Unique taste fireworks. All courses, ambience and wine recommendations are beyond any doubt - every little detail is just right. The Paris-Tokyo menu is definitely worth the 335 EUR. However, you should be aware that behind the perfect facade there are tough business people. My wife became acutely ill (gastrointestinal flu) an hour before the dinner we had booked and had to vomit all night long. A 250 euro no-show fine ended up on the bill without comment and the chamomile tea that I had sent to my room was also mercilessly charged at a whopping 21 euros (*** surcharge probably). This situation really has nothing to do with intentional absence. Why else would you travel 600km and stay overnight in the relatively unspectacular hotel? We had been looking forward to an exclusive evening with 2 friends (who have eaten here several times) for months and so there was literally a bitter aftertaste.

We arrived in Nennig with very high expectations because Mr. Bau's kitchen had been on our list for a long time. To put it bluntly: our expectations were met and even exceeded. That evening, a young and professional service team found an ideal middle ground for us between being present with the guests and having enough space for our conversations. The fact that your every wish is met at this level should not always be taken for granted. It was like that here. Mr. Bau's kitchen doesn't need extensive words. She is perfect. Powerful and yet delicate. Harmoniously composed, yet with weighty accents. Rarely has the intention of a menu been so clear to us: Paris to Tokyo, please, first class without a stopover. Our personal highlight was the lobster with duck liver in a wonderfully complex vin jaune sauce. The atmosphere is cozy. Music is playing. You immediately feel comfortable. At the end, the maitre d personally says goodbye at the exit. Mr. Bau seems likeable and down-to-earth. You get a rough idea of the humility with which he and his team process the best food in the world into the masterpieces you taste. Thanks to the entire team for a wonderful evening.

We had a great evening and the menu as well as the service (unfortunately a bit too elitist for us) were excellent! In terms of cuisine, nothing is left to be desired and you also have the opportunity to order additional delicacies on top of the regular menu. So if you don't want to go without meat that evening, you'll also get your money's worth here! Only the wine accompaniment didn't completely convince us (personally) and that wasn't because it "only" included 6 items. We would have liked an even broader spectrum here so that this “Paris - Tokyo” trip would do full justice. In addition, our glasses were not refilled with each of these 6 (quite good) wines. Nevertheless, the evening was an experience and we enjoyed it very much!

Christian Bau and his entire team have truly arrived at the Olympus of culinary art. After a warm welcome, the doors to the restaurant open and from the first second you immerse yourself in a world of sensual aromas that you don't leave for the next 4-5 hours - you don't want to miss a minute of it. The service takes care of the guest at a phenomenally high level and is extremely authentic and charmingly directed towards each individual. This is perfection at its best without seeming artificial or uncomfortably stiff. A performance that is second to none!! With every greeting from the kitchen and every course, all senses are awakened, you see optical works of art in masterful filigree, scents rise to your nose and aromas combine on the palate that leave you speechless with your eyes closed. Both the wine accompaniment and the non-alcoholic version, presented competently and with a lot of passion by the sommelier, underline and complement the character of the food in liquid form. We say THANK YOU from the bottom of our hearts for an unforgettable evening! The achievements of all those involved cannot actually be put into words! We actually finished with the Michelin-starred kitchen many years ago, but... After the broadcast from Hanger 7, Salzburg, where Mr. Bau was a guest chef, we were so excited that we really wanted to go see him. Luckily we got a table for today. From the table reservation to the reception in the restaurant, everyone was super friendly, totally competent and very relaxed. We had the Paris-Tokyo menu with 14 (!) courses. After the first six courses we were very satisfied, but…from the seventh course onwards the menu was from another planet. Many thanks to Christian Bau and his team for presenting us with such a great day in such a beautiful and relaxed atmosphere. Not more, not less and really without words. We'll definitely be back as soon as the next menu is announced!

Bei Victors Fine Dining passt einfach alles. Super Service, schönes Ambiente und ein sehr gutes Menü. Der Garpunkt passt genau. Die Saucen sind ein Traum und alle Komponenten harmonisieren wunderbar zusammen. Ein großes Lob an den Koch. Der Wein dazu ist gut gewählt. Auch die alkoholfreie Begleitung ist sehr empfehlenswert. Es gibt nicht wie in anderen Sternerestaurants manchmal üblich nur Van Namen Säfte direkt aus der Flasche, sondern selbstgemachte außergewöhnliche Saft- und Teemischungen. Wir hatten einen wunderschönen Abend. Wer von weiter weg kommt, kann auch sehr gut in dem Victors Hotel übernachten. So kann man sich ein schönes Wochende machen und natürlich als Highlight die Küche von Christian Bau genießen.

This is really excellent cooking and if Japanese flavors are your thing, it will really hit the spot. Flavors are well thought out and presentations beautiful. I have a few quibbles - the meal is long (both visits I clocked in at over 4 hours and they are unable to improve pacing even when asked) and I find the atmosphere somewhat oppressive due to the setting and rigidity of some rules. That said, judged solely on the food this is a world class restaurant.

A Michelin-starred restaurant transforms the upcoming experience into a special one. Each dish is not just to satisfy your appetite, but a work of art for intellectual saturation. In order to describe this extraordinary experience, I, as an artist, will use the values and my understanding of the work of art. But in the end, I will tailor my impressions using restaurant criteria. 1. Idea and Personality of Cuisine. It was a 13-course Paris-Tokio menu. Restaurant Victor's Fine Dining is located in Germany on the border with France, not far from Luxembourg in the old castle Schloss Berg bei Perl-Nennig the first mention of which occurs in 1180. Getting into the pompous atmosphere of the past, you do not expect to see fresh tuna or kampachi fresh fish on the plate. Choosing such a menu brings freshness to this region of Germany since the traditional cuisine is rich in meat and is a bit heavy. At the same time, the very idea of combining the experience and techniques of French cuisine with the traditions of Japan makes it possible to learn something new, to combine the incompatible, to think about the general features of food culture, globalisation and inspiration. 2. Colour, contrasts, shape. The gastronomic journey began with the dish "Karotte. Joghurt. Curry". Two dishes are connected by a green colorful spot. One green is light and crispy, while the other is oily and bubbly. "Joghurt" is a multi-layered experience consisting of different consistencies and temperatures, while "Curry" is one texture where the taste complements the first course and sets the tone for all subsequent action. This is a colourful beginning, where contrasts are cold and warm, crispy and soft, and moderately sweet and sour. Each subsequent dish is a carefully thought-out composition of taste and products. Chef Christian Bau's working principle - is "Do things with passion or not at all." It seems to me that not only this passion but also exquisite taste, an exceptional understanding of colour and form, and enjoyment of nature and life are manifested in each of the dishes. 3. Rhythm, movement, time. Seasonality is brought to the dishes with autumn leaves, emphasized by the first frost in the form of ice balls with taste, and the catch of the hunting season in the form of a wild rabbit. The dishes are served according to the rhythm from light and cold to heavy and hot and back to light, cold and sweet. Sometimes the serving intervals between dishes are a little stretched, but perhaps this is the director's idea so that we stop to rush and run and our inner world comes into harmony. 4. Quality of Products. One of the features of Japanese cuisine is the use of fresh products and the desire to preserve the natural colour and taste. Knowing this, the role of simply serving pieces of fresh fish with a delicate sauce becomes clear. The quality of the products leaves no doubt about their perfection. This is how fresh fish or black caviar should sound. 5. Mastery of Flavour and Cooking Techniques. My absolute favourite is Rouget Barbet. The scales of this fish become the main feature of this dish. Here it seems to me that the mastery of the cooking technique is especially obvious. As a viewer, I don’t have the slightest idea what needs to be done so that each of the scales is wrapped in a tube, remains crispy and does not come off the peel. And in the flavour, you can recognize all the shades that are in balance from sour to sweet. 6. Value for Money. This is a sensitive and very personal question, I think. On the one hand, I won’t be able to come here for lunch once a week, but visit a restaurant whose menu was created by a person who contributed to the development of culinary business in Germany (Federal Cross of Merit 2018) since 2005 has consistently had three Michelin stars and in 2022 it is in the top 10 of the international restaurant ranking La Liste, is worth it. Since the age of fourteen, Christian Bau has been a passionate cook, so I believe that this person "can think taste"!

Unfassbar gut! Wir hatten das Glück, in vielen hervorragenden Restaurants zu essen, aber das hier Gebotene toppt alles! Vom ersten kleinen Happen über komplexe Vorspeisen, den Hauptgang zum Schwärmen bis zu kleinen Pralinés zum Café ist jeder Bissen exemplarisch und man weiß, besser wird es im Leben nicht mehr! Was Herr Bau mit seinem Team auf die Beine stellt, sucht seinesgleichen. Alles geht Hand in Hand und man kann als Gast nicht anders, als sich wohl zu fühlen. Mir fällt gerade auf, dass ich hier noch nie eine Weinkarte in der Hand gehalten habe. Das wäre auch nur hinderlich. Man bespricht mit Frau Mann, was man sich vorstellt und lässt sie einfach machen. Jeder Schluck Wein, den sie einschenkt, ist perfekt und ein Hochgenuss. Und der neue Restaurantleiter Felix Kress bringt eine Leichtigkeit und Lockerheit bei höchster Professionalität mit, die dem Team und auch den Gästen gut tut und die gesamte Atmosphäre nochmal verbessert. Wer wirklich einmal im Leben ein kulinarisches Erlebnis sucht, das er nie wieder vergisst, sollte hierher kommen!

My honest rating is 4.5 stars, but since there are no half stars, I went with four. To get the negative portion of our evening out of the way before going into the positives (there are a few), two of the dishes were rather on the salty side. One of the dishes involving the white fish and white asparagus was salted a bit too much on my wife's plate when compared to mine. My plate was great, but after I tried hers, it seems like the salt factor was kicked up to 11. The dish after that with the cabbage roll was also overly salted to the point neither of us could finish it. With that out of the way, here are the positives. The staff were completely amazing, very friendly and tentative to what we needed. The appetizers were so good, we could've eaten them three times over and be completely satisfied. The deserts were also all good (minus the fresh fruit) and the atmosphere was spot on. Each dish brought a unique taste and not withstanding the two dishes mentioned above, the food always gave us a pleasant surprise of new flavors. Would we recommend it...yes. If you love seafood and want to experience a fusion of French and Japanese flavors, then I recommend dining here.

That Mr Bau is the GOAT among Chefs is beyond question. What stands out is his humility and kindness and down to earth nature. Service was equally great and becoming of 3 Michelin stars. The best part is how they make you feel at home. The food is of course the highlight. I wouldn’t know that simple things can be elevated to such levels if I hadn’t been here. We are privileged to have such a restaurant in the neighborhood. Can’t wait to go back again.

Wir durften einen runden Geburtstag im Victors Fine Dining feiern. Unsere hohen Erwartungen wurden in allen Belangen mehr als erfüllt. Top Service, immer präsent und dennoch unaufdringlich. Die Speisen bestechen durch ihre Weltklasse Qualität. Alle Gänge wurden geschmacklich, aber auch optisch auf höchstem Niveau präsentiert. Besonders von den Saucen waren wir begeistert. 21.09.24 Gast zu Abend. Wir sind nett empfangen worden. Die Speisen waren sehr gut. Weinbergschnecken, Rahmschnitzel und Lachssteak waren sehr lecker. Der "Campingplatzcharakter" war in Ordnung. Einzig der Geruch aus dem Keller (Toiletten) hat doch dem Abend, im Sinne des Genießens, nicht so gut getan.

Super tasty food...it's definitely too good for the snack bar 😉 you wouldn't expect that.
