Leider schließt das „Stage“. Aber ich würde das nachfolgende Restaurant von M. Dyllong blind empfehlen.

Wie immer ein kulinarischer Genuss!!! Wir haben für März schon reserviert. Wir werden dieses Ambiente vermissen!!!!

Das Essen und der Service waren hervorragend. Hoffentlich findet sich bald eine neue Location.

Ein Besuch im "The Stage" ist immer empfehlenswert.

We went to The Stage with our family to celebrate a university graduation. It was a fitting setting in a beautiful ambiance with excellent menus. All the dishes were successful creations, both visually and in terms of taste. Since there were six of us, we ordered the regular and vegetarian menus, along with a few add-ons. The meal overall was outstanding, but the service was a bit slow. We felt the timing was somewhat lacking. We also had some reservations about the service. While always friendly, the staff were occasionally inattentive or forgetful. It wasn't a major issue, as we could easily get their attention, but it was unusual for this restaurant.

After several lovely evenings, we made a reservation for brunch and were not disappointed. As always, a warm welcome, friendly service, and excellent food. The "breakfast" was brought to the table on a tiered stand, followed later by the hot courses and dessert. We enjoyed it and will definitely take advantage of this new offering more often.

Nach mehreren schönen Abenden hatten wir für Brunch reserviert und wurden nicht enttäuscht. Wie immer ein netter Empfang, freundlicher Service und gutes Essen. Das „Frühstück“ wurde auf einer Etagere an den Tisch gebracht, später dann die warmen Gänge und das Dessert serviert. Uns hat es gut gefallen und wir hätten dieses Angebot gerne häufiger in Anspruch genommen.

The best restaurant in Dortmund. The Michelin star is fully deserved. We had the four-course menu plus the brioche with parta negra and caviar. This was followed by three different amuse-bouches and three sweets. Very attentive service. A sophisticated ambiance. Reasonable prices for a Michelin-starred restaurant. Highly recommended.

Absolutely first-class in every respect. The service is friendly but not stiff, every course is a true delight, the wines are excellent, and the ambiance is fantastic, with, depending on which table you get, a magnificent panoramic view of the surrounding countryside. An absolute top address.

We were at the Stage for the Five Stars menu. The ambiance is truly beautiful, and the view through the large panoramic windows was truly special. We were completely satisfied with the food, with well-thought-out and delicious courses. Our favorite was the caviar course that we ordered, which we definitely recommend! We'll definitely be back for the regular menu.

Wie immer tolles Erlebnis. Super Essen und schöne Atmosphäre.

Dies war mein erstes Mal „alleine essen gehen“ und es war mein Geburtstag. Die Speisen waren vorzüglich, der Service hochaufmerksam, die Arrangements für die Gänge wunderschön. Ich komme bestimmt wieder :)

Wir hatten das Spargelmenü mit Weinbegleitung. Das Essen war wie meistens wirklich toll. Jedoch der Hauptgang hat mich nicht überzeugt. Das Maishähnchen hatte sehr viel Knorpel und Knochen. Das ist nicht die Qualität, die ich von diesem Restaurant gewohnt bin. Der Service ist immer hervorragend, jedoch übertrieben distanziert. Das muss man mögen. Es mangelt gewissermaßen an etwas Herzlichkeit.

A great restaurant on the 7th floor with a view over Dortmund. The food was very good and beautifully prepared. Not excessive like in some other restaurants. In addition, the gears came quite quickly, but not too quickly, very pleasant. The service was attentive and quick. The furnishings are modern, but so you feel comfortable very quickly, there are lots of larger tables. The only point of criticism could be the selection of digestifs, there could be a little more here.

Unser zweites Essen in einem Sternerestaurant. Das Ambiente ist ansprechend, ebenso die Lage im 7. Stock. Die Tischdeko ist sparsam, vielleicht etwas zu sparsam. Eine runde Plastikplatzdecke, Besteck liegt auf dem Tisch, eine Blume, eine Serviette, ... Da hätte ich mir etwas mehr Stil und Handschrift gewünscht. Die Bedienung ist freundlich, locker, aber auch irgendwie formlos. Irgendwie hätte ich mir etwas mehr ... gewünscht. Die Grüße aus der Küche sind toll, ebenso das Brot. An den Gängen des Menüs gibt es nichts auszusetzen. Optisch toll angerichtet, sehr lecker, mir manchmal zu viele Bestandteile, die ich gar nicht mehr klar zuordnen kann, aber geschmacklich schon sehr gut. Bis auf den Anis, Sternanis im Hauptgang. Das ist leider geschmacklich nicht meins, aber eben Geschmackssache.Die Weine waren alle sehr eigenständig , passten aber hervorragend zum Essen. Die Grüße zum Abschluss sind wieder alle toll. Es war ein schöner Abend mit richtig guten Essen, aber mein Traumrestaurant ist es nicht

Every aspect - from friendliness and attentiveness to professionalism and timing - was implemented perfectly. The staff worked in perfect harmony, creating a smooth and extremely pleasant experience. The attentive and at the same time unobtrusive support contributed significantly to an all-round successful evening. The quality of the ingredients was excellent, which was reflected in the excellent taste of the dishes. The presentation of the dishes was modern and visually very appealing, which further enhanced the culinary experience. We enjoyed a sophisticated 4-course menu, which was perfectly complemented by a carefully selected wine pairing. The balance of taste and the creative preparation of the dishes underlined the culinary skills of the kitchen team. The price-performance ratio was reasonable and in line with expectations for a restaurant of this class. The high quality of the food, the first-class service and the stylish ambience justified the cost and made the experience completely worthwhile. The staff was extremely friendly and always helpful. As would be expected, a little treat from the kitchen was served between each course - each of these intermediate dishes was carefully tailored to the menu and enriched the taste. The wine pairing was excellent, and the extensive wine list left nothing to be desired with its varied selection. The Stage is an outstanding restaurant that offers a complete and luxurious experience. The combination of excellent service, first-class cuisine and a stylish ambience makes it a real highlight. We will definitely come back to experience this treat again. A reservation is highly recommended, and we would recommend smart casual as a dress code to match the elegant setting. Vorausgeschickt sei, wir mögen fine dining, ob mit oder ohne Stern, und die Erwartungen an The Stage waren hoch. Wir kannten das Restaurant, als es noch Cielo hieß und waren gespannt. Wir hatten Gerichte des Menükarussells, mit Fisch aber ohne Fleisch. Das Essen war insgesamt gut gemacht, aber frei von etwas wirklich Überraschendem und blieb überwiegend nicht im Gedächtnis, bis auf die Trüffelpraline des vegetarischen Hauptgerichtes und der geschmacklich sehr schön komponierte Nachtisch. Dafür wurde das Hauptgericht gerade eben lauwarm serviert, sodass man sich mit dem Essen beeilen musste, um es nicht vollständig kalt werden zu lassen. Die Weine waren passend, ergänzten das Essen gut, aber auch hier keiner, der besondere Aufmerksamkeit erregte. Der Service war professionell freundlich und aufmerksam, die Informationen zu Speisen und Getränken wirkten häufiger etwas heruntergeleiert. Meiner Nachfrage, ob das Hauptgericht absichtlich nicht heiß serviert wurde, wurde nachgegangen und bestätigt, dass dies so nicht sein sollte. Aha. Punkt. Was uns fehlte? Ja, das Essen war gut, aufwändig, mit vielen Einzelkomponenten (deren Sinn sich manchmal nicht erschloss), ganz augenscheinlich viel Arbeit und von guter Qualität. Die Weine passend. Der Service freundlich, zurückhaltend, da, wenn man ihn brauchte. Das Ambiente gehoben. Es ist eher etwas zwischen den Zeilen. Vielleicht ist diese, zugegeben sehr schwierige, Gratwanderung zwischen professionell freundlich und unpersönlich, dezent und leidenschaftslos, zurückhaltend und langweilig mitunter nicht ganz gelungen.

Hervorragende Speisen, unglaubliche Aromenvielfalt, perfekte Weinbegleitung, tadelloser und angenehmer Service. Ich würde auch 5 Sterne geben...

Wir hatten einen schönen Abend in einem modernen Restaurant mit guter Küche und nettem Personal. Sehr schön fanden wir die Erklärung vom Koch, zu jedem Gang. Auch Fragen gegenüber war er sehr offen und zugänglich. Ein sehr straff getaktetes Restaurant in lockerer Atmosphäre und erstklassigen Produkten.

Wir hatten einen tollen Abend. 6 Gänge mit den passenden Weinen. Alle Gänge waren toll! Wir waren nur ein paar Tage vorher in einem anderen Sternerestaurant gewesen: Kein Vergleich! Alles war richtig lecker und mit viel Sorgfalt und Liebe angerichtet. Die Weine passten bei jedem Gang wunderbar zum Essen. Die Sommeliere war toll. Wir können es wirklich nur empfehlen!

Küche sehr kreativ und auf höchsten Niveau! Aufmerksamer Service - sehr freundlich - professionell. Das Ambiente war jedoch für Silvester eher dürftig : keine Atmosphäre z.B. Kerzen o.ä., dadurch eher kühl - deswegen den Punktabzug.

It's a fine dining place, and expectations are high, especially from the food. I took a goose menu, and was a left with mixed feeling, that's why 4 out of 5. The appetizers are brilliant, same with the desert. Terrine is the best that I've tried. On other hand consomme and breast aren't something special. They have good taste, but nothing more than that

A wonderful evening, we particularly liked the terrine

We like to go out “special” every now and then and this time we decided on “The Stage”. The food was very creative and varied, the service was overall OK. Even though I mentioned that it was my partner's birthday, it was not addressed. That was a bit of a shame. The ambience didn't convince us and the view wasn't outstanding either - at least in the evening. We are used to better things from Düsseldorf (Quomo). For us personally, the time between courses took too long and towards the end we just wanted to go home. Overall, a nice evening, but not something worth a second visit.

The Stage falls far short of the expectations of a star restaurant. When we visited “The Stage” last Wednesday, we were really looking forward to a six-course menu with a caviar supplement and wine accompaniment. The taste of the first greeting from the kitchen, breaded eggplant balls, which reminded us more of a canteen than a star restaurant, irritated us a little, but until then we still thought that there was certainly a system behind it all. Unfortunately, the impression faded from course to course. It was noticeable in almost all courses that the work was obviously carried out at a technically high level with good products, but that proportionality and combinatorial caution were lagging behind. The lobster was combined with a vinaigrette that was much too strong, and an “apple salad” was served that consisted overwhelmingly of raw onions, which completely masked the taste of the lobster. The wine couldn't compete with the raw onion and unfortunately we still had some of it during the following courses. The haddock, perfectly cooked and accompanied by wonderful kohlrabi condiments, was topped with kimchi that was clearly too strong. The same applies to deer veal: a crust of grilled wild salami had to be removed in order to be able to taste the actual dish. The sommelier seemed inexperienced and the wine selection was not unsuitable, but unbalanced and not at the expected level. For dessert there was Madeira and I waited in vain for a wine match all evening. The impression was made by details such as not entirely clean cutlery, the fact that the gentleman was repeatedly poured before the lady, the strong perfume of the maître, non-working light in the men's toilet, a chaotic and unbalanced lighting concept in the restaurant and a long wait for the cloakroom completed when leaving the restaurant. In the end we had to get our coats ourselves and were not seen off. The evening left us so disappointed that I even asked the operator because I thought that perhaps special illnesses or other difficulties had spoiled the experience that evening. I was assured that tastes vary. The lack of service was not addressed. I conclude from this that this was an evening as one would expect at “The Stage”. The evening cost us 640 euros. It's the first time we left a starred restaurant and didn't feel like it was worth it! Unfortunately I cannot recommend the restaurant.

We had a very nice evening here, the star is well deserved! The food was excellent, always well seasoned, and there were exceptional compositions. The bread, which was only served with the second course, was very good, I would have liked this to accompany the entire menu. Excellent, brilliant food. So elegant, so rich, so complicated in appearance and taste. They withdrew the best taste of ingredients and presented them beautifully. The course has two sets, vegetarian and non-veged. Both were perfect. A great volume that makes you full and satisfied. They selected the suitable wine for each dish, the wine selection was also great. Enjoyed it every minute. The service was superb. The staff was so caring and hospitable. That's what ''I'' call ''hospitable''. Excellent manner with a very friendly welcoming smile. The atmosphere is lovely. The setting was gorge and spacy. A good access for wheelchairs, too. It's worth trying!

Really nice place - it is located on the 7th floor, and it's great to see the views and go the sun sets, and the lighting of the room changes The food was delicious - every single bite of it. We went for the 4 gange options, and we were not hungry at all - on the contrary, it was enough! The wine selection for the food was great - I strongly recommend to go for it, as they suggest a wine that combines perfectly with the dishes. I think it's a great place to celebrate something or to go for a special occasion. For us it was quite a beautiful night, we enjoyed a lot and I would really recommend it to other people.

We were there last night to celebrate my birthday. Excellent food and lovely presentation. Portions are on the smaller side, but we didn't leave the restaurant hungry. Was still within expectations for a 5-course meal. The service staff was very nice and attentive. The wine pairing was very suitable for the meal. The style of the restaurant is modern and the atmosphere was very nice, especially when it got dark outside. I would definitely recommend it.

Super delicious food, very courteous service and very attentive to special requests. Due to celiac disease, we had to convert a menu to gluten-free and announced this in advance. The menu was prepared gluten-free with great love - from gluten-free bread to the main courses to extra chocolates, everything was implemented with the greatest possible care. The menu was not degraded in terms of taste.

Wir waren schon öfter hier und sind jedesmal aufs Neue begeistert. Das Menü ist kreativ, schmackhaft und sehr schön angerichtet. Für uns ist es immer ein Erlebnis. Der Service ist immer sehr nett , zuvor- kommend und kompetent. Was wir uns wünschen, ist eine Trinkgeldschatulle oder ähnliches. Man weiß gar nicht wie man das Tinkgeld übergeben soll. Höchste Qualität des Menüs, sehr gute Weinbegleitung, bester Service und sehr gute Beratung. Jeder einzelne Gang war ein Augenschmaus und Genuss! Wir kommen sehr gerne wieder😀❗️

Nachdem wir schon zu „Palmgartenzeiten“ das Restaurant zweimal kopfschüttelt verlassen hatten, buchten wir im April im „The Stage“ einen erneuten Besuch. Nicht, dass wir unsere Erfahrungen von damals vergessen hätten, vielmehr aus Neugierde auf Grund einer Empfehlung eines Bekannten, der uns versicherte, der Küchenstil im The Stage hätte sich vorteilhaft verändert. Was sich für uns als krasser Irrtum herausstellte. Und so verließen wir auch an diesem Abend wieder kopfschüttelt das Haus. Nun sind wir kulinarisch seit einigen Jahrzehnten unterwegs und wissen insoweit, dass Anspruch und Geschmack eine absolut individuelle Angelegenheit jeden Gastes sind. Aber was einen Genussmenschen an der Küche von Herrn Dylong begeistern soll, bleibt für uns ein großes Fragezeichen. Jeder einzelne Menügang setzt sich aus Vielzahl an Produkten zusammen. So viel, dass man zu jedem Gang ein kleines Kärtchen gereicht bekommt, auf dem die Zutaten stehen. Denn die lange Annonce des Services, welche die ohnehin nur lauwarmen Gerichte noch mehr erkalten lassen, kann sich kaum ein Mensch merken. Nun ist ja eine Vielzahl an Produkten noch nichts Nachteiliges. Wenn sie aber in so minimalistischer Weise wir hier dargeboten werden, macht die Vielfalt u. E. kulinarisch überhaupt keinen Sinn. Kleine, erbsen- bis maximal haselnussgroße Mousses und Schäumchen werden zu kleinen Kunstwerken auf die Teller drapiert. Sie sind weder einzeln zu schmecken, so man sie denn einmzeln herausgefischt bekommt, weil ihre Menge nicht genügt um die Geschmacksknospen der Zunge zu mobilisieren. Noch macht es geschmacklich Sinn, sie zusammen auf die Gabel zu nehmen. Was will man da schmecken ? Eine dünne, Carpaccio-ähnliche Scheibe mit grauem Rand vom Angus Beef, welches angeblich 48 Std. in einem Gewürzsalz gebeizt wurde, war völlig geschmacksneutral. Gleiches gilt für das ca. 2 x 5 cm große Stück Lachforelle. Lt. Beschreibung 6 Std. in einem Sud von Ingwer, Passionsfrucht und Staudensellerie mariniert. Wahrlich aromastarke Produkte, vor welchen sich die Lachsforelle allerdings erfolgreich versteckt haben muss. Und warum man ein so edles Produkt wie Juvenilferkel zu einer, den Eigengeschmack neutralisierenden Mousse verarbeiten muss und dieses mit einer geschmacksüberlagernden Boudin Noir kombiniert verstehen wir bis heute nicht. Zitrus- und Yuzu-Aromen tauchten mehrfach im Menü auf. Der Minimal-Lammrücken perfekt gegart, aber nur lauwarm, dass noch minimalere Lammbäckchen ob seiner „Größe“ geschmacklich kaum wahrnehmbar. Durchgängig empfanden wir das Menü als eher langweilig. Geschmackliche Highlights ? Fehlanzeige. Handwerklich, das sei dazu gesagt, ist die Küche hervorragend. Jeder Gang ein kleines Kunstwerk. Und genau dort scheint, so vermuten wir, das Problem zu liegen. Einen Teller in dieser Präzision, mit derart vielen Produktkomponenten anzurichten, braucht – und da muss man kein Fachmann sein - so viel Zeit, dass es gar nicht möglich ist ihn heiß, oder wenigstens warm zu servieren. Für uns geht bei dieser Küche die optische Darbietung und die – vielleicht sogar gut gemeinte – Produktvielfalt eindeutig und gravierend zu Lasten des kulinarischen Genusses. Schade. Der Service zeigte sich sehr aufmerksam, bis auf einen Mitarbeiter aber leider etwas zu „klassisch steif“. Selbst in 2 und 3-Sterne Restaurants geht es heutzutage lockerer zu. Deswegen muss die fachliche Korrektheit nicht leiden.

Super leckeres Essen, sehr zuvorkommende Bedienung und sehr sorgsam bei Sonderwünschen. Aufgrund einer Zöliakieerkrankung mussten wir ein Menü in glutenfrei umwandeln und haben dies vorher angemeldet. Das Menü wurde mit großer Liebe glutenfrei zubereitet - von glutenfreiem Brot über die Hauptspeisen bis hin zu extra Pralinen wurde alles mit größtmöglicher Sorgsamkeit umgesetzt. Dabei wurde das Menü geschmacklich nicht abgewertet.

Wonderful restaurant with a beautiful view over Dortmund.

Even though the food overall was of a high standard, unfortunately the service (apart from a really friendly female person) and much more marred our evening in the restaurant. Justifiable and friendly questions were met with stroppy, sometimes brash answers. We have never experienced anything like this in any other restaurant. In addition, we called weeks in advance and asked whether it was possible to address certain intolerances and to design the fixed menu accordingly. Over the phone and initially on site (we kindly pointed this out again at the beginning) they said it wasn't a problem at all. However, during the menu the opposite turned out. Components were simply left out without replacement, instead of a sophisticated dessert there was an “alternative” of toasted dry (!) slices of bread without any spread and some cheese - the whole thing neither decorated, no dips or anything else. An appropriate dip, at least adjusted to the allergy, could have been made quickly and easily and at least a little butter would be enough. But there was also only a rather curt answer (“Otherwise there would be dips, but they wouldn’t be tolerated either”). There was no substitute for the aftertaste (three types of sweets: chocolates/cream puffs/cookies). So really absolutely nothing. You could then watch the others eat. Here, too, when I asked whether a little something had been prepared for me (fruit, for example, would have been completely sufficient), I was simply told: “No, we don’t have anything.” Of course I still had to pay the full price. There was a feeling that, despite having previously promised, that incompatibilities had not been taken into account, that they might have been forgotten, but that people did not want to admit this. Unfortunately, there was no apology or even a short conversation or small compensation. In addition to the issue of intolerances, there were unfortunately other situations/service reactions at our table that you would absolutely not expect in a restaurant like this - and even an upscale one at that. We go out to eat often and we are also very familiar with the catering industry, as my partner is a professional himself. All the other restaurants where we were able to spend similar evenings with menus have done an excellent job of creating equivalent alternatives for those who cannot tolerate it. The service there was always - as you would expect - very friendly and accommodating - unlike that evening at The Stage. We were really looking forward to the evening and the menu and left the evening with a very bad feeling that lasted for several days. Therefore, despite the sophisticated courses, we unfortunately cannot recommend The Stage.

Were here for the first time at the invitation of our daughter and son-in-law. We weren't disappointed. Completely exceeded our expectations. Very informative wine explanation for the individual courses. We can recommend it without reservation. Great unexpected food creations. The almost 4 hours flew by. Thank you for the great, unforgettable evening.

A great evening at The Stage. The menus, whether vegetarian or with meat/fish, are a dream.

A very good kitchen! There are menu offers with different orientations and also as cheaper offers. Modern, original and varied cuisine is offered, but it never goes crazy. Everything tastes good and harmonious. It's simply fun. The pricing is reasonable, even for wine. The service is very flexible, friendly and accommodating, even when it comes to special requests. The ambience is – considering the conditions in the somewhat remote D-Hombruch – urban and chic. Go!

Wir hatten beim „La Table du Chef“ einen wunderschönen und unterhaltsamen Abend mit einem sehr sympathischen Gastgeber, der uns ein sorgsam abgestimmtes Menü aus Speisen und Getränken serviert hat. Das war ein sehr besonderes Erlebnis.

We were there on Good Friday, the atmosphere is very nice and the staff was very accommodating. 6 courses with wine accompaniment, although mixing with the vegetarian menu was also possible. Everything was very tasty and visually outstandingly presented. We were completely satisfied.

An evening with mixed feelings: From a technical point of view, the food was impeccable, but there was no course that left a “wow” moment. In my opinion, the menu sequence and the proportions within the individual courses were not consistent, for example there was a beef tartare as a greeting from the kitchen (Aromatic Flavor), followed by a veal tartare starter (veal tartare, eel, beetroot). Unfortunately, beetroot has become extremely dominant. What unfortunately disrupted the visit to the restaurant were the waiting times between courses. The restaurant was surprisingly not very busy and yet it took almost 30 minutes between aromatic flavor & starter and then 45 minutes between starter & intermediate course, intermediate course & main course and between main course and dessert. The service was little/not present during the breaks, so the breaks felt far too long. Unfortunately, at the end no one from the service team asked again how you liked it/whether everything was ok, so there wasn't really an opportunity to give feedback on site. Independently of each other, the espresso was also criticized at our table, perhaps. You could adjust the grinding level here (coarser) or think about shorter extraction times. Although the food itself was basically really good, I unfortunately didn't leave the restaurant with a good feeling because of the surroundings and can therefore not recommend it to anyone, even if I found the entire service staff to be very competent when they were at our table and in particular I found Mr De Luca to be extremely friendly. It's a real shame, as I think there was potential for an all-round successful evening.

Having been to Stage countless times, we can only give one absolute heartfelt recommendation. The menus are always an absolute experience, perfectly coordinated and to the point! The service and wine pairing are first class and impeccable. The ambience is quiet and dignified but still informal and relaxed! You just feel good overall. The cooking boxes (we had both the Christmas and Easter cooking boxes) are simply a taste experience and can be prepared quickly and easily without any skill. Big praise for the well-thought-out menus and that you managed to prepare the boxes so that you can enjoy star gastronomy in your own four walls in just a few simple steps! Ein Besuch der in Erinnerung bleibt.Auch für eingeschränkte Fussbeweglichkeit sehr gut zu erreichen.Der Ablauf wie der Service sehr gut.Über die Qualität wie auch dem Geschmack und dem Aufbau der Kompenenten auf dem Teller beim gesamtem Menü kann man nur sagen:weiter so auf diesem Level.Vielen Dank für diesen gelungenen Abend.
