Ein wahrhaft schönes, geräumiges und perfekt ausgestattetes Restaurant. Die Atmosphäre ist ruhig und lädt zu einem entspannten Essen ein. Der Service ist aufmerksam und zuvorkommend, ohne aufdringlich zu sein. Ein kulinarisches Erlebnis der Extraklasse, das eine wahre Genussreise bietet. Die Gerichte sind wunderschön angerichtet und präzise zubereitet. Sehr geschmackvolle weihnachtliche Dekoration der Räumlichkeiten, hübsch gedeckter Tisch, sehr freundlicher, zuvorkommender Service, sehr gutes Essen.

Toller Service, Mega freundlich und zuvorkommend. Essen war fein und Auswahl an Getränken und Speisen dem Ambiente angemessen 👍🏻 gerne wieder.

Heute war ich im Caroussel Nouvelle Brasserie im Bülow Palais in Dresden. Ein rundum wunderbares Erlebnis.❤️❤️❤️ Die Spargelschaumsuppe mit Bärlauch Ravioli war fein abgestimmt und voller Aroma. Die Trüffel Tagliatelle mit Spinat und Gruyère schlichtweg himmlisch. Dazu die „Bülow Edition“ 2023 vom Schloss Proschwitz. Ein hervorragend abgestimmter Cuvée, der den Lunch perfekt ergänzt hat.❤️ Stilvolles Ambiente. Aufmerksamer und herzlicher Service. Küche auf höchstem Niveau. Ein Ort zum Genießen, Verweilen und Wiederkommen. Absolute Empfehlung.Man braucht keinen besonderen Anlass für exzellenten Wein und einen außergewöhnlichen Lunch. Man sollte sich einfach selbst hin und wieder etwas Schönes gönnen.❤️

Meine Frau und ich verbrachten einen tollen Abend im Caroussel Nouvelle. Wir hatten beide Spargel bestellt und wurden nicht enttäuscht. Meine Frau hatte einen Spargelsalat und ich hatte Spargel mit Hollandaise und Kartoffeln. Beide Gerichte hatten Top-Niveau. Auch der Wein, der uns empfohlen wurde, passte hervorragend. Man kann das Caroussel Nouvelle nur weiterempfehlen.

Weinbegleitung zum Dinner war bestens ausgewählt.

Das Essen und der Service waren Spitzenniveau!

Wir waren 6 Personen und nicht eine war mit der Qualität des Essens zufrieden. 4 Personen hatten das Menü der Kochsternstunden gewählt. Das Tatar kam frisch aus dem Kühlschrank und konnte keinen Geschmack entfalten ebendso der Schwarzwurzelsalat vom Kalbstafelspitz. Die Fischsuppe verdiente leider den Namen nicht, es war nur etwa die Hälfte des Fisches wie auf den Bilder der Webseite, enthalten. Beim Coq au vin, lag das Hähnchen wahrscheinlich neben der Rotweinflasche aber niemals 24h im Rotwein, wie uns erzählt wurde. Die Soße war sehr knapp und reichte nicht einmal für den vorhandenen Kartoffelstampf, auch hier entsprach die Portion nicht den Bildern des Restaurants. Bei der Entenbrust hatten wir das Gefühl, dass die Soße aus Fertigprodukt hergestellt wurde. Die Edamame waren versalzen und hart. Der Service war nett aber nach der ersten Kritik hatte es sich erledigt, wer fragt muss auch mit Kritik umgehen können. Deshalb haben wir wahrscheinlich auch keinen Code zur Bewertung der Kochsternstunden bekommen.

Wir waren zu den Kochsternstunden hier und es war ein rundum gelungener Abend. Angefangen von der telefonischen Reservierung und dem Empfang bis zur Verabschiedung war es perfekt. Die einzelnen Gänge und die zugehörigen Weine wurden super erklärt und schmeckten hervorragend! Auch außerhalb der Kochsternstunden sehr zu empfehlen.

für mich die beste küche dresdens, man sollte sich einen stuhl aus dem frühstücksraum bringen lassen. die sind bequem für rückengeschädigte personen

Einfach nur Klasse, super Service, ein richtig gutes und reichhaltiges Frühstücks Buffet und das Ambiente im Hotel und bei der Lage in Dresden ist auch unschlagbar. Vielen Dank für den sehr angenehmen Vormittag.

Von außen macht das Restaurant einen sehr eleganten Eindruck – eingebettet in ein 5-Sterne-Superior-Hotel, was zunächst hohe Erwartungen weckt. Umso wichtiger wäre Transparenz: In der Beschreibung wird weiterhin mit einem Michelin-Stern geworben, den das Restaurant aktuell nicht (mehr) besitzt. Zwar wird es im Michelin-Guide noch geführt, jedoch ohne Empfehlung. In Verbindung mit dem Küchenwechsel erklärt das leider einiges. Wir haben uns bewusst aufgrund früherer Bewertungen und des ehemals sehr guten Rufs für dieses Restaurant als Jahresendauftakt entschieden. Der Innenraum ist Geschmackssache, stilistisch jedoch weit entfernt von dem, was man bei einer angekündigten Fine-Dining-Experience erwarten würde. Die Vorspeise des Drei-Gänge-Menüs, eine Pastete, war sehr gewöhnungsbedürftig. Die Kombination mit Feldsalat und Dressing wirkte nicht stimmig, was wir auch offen an den Service kommuniziert haben. Die Tellersprache insgesamt erschien überladen; Dekorationen wie Schnittlauch und Paprikapulver erinnerten eher an einen Landgasthof als an gehobene Küche. In aktuellen Bewertungen wird das Konzept offenbar als „Brasserie“ beschrieben – die Preise sprechen jedoch eine andere Sprache. 12 € für ein 0,1 l Glas Sekt bzw. 9–12 € für ein Glas Wein sind eindeutig Fine-Dining-Niveau und stehen in keinem Verhältnis zu Präsentation, Service und Qualität. Der Service war leider deutlich unaufmerksam: Wasser und Wein wurden nicht nachgeschenkt, Tische blieben lange unabgeräumt, Besteck wurde nicht nachgelegt, auch an den Nachbartischen fiel dies spürbar auf. Unterm Strich zahlt man mittags schnell über 160 € für zwei Personen. In Relation zu vergleichbaren Restaurants liegt das Gesamtpaket bei etwa 2,5 Sternen. Sehr wohlwollend wären 3 Sterne, realistisch – insbesondere bei diesem Preisniveau – eher 2 Sterne. Schade, denn der Rahmen und der Anspruch wären vorhanden, die Umsetzung kann aktuell jedoch nicht überzeugen.

Excellent place for dinner, prices are a little higher but I would say reasonable for the quality of the food.

A very nice lunch, perfect for the occasion 😇

This was our first time here, and unfortunately, it will also be our last. The restaurant is cozy and tastefully decorated. The service is exceptionally attentive, courteous, and friendly. We have certain expectations in this price range (goose/red cabbage/dumpling €45; Wiener Schnitzel €30). The food seemed to be made with effort, but was a complete disappointment in terms of taste. I suspect, though I'm not certain, that they are using pre-made convenience food. My duck breast appetizer looked and tasted like it came from a package of "Rewe Fine World" (a supermarket's gourmet food section). All in all, every course lacked imagination and zest. This is a shame, because the concept is definitely to our liking.

An excellent place for fine dining! I made a reservation for a table for 7 people for celebrating a birthday dinner in the Caroussel Nouvelle restaurant. We experienced a wonderful evening well organized by the professional team. The very attentive service, the recommendation of the 4-course menu accompanied by an excellent wine selection, the table decoration and location, everything was just outstanding. Thank you so much for this lovely evening in your restaurant. It will be a cherished memory for all of us.

The food was excellent, but unfortunately the pleasant atmosphere was disrupted by the arrival of a seminar group.

It wasn't bad. But for that price, I'd recommend one of Dresden's Michelin-starred restaurants.

Very competent and friendly service

Excellent restaurant. A no-brainer if you are staying at the hotel and worth a trip across the river if you were staying in the old town.

In the entrance area, you're immediately greeted by the illustrious clientele of the past. And that was a major strength for me that evening: the hotel and restaurant attract a colorful and diverse crowd, ranging from the very conservative to the highly artistic. As a social scientist, this was naturally fascinating. Otherwise, the ambiance offers little in the way of special features, though no weaknesses are apparent either. The service was equally fitting: nothing extraordinary, but also nothing to criticize. High-quality yet unobtrusive. I had a four-course menu. The starter was a vegetarian foie gras – I usually find vegetarian versions of classic meat dishes rather unnecessary. However, with the foie gras, I can understand the ethical reasons, and the execution was absolutely superb. The Saxon fish soup was also convincing, though not particularly impressive. The main course seemed a bit overloaded to me, but it boasted a fantastic jus. The dessert lacked a certain inspiration, but was again of a high standard. I found the dessert somewhat uninspired, though still of a high standard. All in all, that's also the picture that Caroussel Nouvelle paints for me: everything is of a high standard, but without that last bit of excellence.

I have never experienced such outstanding and warm service! The entire team made this special evening an absolute highlight for my daughter and me. From ordering extra flowers to delivering the cake, the whole team was incredibly helpful. The evening was characterized by attentive service and outstanding overall service, including excellent advice on the drinks menu. The food, and therefore every course, was consistently excellent and perfectly portioned. Great marks, and every bite was simply delightful. Thank you again from the bottom of my heart for this truly perfect evening!!

We've eaten at Caroussel Nouvelle several times, and unfortunately, we have to say that the price/performance ratio is no longer right. A fish soup—consisting of a cup of clear broth adorned with five tiny pieces of fish measuring a mere 1x1cm—for €22, or the Wiener Schnitzel with two miniature pieces measuring a maximum of 5x8cm, which are already paper-thin and have more breading than usual, for €32, is no longer convincing or acceptable to us. The food tasted good, but nothing more. The table decorations also leave much to be desired; the beautiful metal ornaments have been missing for quite some time now; they were exclusive and had character. Now, sad, slightly wilted anthurium blossoms stare back at you—very unimaginative! In the future, we will focus on other restaurants.

Excellent dishes. Attentive and friendly service. Quiet atmosphere. However, something is missing to complete the experience. The bread isn't up to par with the food. We weren't served appetizers or small pastries. The side dishes (which were delicious in themselves, especially the lamb) didn't add anything.

Great location. Excellent food and wine list. Unfortunately, we didn't get any bread, like the table next to us. While we were in the lounge to smoke, our table was simply cleared. Despite ordering a new bottle of water. It's a shame. We had a great evening, and the service was initially fine. But after ordering our bottles of wine and champagne, we also had to ask for the white wine, whether it was still available. It's a shame. They'd like to see more attention, rather than just clearing the table away, even though we weren't paid and hadn't left. We also have the same job and would have liked to give a better review.

The food, its presentation, and the wines are truly outstanding. Unfortunately, the table service wasn't up to par, possibly due to a lack of staff. We didn't feel particularly welcome; the table for 6 people was unfortunately so large that communication was somewhat difficult. We had already reserved for 6:30 p.m., before the restaurant's rush hour. Bread and butter (presumably instead of a greeting from the kitchen...) didn't arrive with the aperitif, but only upon request with the appetizers. The red wine for the main course, which we had ordered long ago, was also only served upon request, long after the main course had already been served. We like to take our time between courses, but here we had to wait quite a long time, even though the appetizers and main course were ordered at the same time. Unfortunately, these poor processes greatly dampened our enjoyment of the excellent cuisine. Unfortunately, we dare not recommend this restaurant to friends on this basis.

We had the set menu with wine pairing. Excellent service. The menu was harmoniously coordinated with the wine pairing. The ambiance is cozy. Unfortunately, there was one minor drawback. The benches along the wall, with the tables next to each other, were a bit too narrow, leaving no room for couples to have any privacy. We had to whisper to each other, which made our table neighbor all the louder.

We had another wonderful evening. From the moment you arrive, you feel welcome – the ambience is elegant, yet warm and relaxed. The service is attentive, warm, and perfectly coordinated, without ever seeming forced. The food is always an experience: creative, finely balanced, and beautifully presented. We particularly like the blend of French flair and regional ingredients. Always exciting, but never overdone. The wine pairing is also always a hit. A place where you can tell the cooking and serving are done with passion. For us, it's clearly one of the best restaurants in Dresden – and definitely worth a visit again and again.

For a restaurant like this, service is lacking in the most basic rules of service. I can only recommend comprehensive training. In greeting, table service, and the most basic rules of customer service.

First-class service and delicious food. However, in terms of finesse, the restaurant can't compete with comparable restaurants in this price range. We were also seated in a large, private room, away from the music and hustle and bustle, which somewhat detracted from the coziness. Hence, one star deducted. Overall, though, a good place for a special evening.

Sven Vogel demonstrates his skill in his prepared dishes. Foie gras critics will find a faux gras, a vegetarian version, on the current menu. The scallop was, as it should be, translucent and briefly seared. Coq au vin simmered in a wonderful red wine, which was also included in the wine pairing. The raspberry rounded off this wonderful meal. The wine pairing was characterized by regionality. How wonderful that this allows you to discover the virtues of wines from Saxony: Riesling, Sauvignon Blanc, Cuvée, and sweet wine. The ladies from the service team are helpful, professional, and welcoming. Thank you for this wonderful evening.

Very friendly service, great ambience, food very good, although the tagliatelle with chanterelle mushrooms today were not quite to my taste: they arrived only lukewarm and stuck together

I had a late dinner in this upscale restaurant in Hotel Bühler. A perfectly seasoned beet-root salad with walnuts and fresh cheese was followed by a perfectly executed Wiener Schnitzel . My criterion for excellency when cooking your schnitzel is that you should be able to sit on it with your light grey flannel trousers without a single stain of fat being seen on your bottom. Wines by the glass to accompany my meal were excellent and value for money very good. Service was discrete and efficacious and my two waitresses could take a joke or two. Highly recommended!

Wir hätten bei der guten Qualität lieber einen Gang mehr gehabt bei kleineren Portionen. (Ja, das ist eine eigene Meinung und Kritik an einem tollen Abend bei gutem Essen).

Sehr entspannt Atmosphäre und ein guter Service. Das Essen ist ausgezeichnet und die Weinkarte sehr komplex , aber mit entsprechender Beratung findet hier jeder etwas.

A lovely evening on the outdoor terrace with perfect weather. Excellent food. Unfortunately, there's hardly any wine to sample.

Wir sind normalerweise sehr zufriedene Stammgäste. Heute waren wir der Küchenleistung sehr enttäuscht. Es gab ungewohnte Wartezeiten, obwohl außer uns nur noch zwei Gäste anwesend waren. z. B. war eine Vorspeise (Fischsuppe) nicht genießbar. Eine Beilage (Sauce Hollandaise) war ebenfalls nicht essbar (puddingähnlicher, geschmackloser Brei). Der Service war trotz allem freundlich. (Die Suppe wurde nicht berechnet.)

Unser Dinnererlebnis war - um es mit einem Wort zu beschreiben - sensationell. Das Ambiente, der wirklich herzliche Service, die hochwertigen und äußerst schmackhaften Speisen, die Weinempfehlungen - das alles haben wir in einer entspannten und ruhigen Atmosphäre genießen können. Ein rundum gelungener Abschluß unserer Auszeit im wunderschönen Dresden. Ein herzliches Dankeschön geht das gesamte Team! Wir kommen auf jeden Fall gerne wieder.

Coming here means high expectations and a perfect stay. The service staff more than live up to them. This is a five-star hotel with one star. Unfortunately, the tables are very close together - the conversations at the tables next to each other were no secret. As for the food - it was very well cooked. The Rider's tartar is certainly controversial - it was very well presented, but for my taste there was a bit too much colored greens and sauce - a pepper shaker would have been appropriate. But that depends on your taste. What is unacceptable, however, is that the bread was old. Two different types were probably from breakfast? The sourdough bread was quite black. Unfortunately, it is a frequent experience for me that the chefs cook well but fail to pay attention to this important detail. That costs the 50 stars. A real shame!

Fantastic service and outstanding food. Everything cooked to perfection. Also a great wine list with some really lovely wines from Saxony region.

We ate twice at the Caroussel Nouvelle restaurant. The first time after going to the opera. Wiener Schnitzel with cucumber and potato salad and skrei with crabs. This is exactly how a Wiener Schnitzel should be. The skrei on rice was very tasty. The second time we ordered the menu. Sea bass tartare: Buttery tender, literally melts in your mouth. Faux grass: wonderful, also and especially because it is a vegetarian version and no tortured geese are used. Gurnard: The cross crust is wonderful and the infused jus is very delicate. Onglet: I've never eaten this before. Tastes very intense. You have to like it. But it's definitely not my favorite. Dessert: Cucumber sorbet with fermented cucumber juice. Unusual but, in my opinion, not only interesting but very tasty. The restaurant is located in the luxury hotel Bülow Palais. Accordingly, the interior is also luxurious. The service was attentive and friendly. Just as it should be. Conclusion: A high-priced restaurant with good services. Highly recommended for THAT special evening.

No fresh rolls. The salmon was served unrefrigerated. For €35 per person there was nothing surprising to discover at the buffet. No mini meatballs, sausages or anything similar. It's a shame

We had afternoon tea... There was a good selection of tea. Only the fruit tea, I found the selection to be a bit limited with just one on the menu. The selection of food on the cake stand was also good. However, I missed the legendary cucumber sandwich and we felt that two scone's for everyone was a bit too little. The food was very good in terms of taste and quality. The service was nice and friendly. All in all we liked it.

One of the best addresses in Dresden when it comes to service, cuisine and gourmet experiences. I like the contrast between modern and classic, individualism and conformity! We love coming to this house because of the individual service, the great Meissen porcelain and culinary dishes! Thanks to the entire team for many wonderful hours!

Simply put: eat wonderfully with style and elegance in the beautiful Hotel Bülow Palais.

It was our first time for breakfast and we were very, very pleasantly surprised. First a very nice welcome, then a short orientation and then we could have a good time. It was well attended, but not too crowded, so there were no fights at the buffet. Very delicate and tasty things in all directions were in front of us, egg dishes prepared according to our wishes, loose tea and a very good tasting coffee rounded it off. The staff was visibly invisible, nice and friendly. We'll be back! Thank you for the lovely experience.

I was a guest here today for the cooking star lessons and the menu was brilliant....creative....sensual....inspiring....completely delicious. I didn't even manage to take photos 😉. Wine accompaniment was excellent.

Yesterday we got to know the Caroussel Nouvelle as part of the cooking star lessons. We have nothing else to say but thank you! The evening in the restaurant was a unique culinary gourmet experience. Both the excellent menu and the wine pairing were perfectly coordinated, very tasty and wonderfully prepared. The fantastic service from Jonas Reichenbach gave the evening the rating “really difficult to top”. Very enjoyable cuisine with good service in a misfit ambience. But then again, the installations may come into fashion in a few years, but the food is already. Good wine pairing and nice choice of local wines. The food is worth the trip to Dresden, which is short of good restaurants. Would be nice to have more orange wines on the list. People, try orange wines, they are as complex as we are. All of us :)
