dry, and the spinach was overcooked and quite bitter. When we arrived around 5:30 pm, the restaurant was almost empty, yet we were seated right at the entrance where it was quite drafty (we were a group of three). We were told that all larger tables were reserved, but after asking twice, we finally got another table. Interestingly, our first table remained empty until we left. That could definitely be handled better. Also, despite giving honest feedback about the sea bass twice, there was no apology or gesture of goodwill. Offering a coffee or a small drink would have been a nice touch. Still, the overall experience was pleasant, and we’ll definitely give them a second chance.

We celebrated my mom's 55th birthday and it was great. The food was also very good, and at the end of the meal they turned up the music and sang "Happy Birthday". Afterwards they brought a cake for mom, with a big candle on it like a firework. Overall, everything was great and we will definitely come back again.

Very tasty German cuisine in a pleasant atmosphere. Slight deductions for the somewhat inconsistent service – and the fact that previous diners' orders appeared on our bill shouldn't have happened, and the staff shouldn't have noticed. Nevertheless, a definite recommendation!

Everything was served at the same time. - The ambiance was chic and modern. - The waiters were all very friendly and attentive. We'd be happy to come back.

The servers were very friendly and attentive. The owner made a very likeable impression, as he wore a smile the entire evening. This wasn't our last visit and we highly recommend the Dachsbau.

We were here for the first time yesterday. And for the last time. The boss is absolutely stupid and arrogant. I wanted to take a pillow for my back and took one. He said I wasn't allowed to take a pillow; it belonged to a different table. 🤣🤣🤣. It couldn't be more stupid. The tables were empty for ages. And I've taken pillows in every restaurant and have never received such a reaction. No go. Absolutely unprofessional. The food was very tasty. But the cocktails aren't good, only about half a glass.

Our Experience at the Dachsbau Restaurant in Fulda Six of us were at the Dachsbau Restaurant and had a special request: a rum steak dish with pasta, which we wanted prepared for the entire group. Although it wasn't listed on the menu, the team was immediately open and flexible – and fulfilled our request perfectly. The result: a thoroughly successful meal. The rum steak was cooked to perfection, the pasta was excellently prepared, and the vegetables were crisp and fresh. The dessert was a real highlight and rounded off the meal wonderfully. We would particularly like to emphasize the service. The staff was attentive, friendly, and always present, without being intrusive. They regularly asked if everything was okay, drink recommendations – especially the wines – were very suitable, and our child, who had come along, was also lovingly looked after. The atmosphere was relaxed and welcoming. We could laugh, chat, and simply enjoy a lovely evening. We went there for the first time – on recommendation – and can now wholeheartedly recommend it to others. Our conclusion: a fantastic culinary experience with excellent service. We felt completely at home and will definitely be back!

I spontaneously dropped by the Dachsbau and, even though I didn't have a reservation, managed to get a seat at the bar – the team was very attentive! The atmosphere was relaxed and stylish, just the thing for a solo evening to simply enjoy. The food was outstanding: The burrata with aromatic tomatoes and herbs was a dream, and the fresh ravioli, filled with creamy ricotta, walnuts, sage, and Parmesan, were perfectly balanced in flavor. I also had a glass of Lugana – a wonderful match and a well-rounded flavor. Overall, a very successful evening with great service, delicious food, and an ambiance that immediately puts you at ease. Highly recommended – I'll definitely be back!

Francesco, a German of Italian origin who speaks fluent Italian, made us feel at home, advising us on our menu choices and providing helpful information about the city. Reasonable prices. Highly recommended.

We really enjoyed it. The seafood, including the lobster in a tube with vegetables for two, was amazing, something completely different. The sea bass was also fresh and delicious, and the service was very attentive and charming. Thank you for that. Highly recommended.

From the moment we arrived to the moment we left, it was simply perfect. The little walk and the beautiful restaurant with its extraordinary charm were absolute highlights in themselves. I really liked how the place is decorated, stylish and tasteful, cozy to sit. The service is not bad, the only reason I took off one star is because we were not allowed to sit at the table we wanted, because it was for 4 people, and we came as a couple. However, it was a weekday lunch and the table was still empty after 2 hours. The food was not bad either. The steak was well done and the broccoli was crispy, nothing unusual or interesting, but overall it was well prepared. The chocolate fondant was normal

The visit started off on a very positive note. We received a warm welcome, and gluten-free eating wasn't a problem. My husband and I were going to share the meat and fish. When everything was served, it turned out the meat wasn't gluten-free because of the toppings. It could have been re-prepared, but we felt that was a waste, so my husband ate the meat and I ate the fish. So, so far, great. My husband loved the meat, but the fish was a bit dry. Unfortunately, the spinach that came with the fish still contained a lot of sand. And that can happen, of course. When I made this comment, the atmosphere changed, and we were completely ignored. We didn't order dessert (no card was brought), and when we paid, there wasn't a friendly word. It was a bit disappointing for us.

We had veal schnitzel with potatoes, and it was delicious! Okay, the portion was a bit small for me, but that was fine given the very summery temperatures. The service was friendly. The price was absolutely reasonable and reasonable. It was also nice that you could sit outside.

Wir hatten schon weit im Voraus bei Dachsbau by Caliskan bestellt, und es hat sich durchaus gelohnt! Wir bekamen einen sehr schönen Vierer-Tisch am Fenster, und jeder Wunsch wurde uns beinah von den Augen abgelesen. Die Mezes als Vorspeise (4 für 4 Personen) waren ausgezeichnet, besonders das Auberginen-Püree und der Börek, aber Hummus mit leckeren kleinen Streifen Rindfleisch und das gebrannte Gemüse waren auch nicht ohne! Der Dachsbau hat einen vortrefflichen Weinkeller, wir bestellten Weissburgunder, einen trockenen Rosé und einen Barbera d'Alba, alle erste Sahne. Und dazu die Hauptgerichte: zwei von uns bestellten die Dorade vom Grill, zwei die türkischen Maultaschen. Die Letzteren sind winzigen, mit Fleisch gefüllte und mit Kräutern bestaubteTeigtaschen, mit Yogurt und gewürzter Tomatensosse serviert, einmalig gut! Nach diesem leckeren, entspannten Mittagessen konnten wir leider keinen Nachtisch hinzufügen, aber ein starker Kaffee (mit oder ohne Koffein, nach Wunsch) rundete das einmalige Erlebnis ab. Sehr zu empfehlen!

The restaurant offers a good atmosphere, but the prices are steep. We were moderately satisfied with the food. The slightly thicker asparagus spears were completely hard, and my Wiener Schnitzel, while tasty, was incredibly tiny. Given the high price, I wouldn't go back.

We were there for dinner yesterday with 11 people. The table was a bit cramped. At first, we were unsure whether everything would work out. My wife and I shared a tartar sauce, and we both ordered rum steak. A short time later, we were offered a flank steak for two people with delicious side dishes. We changed our minds and got a flank steak, ordered medium rare, on spaghetti with vegetables and potatoes for what felt like four people. Sensational. We gave some to friends, took the rest with us and just ate it. Thank you so much. We'll be back when we're in Fulda. Highly recommended. Everyone else was also very happy with their food. We went out to eat as a family of four and had the lunch menu. It was delicious, and the service was prompt and friendly. However, the portions were absurdly small, so we had to go straight to the bakery around the corner to satisfy our hunger. When we asked the waiter about it, he said it was just the lunch menu. Better not to offer a lunch menu than to be a rip-off.

Sehr schönes Ambiente, sehr nette Bedienung, gute Beratung und ausgezeichnetes Essen. Ein rundum gelungener Abend mit Urlaubsfeeling. Wir kommen auf jeden Fall wieder!

Everything was great, we just had to wait a little long for the main course, which was made up for with Alter Apricot and espresso on the house. If you want to have a very good meal, the Dachsbau is the right place for you.
