After the table for our small wedding party at the Hotel Du Cap Eden Roc was canceled at short notice, we had to find an alternative within 8 hours! Luckily for us, our dear friends and witnesses Bernard Arnault and Flávio Briattore took the reins and promised us an evening that would make the Eden Roc disappear into oblivion. Well... From Cannes we quickly took 6 Gulfstreams directly to Stuttgart, the vibrant Swabian state capital. Actually to Bad Cannstatt, the small, fine climatic health resort with history at the gates of the big city. According to Flavio, THE culinary epicenter of Europe. On the flight the guys worked really hard for us, so we had options for our banquet in the “Bareiss” and the “Traube Tonbach”. Unfortunately, both establishments were unable to provide us with the champagne that we considered essential for this unforgettable evening. Gout de Diamants. The only thing equal to my future wife. So the search continued and seemed hopeless. Hopeless until Bernard called his old friend from the driving range - Michael. Michael, who is now making a name for himself as an absolutely exceptional restaurateur, far beyond the borders of German-speaking countries. The specifications were briefly presented, Michael's reaction was “Oh, the little 1x1... no problem, I'd be happy to host it for you. When are you at the GAT and how many?” As discussed, Michael picked us and our 134 guests up in 67 S Class Maybach limousines at the General Aviation - the private jet terminal at Stuttgart Airport. We would have to deduct a star just for the “General” but today we don’t want to be like that, after all it’s my 5th wedding. The drivers mostly spoke German and were therefore able to adjust the climate and massage seats. Admittedly, it took 25 minutes for all the guests in the gourmet palace to be at their seats, but even then we turn a blind eye. But what really doesn't work at all is that there were only 13 bottles of 'Goût de Diamants' champagne in stock instead of 54 as discussed. were in stock. The 86er Dom Rosé once again had to fill the gaps in the welcome digestif. Well at least it was at temperature, even if the double magnum is known to be less accessible and takes time... time that a champagne glass from Zalto doesn't have. The Riedel Dom Perignon glass would have been the right choice here, so 1 star deducted! Unfortunately, the kitchen sends the amuse bouche a little early, before the first speech. Not only the timing but also the arrangement of the triology of lobster, wagyu and quail carpaccio was disappointing. Admittedly, the lobster with the rosemary pomegranate vinaigrette was a treat, but the Yamasaki 50 flambéed A5 BMS12 Wagyu, as so often, fell short of expectations. The quail breast fillet, marinated in Kopi Luwak for 96 hours, couldn't make up any ground, even given the gold leaf topping. Too early and too cold. There should be negative points here, but as they say in Schwobaländle: “You don’t look a gift horse in the mouth” Part 2 Follows!

Part 2: Flavio's first speech was immediately followed by, as he so beautifully put it, “the greatest challenge of his life”, the Fugu Carpaccio Ceviche. No question, not for low earners and weak stomachs. Michael spared no expense or effort especially for this dish and flew the 94-year-old sushi master Jiro Ono Sukiyabashi from Japan. The Fugu Ceviche with the acid from home-grown Prima 1 A Amalfi lemons represents a ride on the razor's edge, even for him. We rate this highlight 5 out of 5 stars. Now Arnie also did the honors. After his fiery French passionate speech about our love, Michael sent a foie gras from the textbook of the great Paul Bocuse, marinated for 4 weeks in Pedro Ximénez and topped only with single layers of salt crystals from Normandy. There was nothing to add except that you obviously used 550 flour instead of 405 for the brioche. Slightly scratchier and less accessible on the palate, but more lasting and warm for longer. Well, whoever likes it... It was so far! My personal highlight of the evening. After the - admittedly - tough, self-absorbed and never-ending speech by surprise guest Viktor Orban, the Beluga caviar was finally served. Accompanied by ice-cold Siberian vodka from the Rachmaninov factory. 1.5 liter bottles at -6.5 degrees Celsius. Caviar from small copper buckets. In style. The evening is picking up speed. Finally! The first spoonful of Beluga caviar is a true taste experience. The pearls are large and of remarkable delicacy. They literally burst in the mouth and release an incomparably mild, buttery taste that is complemented by subtle salty notes. The texture is silky and smooth, and the aftertaste is long-lasting and delicate. In combination with the Rachmaninov, a harmonious interplay of flavors that makes the taste buds dance. Beluga caviar is known to be one of the most exquisite foods in the world, and in the glutton this delicacy is of course part of the normal repertoire. However, it is an unforgivable sacrilege that Michael's team supplies the caviar with spoons from large-scale industrial production from WMF. If Beluga is not brought to the mouth with silver, essential pleasures of the taste buds are lost. Unforgivable, hence 1 star deduction!! What can I say. Yes, ok, the Chateau Briande (CB), marinated in whey from Swabian alpacas, spent a whole 24 hours at 48 degrees in the first layer of dandelion, fenugreek, thyme and dairyman's hay, the second layer of egg white foam and a single layer of hand-picked salt crystal diamonds from Normandy. On the one hand, it was a wonderful treat baked in across the board . The CB was freed appropriately with a wide wooden hammer and carved appropriately with a damask knife. Unfortunately, the carving was not carried out after 3 minutes as usual, but rather immediately, so that the juice and blood ran out and the juiciness of the meat was lost. Nevertheless, the truffled morels on the sweet potato pumpkin puree were also a delight. Unfortunately, we have to make a deduction for the expired CB. Beginner's mistake: 1 star deduction! Even the panna cotta made from home-grown vanilla sticks and Demeter cows from Valais with meringue sweetened with Frombois foam could no longer reverse the previous disaster. Nevertheless, we decided to eat the cheese in our 8000 Bombardier on the way to St. Barths. What a disappointment….

The cozy inner courtyard invites you to enjoy. We got this address based on a recommendation. Don't hesitate to visit this restaurant. For the sake of completeness, I would like to mention: The valet parking service works like Swiss clockwork. For my wedding anniversary, I had the pleasure of experiencing the candlelight Michelin menu in the Schwemme with my wife. The start with the amuse-bouche, consisting of a cold hop bowl with local Cannstatter organic barley foam, enchanted our taste buds. The other courses of vegan molecular cuisine were completely convincing in terms of creativity, mouthfeel and international flair. Be sure to ask the staff about the wine pairing. The ambience in the outdoor beach area on the Neckar, especially in the evening lighting, creates an undisturbed and intimate feel-good atmosphere that is second to none. The perfect end to the evening was provided by the sauna master's performance at the Black Forest pine needle infusion in the adjoining hotel complex. Early reservations are strongly recommended to book the helipad.

Nice atmosphere, but too elitist. I was there on Saturday after the Wasen and it was a special experience. Since I and my companion were craving another beer, we went into the restaurant. Unfortunately there was no more space in the living room as the tables there were reserved for the local spiritual elite. We then got a drink and were asked by the usher to sit on a bench on the terrace. The atmosphere was cheerful, but we were subtly informed several times that our wardrobe did not conform to local conventions. I wore a red checkered traditional shirt and a light brown jacket, which wasn't neat enough because it didn't symbolize the solidarity with the local football club.

I had the exquisite pleasure of frequenting the sublime fine-dining establishment "Schwemme" and was flown in royal style by private plane from the British capital, London. The virtuoso chef Michael himself gave me exclusive insights into the newly completed wine cellar, which took me into his vinophile world. The starter, consisting of delicate oysters from northern France, accompanied by a wine that enchanted the senses in a heavenly way, was a truly culinary aristocratic experience. Only connoisseurs of exquisite cuisine can truly understand the subtle poetry of this culinary delight. The main meal and dessert, which can hardly be put into words, exceeded every culinary expectation and catapulted my taste buds into spheres of the highest pleasure. For the grand finale, my companion disappeared for a moment, only to return accompanied by Michael himself and a discreetly smeared lipstick. Apparently she had taken part in an exclusive wine tasting that sent the palate into ecstasy. Michael, please kindly consider thinking about my worlds of pleasure on my next visit. Viewed as a whole, the "Schwemme" is a place of incomparable recommendability, where culinary sophistication and luxurious enjoyment merge into a harmonious symphony.

Aus dem Weinkeller des Pariser Restaurants "La Tour d'Argent" sind über 80 Flaschen verschwunden. Die Weine haben insgesamt einen Wert von über 1,5 Millionen Euro. Ob das ein Zufall ist? Ein Schelm wer böses denkt! Zeitlich passt es aber schon zusammen, gerade wird der neue Weinkeller in der Schwemme fertiggestellt. Der auf Grund der Schwierigkeiten zur Baugenehmigung als "Bahnprojekt S21" (in Wahrheit Schwemme 21) getarnte Weinkeller soll den stetig steigenden Platzbedarf für die edelsten Tropfen der Schwemme-Gäste gerecht werden.

"Eine gute Küche ist das Fundament allen Glücks." - Auguste Escoffier Oh, dieses Glück haben wir in der Schwemmé gefunden. Wo fange ich an, um dem wahrhaft himmlischen Erlebnis gerecht zu werden, dass dieses Gourmet-Restaurant geboten hat? Von dem hochwohl gelobten Moment an, als wir durch die Pforten des Etablissements traten bis zu dem Moment, als wir mit einer Träne auf der Wange gingen, wurden wir in eine andere Welt entführt - eine Welt, in der jeder Bissen ein Gedicht und jedes Gericht ein Meisterwerk ist. Jedes Gericht war zweifellos ein Feuerwerk der Aromen, perfekt ausbalanciert und mit einer Präsentation, die einem den Atem stahl. Jeder Gang war ein Kunstwerk für sich, eine sinnliche Erfahrung, alle fünf Sinne ansprechend. Ein Ort, an dem Essen nicht nur Nahrung, sondern wirkliche Kunst ist. Danke!

Wir waren zum Silvesterdinner hier. Wir waren absolut begeistert. Es hat alles gepasst: vom freundlichen Empfang über den unaufdringlich aufmerksamen Service, die Weinempfehlung bis hin zum Menu, was nahe an der Perfektion war. Eine inspirierte Küche, bei der man schmeckt, dass das Küchenteam Lust an Kreativität hat. Das gesamte Team funktionierte an diesem Abend hervorragend, perfektes Timing, keine Leerlaufzeiten, obwohl sowohl das Gourmetrestaurant als auch Gäste in der Bar vom selben Team versorgt wurden. Das geht nur, wenn alle zusammen arbeiten und Spass an der Arbeit haben. Wirklich hervorragend und uneingeschränkt zu empfehlen.

Das Essen war einfach ein Genuss. Das Ambiente lädt zum Verweilen ein, ein wohliges Gefühl der Wärme erfährt der Gast. Die Weinkarte lässt nichts zu wünschen übrig. Meine Erwartungen wurden übertroffen - auf Nachfrage wurde mir das Rezept vom Schaumsüppchen nicht herausgerückt - Fand ich persönlich sehr schade, muss es jedoch akzeptieren. Exzellenter Service in gemütlichem flair. Ideal bei Ausflügen - gerade mit kleinen Kindern, dank des großen Spielplatzes im offenen, sonnigen Hof. Spitzenunterhaltung durch Live-Bands an jedem Freitag (bei uns trat einmal sogar Marc Forster). Wow.
